cardamom cream loaf + second blogversary


It is amazing how time flies! I can hardly believe I have been doing this foodblogging "thing" for  two years already. My greatest joy is sharing with all those who care to read my recipes and bring happiness to their tables through them.
This small nook on the web has given me some beautiful friends and acquainted me with a lot of worthy people around the globe. Though I am not posting much, I shall try to keep it up, because it is just wonderful being around!!
I am leaving below the kind of recipe I enjoy most: quick, simple, for our everyday delight, to enjoy with family and friends.


Es increíble cómo pasa el tiempo! Apenas puedo creer que estuve haciendo esta "cosa" del foodblogging por dos años ya. Mi mayor alegría es compartir con todos aquellos que se preocupan por leer mis recetas y traer felicidad a sus mesas a través de ellas.
Este pequeño rincón en la web me ha dado hermosas amigas y me contactó con una gran cantidad de personas geniales por todo el mundo. Aunque no estoy publicando mucho, voy a tratar de hacerlo cuanto pueda, porque es simplemente maravilloso estar acá!!
Dejo a continuación el tipo de receta que más me gusta: rápida, simple, para nuestro deleite cotidiano, para disfrutar junto a la familia y amigos.

I never tried doing panna cotta until I came across a very helpful and simple explanation from blogger friend Paula on her Spanish blog Cocina Central. The truth is, I was scared of some major kitchen mess while handling the jelly part. Her recipe really made it easy for me and I could gracefully make this delicious dessert for my family.

Nunca intenté hacer panna cotta hasta que me encontré con una explicación muy útil y simple de mi amiga blogger Paula, en su blog en español Cocina Central. La verdad es que tenía miedo de hacer un lío mayor de cocina con la parte de la gelatina. Su receta realmente lo hizo fácil para mí y pude hacer con gracia este delicioso postre para mi familia.


I chose to pair the dessert with some almonds and prunes and drizzled a honey syrup on top. The original version was combined with delicious passion fruit and mango. I think any red fruit, now in season in the country, would match this dessert perfectly, too.

Elegí maridar el postre con algunas almendras y ciruelas pasas y rociarlo con un almibar de miel en la parte superior. La versión original estaba combinada con un delicioso maracuyá y mango. Creo que cualquier fruta roja, ahora en temporada en el país, iría con este postre perfectamente también.



The super creamy texture is unique and has the exact proportion of jelly as to unmold and hold its shape without being gummy. A total success at home, in such a way, I already did it several times.

La textura super cremosa es inigualable y tiene la proporción exacta de gelatina como para poder desmoldar y mantener la forma sin quedar gomoso. Un éxito total en mi casa, tan así, que ya lo hice varias veces.

There are so many stories in fooodblogs about going around picking your own berries, I really got anxious for our Spring to come, and though the first delicious strawberries are appearing in the market, the season for berries has not yet arrived. Lately, if you don´t get your products from small local producers, which many people can´t afford or aren´t able to get, fruit in the common markets is absolutely tasteless.

Hay tantas historias en los foodblogs acerca de salir a juntar frutos rojos por ahí, que me dio ansiedad por que nuestra primavera llegue, y aunque las primeras deliciosas frutillas están apareciendo en el mercado, la temporada de frutos rojos todavía no ha llegado. Últimamente, si no se consiguen los productos de los pequeños productores locales, algo a lo que mucha gente no accede o no pueden conseguir, la fruta en los mercados comunes es totalmente sosa.



















I had bought two packages of frozen raspberries to make parfait, which comes out great, but I never get to post (at home they eat all of it before I can take a picture!), and saved about a cup to make a recipe inspired in some strawberry mini scones by Joy the Baker, a young and famous blogger, who has some outstanding recipes.

Había comprado dos paquetes de frambuesas congeladas para hacer parfait, algo que me sale bien pero nunca llego a postear (en casa se lo comen todo antes de que pueda sacar una foto!) y guardé aproximadamente una taza para hacer una receta inspirada en unos mini scones de frutilla por Joy the Baker, una blogera joven y famosa, que tiene algunas recetas excepcionales.

I thought coconut would be the perfect counterpart for raspberries in this recipe, balancing the taste of the fruit. I hope you think the same!

Pensé que el coco sería la contraparte perfecta para las frambuesas en esta receta, dándole equilibrio al sabor de las fruta. Espero que ustedes piensen lo mismo!

Saturday morning my BFF Laura texted a link of some gorgeous "kanelbullar" (Swedish rolls) a talented Argentine foodblogger had posted. I thought it was kind of premonitory on her side, since I had a dough proving in my kitchen. After having done recently my almond easter bread, some sticky buns and the more sophisticated cinnamon cardamom bread, I realized this dough, with some small changes in proportions for the different recipes, is really versatile and can be used in many ways when it comes to rolls and bread.

