This recipe may have a long name but it is all about simple, wholesome ingredients that together make a delicious cake for breakfast or tea time. I like to imagine it´s almost like turning my breakfast bowl into a cake!!

Esta receta puede tener un nombre largo, pero tiene que ver con ingredientes simples y saludables que juntos hacen una deliciosa torta para el desayuno o la hora del té. Me gusta imaginar que es casi como convertir mi tazón de desayuno en una torta!!

breakfast nut muffins


These small golden, nut packed, almost flourless cups can make a delicious breakfast. They are like a white canvas, you can pair them with whatever you like most: cream cheese, whipped cream, assorted fruit or just a sprinkle of icing sugar.

Estas pequeñas magdalenas doradas, llenas de nueces, casi sin harina, pueden convertirse en un delicioso desayuno. Son como un lienzo en blanco, pueden acompañarlas con lo que más les guste: queso crema, crema batida, frutas surtidas o simplemente espolvoreadas con azúcar impalpable.


They are not too sweet and very moist, highly satisfying in spite of their size. I recommend them if your day will need all of your energy and concentration for work or sports. Hope you try them soon!

No son demasiado dulces y son muy húmedas, altamente satisfactorias a pesar de su tamaño. Las recomiendo si su día va a necesitar de toda la energía y concentración para el trabajo o el deporte. Espero que puedan probarlas pronto!

Apple pie is a comforting sweet treat anytime during the year, but it tastes even better in winter. I like to make this pie for tea time and it is something I particularly enjoy.

La tarta de manzana es un postre reconfortante en cualquier momento del año, pero su sabor es aún mejor en invierno. Me gusta hacerla para la hora del té y es algo que disfruto especialmente.

I make this pie with an extra thin pastry, the same I use for the strudel or my knishes. This time I chose to mix the apples with blueberries, but I often combine them with raisins and walnuts. They combine well with gooseberries if you have any at hand. I like the tartness of Granny Smiths, but you could choose any other kind if you like it sweeter. 

Hago esta tarta con una masa extra fina, la mismo que utilizo para el strudel o mis knishes. Esta vez elegí mezclar las manzanas con los arándanos, pero a menudo las combino con pasas de uva y nueces. Van muy bien con grosellas si las tienen a mano. Me gusta la acidez de las Granny Smith, pero se puede elegir cualquier otro tipo si les gusta más dulce.

My daughter is a great fan of the Great British Bake Off Show and whenever we make pie at home, she challenges me about "soggy bottoms". I can assure you this one passes the test!

Mi hija es una gran fan del Great British Bake Off Show y cada vez que hacemos tarta en casa, me desafía para ver cuán seca queda la masa debajo de la tarta. Les puedo asegurar que ésta pasa la prueba!

This is a very short post to share with you these delicious muffins for breakfast or as a snack. It has been very hot lately and finally the rain came and dropped the temperature, to make it possible for anyone to turn on an oven! 

Este es un muy breve post para compartir con ustedes estas deliciosas magdalenas para el desayuno o como merienda. El tiempo estuvo muy caluroso últimamente y, finalmente, la lluvia llegó y dejó caer la temperatura, para hacer posible que cualquiera pueda encender un horno!

























These muffins are easy and quick to assemble. It would be ideal to have muffin cases, but I  did not, so I greased and lined the bottom of each muffin mold, so go ahead and try them...and come again and tell me how you found them!

Estas magdalenas o muffins son fáciles y rápidos de armar. Sería ideal tener pirotines pero yo no tenía, entonces, enmantequé y forré la parte inferior de cada molde para muffin, así que vayan y pruébenlos... y vengan otra vez y cuénten cómo los han encontrado!

Which does not mean it is gluten-free. Nope. This Flourless German Walnut Cake has a tiny secret. The beautiful light brown, almost golden colour, is all about the ground walnuts in it, but the bread crumbs are responsible for it too. And for the texture, of course.

Lo cual no significa que sea libre de gluten. No. Esta torta de nuez alemana sin harina tiene un pequeño secreto. El lindísimo color marrón claro, casi dorado, se debe a las nueces molidas en la misma, pero el pan rallado en ella es responsable también. Y por la textura, por supuesto.















The best way to pair this cake is with a tempered chocolate cover. When it dries up, it becomes bright and hard, covering a humid, light and fluffy, just crunchy interior. It is best to finely chop the walnuts without pulverizing them.

El mejor acompañamiento para esta torta es una cubierta de chocolate puro templado. Al secarse queda brillante y duro, cubriendo un interior húmedo, liviano y esponjoso, apenas crujiente. Es ideal que las nueces estén picadas finamente pero no pulverizadas. 

This cake is wonderful for tea-time, but it makes a great dessert, served with whipped cream and halved walnuts. I decided to make a bundt cake, but the recipe is suitable for a layered cake, too. You just have to divide the batter in two and use round 9" inch baking tins, baking them for about 40 minutes each or until golden brown. The cream is ideal as a filling and the tempered chocolate will make a delicious cover. Some walnuts here and there to garnish it,  and your special dinner dessert will be ready!

Esta torta es maravillosa para la hora del té, pero puede convertirse en un gran postre, servido con crema batida y nueces en mitades. Me decidí a hacer una torta bundt, pero la receta es adecuada para un torta en capas también. Sólo tienen que dividir la masa en dos y usar un molde redondo de 23 cm de diámetro, hornearlas durante unos 40 minutos cada una, o hasta que estén doradas. La crema es ideal como relleno y el chocolate templado es una deliciosa cobertura. Algunas nueces aquí y allá, para adornar y el postre de esa cena especial estará listo!



















I almost forgot to tell you this heirloom recipe is one of the treasures we keep with my mother, who recently turned eighty, from a very "sixties" cook-book she greatly values, by a lady cook of Greek descent, who was very famous at that time, in these southern latitudes.

Casi se me olvidaba contarles que esta receta, una reliquia de familia, es uno de los tesoros que guardamos con mi madre, que acaba de cumplir ochenta años, sacada de un libro de cocina muy "años sesenta" que ella valora mucho, cuya autora es una cocinera de ascendencia griega, que era muy famosa en ese momento, por estas latitudes australes.

This is a long weekend for us and the weather is absolutely amazing, it feels like spring! It is a great time for gathering with family and friends and have our typical barbecues we call "asados". Before the meal it is a must to treat ourselves with some delicious snacks and I made these cheese biscuits for the "apéro" as the French say!

Este es un fin de semana largo para nosotros y el clima es absolutamente increíble, parece primavera! Es un gran momento para juntarse con la familia y amigos y tener nuestros típicos "asados​​". Antes de la comida es obligatorio empezar con un delicioso aperitivo, por eso hice estas galletas de queso para el "apéro", como dicen los franceses!







I usually make these with Parmesan cheese but today I gave them a twist. I love to pair blue cheese with walnuts when snacking, so I thought it would be great to have both ingredients in a biscuit. I enhanced the flavours with a dash of dry rosemary. They were perfect with a soft cream cheese dip we had prepared.

Por lo general hago estas galletas con queso parmesano, pero hoy les dí una vuelta de tuerca. Me encanta combinar el queso azul con nueces en las "picadas", así que pensé que sería genial tener ambos ingredientes en una galleta. Realcé los sabores con una pizca de romero seco. Quedaron buenísimas con un dip de queso crema que habíamos preparado.

panettone -no yeast-

Early in December I had read this genius recipe from Mario Batali and I was eager to give it a try. Mainly because I was wondering how it would turn out since it has no yeast and because it is just as I love things: straightforward and simple. I firmly believe that "less is more" and this recipe confirms one of the principles I follow, not only at work, but also in the kitchen. (Though you should know that many say that "less is boring"... You choose!)