El sábado por la mañana mi mejor amiga Laura, me envió un mensaje con un enlace para unos lindísimos "kanelbullar" (bollos suecos) que una talentosa foodblogger argentina había publicado. Pensé que era algo premonitorio de su lado, ya que tenía una masa leudando en mi cocina. Después de haber hecho recientemente mi rosca de pascua con almendras, algunos sticky buns y el más sofisticado pan trenza de canela y cardamomo, me di cuenta de que esta masa, con algunos pequeños cambios en las proporciones en las diferentes recetas, es muy versátil y se puede utilizar de muchas maneras a la hora de hacer bollos y pan.

Proving takes about two hours, so I poured myself a cup of tea and scrolled through my news on Google+, to check what my fellow foodbloggers were upto. I love to do this during the week-ends because there is no rush or strict timetables. To my surprise I saw another recipe of "kanelbullar", this time from a well known blogger I admire specially for her perfect photos. Wow! They looked terrific! Would it be the new trend?, I wondered. This time it was me texting the link back, while checking for some cinnamon in my pantry.                                        


El leudado toma alrededor de dos horas, así que me serví una taza de té y anduve por mis noticias en Google+, para ver lo que mis compañeras foodbloggers estuvieron haciendo. Me encanta hacer esto durante los fines de semana porque no hay apuros ni horarios estrictos. Para mi sorpresa vi otra receta de "kanelbullar", esta vez de una blogger conocida a la que admiro especialmente por sus fotos perfectas. ¡Wow! ¡Se veían espectaculares! ¿Sería la nueva tendencia?, me pregunté. Esta vez era yo la que enviaba el mensaje de texto con el enlace para la receta, mientras que buscaba la canela en mi despensa.

Along with the cinnamon I found a bag of chocolate chips and I grabbed it too. I had made the dough because my daughter would be back in a few hours from a short trip she made with the school . They had gone to the coastal city of Mar del Plata, 450 km (280 miles) south of BA, for fieldwork for their upcoming IGCSE exam on Environmental Management and I wanted to welcome her with something comforting and homemade, as she had commented that the weather was good but cold and that they had not eaten very well.

Junto con la canela encontré una bolsa llena de chips de chocolate y la saqué también. Había hecho la masa porque mi hija estaría de vuelta en unas pocas horas, de un viaje corto que hizo con el colegio. Se habían ido a la ciudad costera de Mar del Plata, 450 km al sur de BA, por un trabajo de campo para sus próximos exámenes de Gestión de Medio Ambiente y quería recibirla con algo reconfortante y hecho en casa, ya que había comentado que pasaron mucho frío y que no habían comido muy bien.



With both ingredients in my hands, somehow I changed my mind, and muttered: "babka".  Traditional babka calls for twirling the roll about five to seven times once you fill it and generally has no streusel on top. I gave my two rolls an "8" shape, placed them in a loaf tin, side by side, and after I brushed it with eggwash made with cream, I topped it with some abundant streusel made with confectioners sugar. This last thing I learned from a Martha Stewart´s recipe.

Con ambos ingredientes en mis manos, por algún motivo, cambié de idea y murmuré: "babka". El babka tradicional requiere girar el rollo sobre sí, de cinco a siete veces, una vez que tiene el relleno y por lo general no lleva streusel encima. Le di a mis dos rollos forma de "8", los coloqué uno al lado del otro en una budinera y después lo pinté con mezcla de huevo hecha con crema. Lo espolvoreé con abundante streusel hecho con azúcar impalpable. Esto último lo aprendí de una receta de Martha Stewart.

This past week-end I shared my magic cake lemon bars after telling you about this HUGE craving I had for something lemony. As if the cosmos had heard about it, during the week I read about four more posts on lemon bars, all of them from talented foodbloggers, who shared impeccable recipes and outstanding pictures. I was so grateful! Later, I read somewhere on Google+ that it is "lemon week". If it is so, I did not know, but most surely my inner craving was aligned with it!

Este fin de semana pasado compartí mi receta de barras de limón de torta mágica después de haberles contado lo MUCHO que quería algo cítrico. Como si el cosmos lo hubiera escuchado, durante la semana leí cuatro posts más de barras de limón, todos ellos de talentosas foodbloggers, que compartieron impecables recetas y fotos excepcionales. ¡Estaba tan agradecida! Más tarde, en alguna parte de Google+ leí que es la " semana del limón". Si es así, yo no lo sabía, pero seguramente mi deseo interior estaba alineado con ella!


So then, in honour of this "lemon week" and to leave you with no doubt about my hearty desire, I made this tender lemon cardamom bundt cake, that is really light for breakfast, with some seasonal fruit eaten fresh (cherries are great in this part of the world nowadays) or, if you happen to like it, turned into a wonderful topping.

Entonces, en honor a esta "semana del limón", y para que no les quede ninguna duda sobre mi enorme deseo, hice esta tierna torta bundt de limón y cardamomo, realmente liviana para un desayuno, acompañado con alguna fruta de estación fresca (las cerezas están buenísimas en esta parte del mundo por estos días) o, si es que les gusta, como un maravilloso glaseado.