A principio de diciembre había leído esta genial receta de Mario Batali y estaba ansiosa por probarla. Principalmente porque me preguntaba como resultaría, ya que no contiene levadura, y porque es justamente como amo las cosas: sin complicaciones y simples. Creo firmemente que "menos es más" y esta receta confirma este principio que aplico, no solo en mi trabajo, sino también en la cocina. (Aunque deberían saber que muchos afirman que "menos es aburrido"... ustedes elijan!)
There are few days left before Christmas so I thought it was the right time to start baking my panettone. There is a strong Italian influence in the country and panettone is a must for the holidays. These past days have been terribly hot. Temperatures have risen above 30º C (i.e. above 86º F) and it is not easy to get into the kitchen and bake, so as I predicted, this recipe was not only my right choice for its handiness, but also because it barely took time!

Faltan pocos días para Navidad, por lo que consideré que era el momento justo para hacer mi "panettone" (pan dulce). En el país hay una influencia italiana muy fuerte y el "panettone" es un infaltable en la mesa navideña. Estos días pasados han sido muy calurosos. Las temperaturas estuvieron por encima de los 30º C (eso es más de 86º F) y no es fácil meterse en la cocina y hornear, así que, tal como lo había predicho, esta receta no fue solamente mi elección correcta por ser tan manejable sino también porque casi no llevó tiempo hacerla!

How do you get ready for Christmas? It has become a family tradition, since my kids were born, to start decorating the house and setting up the tree for Christmas the first weekend of December. This time, we sweetened our busy afternoons with a delicious tea and these recipes.

¿Cómo se preparan para la Navidad? Desde que mis chicos nacieron, se convirtió en tradición familiar empezar a decorar la casa y armar el árbol de Navidad el primer fin de semana de diciembre. Esta vez, endulzamos nuestras tardes atareadas con un delicioso té y estas recetas.

Did you realize how close we are to Christmas? Which are the flavours that remind you it is near? Dried fruits and nuts remind me of this time and take me directly to my childhood. This time of the year, so close to Christmas, brings indelible memories of that time. One of the things I most remember are dried figs. My grandfather Misak, who spent part of his own childhood in Smirna (Izmir), used to prepare for my brother, my cousin and me, dried figs, halved and stuffed with walnuts. It was a feast within the feast! At least for me, because I really don't know wether the other two children devoured them as I did, or not. I loved those Turkish dried figs and to me, they just simply meant Christmas and my grandfather...and all his amazing stories in Anatolian land.

¿Se dieron cuenta de lo poco que falta para Navidad? ¿Qué sabores les hace acordar que está cerca? A mí, las frutas secas y las nueces me traen memorias de esta época y me llevan directamente a la niñez. Esta parte del año, tan cerca de Navidad, me trae recuerdos imborrables de mi infancia. Una de las cosas que más recuerdo son los higos secos. Mi abuelo Misak, que pasó parte de su propia infancia en Esmirna ( Izmir), nos preparaba, a mi hermano, a mi prima y a mí, higos secos cortados a la mitad y rellenos con nueces. ¡Era toda una fiesta dentro de la fiesta! Por lo menos para mí, porque realmente no sé si los otros dos niños se los devoraban como yo o no. Amaba esos higos turcos secos y para mí representaban simplemente eso: Navidad y mi abuelo... y todas sus increíbles historias en tierra de Anatolia.






The great advantage about dried figs, as well as other dried fruits, is that we can have them for Christmas and New Year Eve's Holidays. Figs are a late summer fruit and as such, those living in the Northern Hemisphere already delighted themselves with their sweet, juicy and seedy taste and those of us down South will have to wait till late February for their matchless scent and flavour. Around the end of summer I love to collect some from the fig tree in my parents' house, that yields loads of Spanish figs (before the birds pick their fleshy inside!), to make a favourite Greek fig paste recipe I love to serve with fresh bread and homemade ricotta cheese.

La gran ventaja de los higos secos, y de las otras frutas secas, es que podemos usarlas en las fiestas de Navidad y Año Nuevo. El higo es una fruta tardía del verano y como tal, los que viven en el hemisferio norte ya se deleitaron con su gusto dulce, jugoso y semillado y aquellos de nosotros en el sur, tendremos que esperar hasta fin de Febrero por su incomparable aroma y sabor. Alrededor del fin del verano me encanta recolectar algunos higos del árbol de la casa de mis padres, que da cantidad de higos españoles (¡antes de que los pájaros picoteen su pulpa carnosa!), para hacer una receta griega favorita de pasta de higos, que me encanta servir para acompañar con pan fresco y ricota casera.

I had these gorgeous dried Turkish figs and I inspired myself in THIS recipe from Ottolenghi´s blog. Just read it. It is absolutely amazing. The cake reminded me of my apple almond cake because it has ground almonds and greek yoghurt, yet the main difference is that he uses butter creamed with  sugar, which makes it richer, while I use vegetable oil (as I usually do in my cakes) to get a leaner cake. And of course, those fresh figs from summer, so exuberant and luscious.
I had to do something with mine to make them look a bit like them. So I coated them in a sweet and sticky caramel sauce, that once again reminded me of my childhood. As a child, I remember my parents buying for my brother and me caramel dried figs on a stick, covered with sweet popcorn stuck all around them, from an elderly man who had a cart full of  this delicious booty and sold them on the street. 

Tenía estos maravillosos higos turcos secos y me inspiré en ESTA receta del blog de Ottolenghi. Sólo léanlo. Es absolutamente increíble. La torta me recordó a mi torta de manzanas y almendras porque tiene almendras molidas y yoghurt griego, pero la gran diferencia es que él usa la manteca batida con el azúcar, lo que la enriquece más, mientras que yo utilizo aceite vegetal (como usualmente hago en mis tortas) para obtener una torta más ligera. Y por supuesto, esos higos frescos del verano, tan exuberantes y deliciosos. 
Yo tenía que hacer algo con los míos para que se les parecieran un poco. Los bañé con una capa de salsa de caramelo, dulce y pegajosa, y una vez más recordé mi niñez. De chica, recuerdo a mis padres comprando para mi hermano y para mí, higos secos acaramelados en un palito, recubiertos con pochoclo dulce, de un señor mayor que, desde un carrito lleno de este delicioso botín, los vendía en la calle.

There is a green wave in my kitchen. It is as if  I wanted to retain all the green of the season in my dishes. I already cooked spinach and zucchinis, though these last are out of season but still, deeply green. I steamed tons of brussels sprouts and chard, though not for the blog and yet so green, too. I grilled cauliflower, though not green and yet so yummy with turkish spice "sumac". It is now mr. broccolis time to perform, and I will love to see it crunchy and tasty, wrapped in a pastry I adapted for this recipe, with walnuts and a creamy and soft good old bechamel sauce.

Hay una onda verde en mi cocina. Como si quisiera retener todo el verde de la estación en mis platos. Ya hice espinacas y zucchinis, aunque estos últimos no son de estación, pero son bien verdes. Cociné al vapor toneladas de repollitos de bruselas y de acelga, aunque no para el blog, y aún así tan verdes. Grillé coliflor con sumac (una especia turca), que no son verdes, ¡pero son tan ricos! Ahora le toca actuar al Sr Brócoli  y voy a presentarlo muy crujiente envuelto en una masa que adapté para esta ocasión acompañado por nueces y la cremosa y suave salsa bechamel de siempre.


Broccoli  (brassica oleracea italica) is from the sprouts family, and it grows well with low temperatures. Cabbages, brussels sprouts, cauliflower (very similar to it except for its colour) are from the same vegetable kind. It is a very important source of vitamins  C and E and soluble food fiber. The fleshy floral heads are mostly used, arranged in the manner of a tree rising from a stem that is also edible. The best way of cooking it is by steaming or grilling so that none of its fabulous nutrients may be lost in the process.

El brócoli (brassica oleracea italica) es de la familia de las coles y su cultivo funciona muy bien con poca temperatura. El repollo, los repollitos de bruselas, el coliflor (al que se asemeja idénticamente salvo por el color) son del mismo tipo de verduras . Es una fuente importante de vitamina C y E y fibra alimentaria soluble. Se utilizan mayormente las cabezas carnosas florales, dispuestas en forma de árbol que nacen de un tallo también comestible. La mejor cocción se realiza al vapor o grillada para no restarle ninguno de sus fabulosos nutrientes.



A "galette" is a French cuisine term to designate a crusty, round and flat type of cake from the northwestern region of Brittany. It is filled mainly with salty ingredients, but it is also baked as a sweet treat.

Una "galette" es una especialidad gastronómica de Francia de la región noroeste de Bretania. Se trata de una masa rústica, redonda  y chata que se rellena mayormente con ingredientes salados, pero también se hornean dulces.

Hace un tiempo que vengo pensando en esto. ¡Cocinar me hace tan feliz! Cocinar fue siempre algo central en mi vida. Desde muy chica de la mano de mi talentosa madre, de quien aprendí mirando y preguntando y  de mis abuelas, de quienes recibí el legado de la cocina armenia, enriquecido por el hecho de que una vino de Grecia y la otra de Francia, países donde se refugiaron y crecieron después de haber tenido que huir de Armenia por el genocidio de 1915.
Cocino para mi familia y mis amigos. La alegría y satisfacción que cada plato nos trae es mi fuente de placer y motivación para investigar e innovar, creando mi propio estilo, inspirado por la riqueza y diversidad de la herencia que me ha sido legada.

I have been thinking this for a while. Cooking makes me so happy! Cooking has always been a central aspect of my life. Since I was a child, learning from my talented mother  by watching her cook and asking, and both my grandmothers, who gave me the heritage of Armenian cuisine, enriched by the influence of Greek and French cuisine, both sources from countries where each of them took refuge and grew up after fleeing from the 1915 genocide that took place in Armenia.
I cook for my family and friends. The joy and satisfaction in every dish is the source of pleasure and motivation to go on investigating and innovating, creating a style of my own, inspired by the rich and diverse heritage I have been offered.



Carrot Cake (para mis amigas golosas: ¡FELIZ DÍA!)
 UNA TORTA QUE ESTA LEJOS DE MI ETNIA PERO NO DE MI PALADAR


¡¡Tan lejos de mi legado familiar!!.... pero muy cerca de mi paladar y especialmente de mis amigas, con las que quiero compartirla.
Esta torta es muy tradicional y existen varias recetas parecidas que aseguran el éxito. Su característica fundamental es la humedad y el sabor de las especias combinado con la dulzura realzada de las zanahorias.
Tenía mucha curiosidad por saber si podía cambiar ciertos ingredientes y pasos sin alterar el resultado, o más aún, potenciarlo. Quería una torta más liviana y aún más saludable. Usé un poco de harina leudante en vez de harina común más polvo de hornear, cambié el azúcar por miel, separé los huevos y batí las claras a nieve, añadí nuez moscada molida y nueces comunes en vez de pecans porque son las que usualmente comen mis hijos. Tarda un poco más en cocinar por el molde que elegí. Si lo ponen en uno más chato el tiempo de horneado es de 25 a 30 minutos. Espero que la disfruten con una buena taza de té y  la compañía de los que aman.



Far away from my family legacy...yet so close to my taste and specially of the friends I want to share it with.
There are many similar recipes for  this traditional cake that may assure a succesful result. Its main characteristic is its humid texture and the taste of the spices combined with the enhanced sweetness of the carrots.
I wandered if I could change a few ingredients and steps without altering the result, moreover, make it better. I wanted a lighter and even healthier cake. I used some cake flour instead of plain flour combined with baking powder, I changed sugar for honey, separated the eggs and beat the whites until stiff, added ground nutmeg and walnuts instead of pecans because these are the ones my children usually eat. It took longer to cook because of the dish I used. If you use a flatter one you will bake it in  25 to 30 minutes. I wish you enjoy it over a cup of tea and the company of those you love.

RECETA/RECIPE
Porciones 8 a 10/ Serves 8 to 10

Ingredientes
1 taza harina común (0000)                             
1/3 taza harina leudante                                 
1/4 taza de aceite vegetal de buena calidad            
1 taza de miel                                                   
2 huevos                                                            
2 tazas de zanahorias ralladas                              
1/4 taza de leche en polvo                                 
3/4 taza nueces picadas                                        
1/2 cucharadita de té de extracto de vainilla       
1/4 cucharadita de té de nuez moscada molida       
1 cucharadita de té de canela molida                
Spray vegetal                                                    
Pizca de sal
   
                                                
  Ingredients
  1 cup all-purpose flour 
1/3 cup cake flour
1/4 cup acceptable vegetable oil
 1 cup honey
 2 eggs
 2 cups grated carrots
1/4 cup milk powder
3/4 cup chopped walnuts
1/2 tsp vainilla extract
 1/4 tsp ground nutmeg
1 tsp ground cinnamon
 Vegetable spray
   Pinch of salt

Instrucciones  

1. Precalentar el horno a 180 C / 350 F
2. Rociar con spray vegetal un molde de 22 cm  diam. y 8 cm alto con aro
3. Mezclar el aceite vegetal con la miel con batidora hasta unificar
4. Separar las yemas e incorporar de a una mezclando con batidora
5. Agregar extracto de vainilla y mezclar
6. Incorporar las zanahorias y mezclar con espátula
7. En otro recipiente batir las claras a nieve con una pizca de sal y reservar
8. Unir los ingredientes secos (harinas, leche en polvo y especias) e incorporarlos hasta unir perfectamente con la primer preparación húmeda.
9. Incorporar las nueces picadas previamente espolvoreadas con un poco de harina y mezclar
10. Por último incorporar las claras batidas a nieve con movimiento envolvente y verter la preparación en el molde preparado
11. Llevar a horno por 35 a 40 minutos o hasta que con un palillo verifique que salga limpio
12. Retirar del horno y dejar enfriar  sobre rejilla y luego desmoldar
13. Terminar con glasé según receta a continuación

Glasé:
60 g manteca blanda
120 g queso tipo philadelphia
50 g azúcar impalpable
1/2 cucharadita de extracto de vainilla

En un recipiente mezclar con batidora la manteca y el queso, incorporar el azúcar sin dejar de batir y por último el extracto para perfumar. Debe quedar una crema homogénea.


Instructions 

1. Preheat oven to 180C/ 350F
2. Spray a baking dish (22cm x 8cm ) with oil spray
3. Combine vegetable oil and honey with electric mixer until smooth 
4. Separate yolks and beat in  one by one
5. Add vainilla extract and mix
6. Add carrots and stir with a spatula
7. In a separate bowl beat whites until stiff
8. Combine in another bowl the dry ingredients and add to the liquid mixture
9. Add the chopped walnuts slightly powdered with flour
10. Fold the egg whites to the mixture and pour into the prepared dish
11. Bake 35 to 40 minutes or until poked, the knife comes out clean
12. Remove from the oven and allow to cool in the pan on a rack. Unmold
13. Finish with frosting

Frosting:
60 g softened unsalted butter
120 gr philadelphia cream cheese
50 g icing sugar
1/2 tsp vainilla extract

Mix in a bowl the softened butter with the cheese, add the icing sugar, still beating and the vainilla extract until you obtain a  smooth cream