A simple lemon glaze as the one I drizzled over these buns will also look good on this soft cake.

Un glaseado simple de limón como el que rocié sobre estos buns puede quedar bien sobre esta torta suave.

Have you ever craved for a special flavor? Lately I am in a "citrus mood". And not because I am a great fan. Just that I want to include citrics, specially lemons, in whatever I bake. I wanted to bake some lemon bars, but I did not want all the fuzz about doing the crust, the curd... and whatever comes on top! As always, or most of the times, I wanted to keep it simple. And if possible, quick. We still have a terrible hot weather down here, while most of you up North must be freezing, and it is rather not recommendable to be in the kitchen longer than necessary.

¿Alguna vez se les ha antojado algún sabor especial? Últimamente estoy en "estado cítrico". Y no porque sea una gran admiradora. Sólo que quiero incluir cítricos, especialmente limones, en todo lo que horneo. Quería hornear unas barras de limón pero no entrar en la complicación de hacer la masa, la crema...y lo que sea que va arriba! Como siempre, o la mayoría de las veces, quería que fuera simple. Y de ser posible, rápido. Tenemos un clima terriblemente caluroso aquí, mientras muchos de ustedes en el Norte deben estar congelándose de frío, y más bien, no es nada recomendable estar en la cocina más de lo necesario.





I have an old  friend from school, who once prepared a delicious vanilla cake, that had a peculiar characteristic. It was part cake, part custard. I remember her telling me, her mouth watering, how good it was. We are both the type of person that loves custard, creme caramel or flan and obviously lemon curd. She told me how she had done it, but never formally handed me the recipe and at the time, I did not bother to write it down as we spoke.

Tengo una vieja amiga del colegio, que una vez preparó una deliciosa torta de vainilla, que tenía una característica peculiar. Recuerdo como ella me contaba, haciéndosele agua la boca, lo buena que era. Somos las dos del tipo de persona que ama las cremas, el creme caramel o flan y obviamente la crema de limón. Me dijo como la había hecho, pero nunca me dio la receta formalmente y en el momento, yo no me preocupé por escribirla mientras hablábamos.

Recently I saw a video about " prajitura desteapta" (Romanian for " intelligent cake") and I realized that it was my friend´s marvelous cake! I started searching for more information on the web and found out that many foodbloggers love it too! There is an Argentine foodblogger lady, Mabel, living in Spain, whose post on it went viral! I saw it in other blogs, too, and all of them re-named it "magic cake". And it sure is. You just have to mix up only one batter and when the cake comes out of the oven you get a thin crust on the bottom, a mid layer of delicious custard and a top thin layer of spongy cake. Want to work the miracle?

Recientemente vi un video sobre "prajitura desteapta" (" torta inteligente" en rumano) y me di cuenta de que era la maravillosa torta de mi amiga! Comencé a buscar más información en la web y encontré que hay muchas foodbloggers  a las que también les encanta!  Hay una foodblogger argentina, Mabel, que vive en España, cuyo post sobre esta torta se viralizó! La vi en otros blogs también y todos la han rebautizado como "torta mágica". Y así es. Solamente hay que hacer una mezcla y cuando sale del horno se obtiene una masa finita abajo, una capa media de deliciosa crema y otra superior de esponjosa torta. ¿Quieren hacer el milagro?


I thought it would work perfectly for the lemon bars I was craving for, so I adapted the recipe slightly to get my "citrus mood " satisfied!

Pensé que iba a funcionar perfectamente para las barras de limón que estaba deseando así que adapté la receta un poco para que pudiera tener mi "estado cítrico" satisfecho!

New year...new template! Do you like it? I am very happy with this purchase and I hope to be able to convey this happiness in all the posts of the year. To start enjoying my new format I want to share these "sticky buns", ideal for a good breakfast. The original recipe is from fiveandspice, and my intention was to follow it as it is, but I had to adapt it because I basically did not have two key ingredients: cardamom and  yeast.

Año nuevo...¡plantilla nueva! ¿Les gusta? Estoy muy contenta por esta adquisición y espero poder transmitirles esta felicidad en todos los posts del año. Van a poder seguir el blog desde acá en  facebook y las demás redes sociales porque en la página anterior no tenía los links. ¿Feliz yo? ¡Solo super feliz!
Para empezar a disfrutar de mi nuevo formato quiero compartir estos "sticky buns", ideales para un buen desayuno. La receta original es de fiveandspice, y era mi intención hacerla tal cual, pero tuve que adaptarla porque básicamente me faltaban dos ingredientes fundamentales: cardamomo y levadura.




On January 1st every shop or market around the area where I live was closed, but I was determined to bake these buns for my family, so I had to use a bit of my imagination. I would not get the distinctive flavour of cardamom, but I could use a safe spice such as cinnamon. Also, I needed to leaven the dough, so I thought of the method I had learned from Mario Batali's recipe for panettone I recently posted on December. I made use of some cream of tartar and baking powder. Thankfully I was not short of lemons, so at least I could rescue some of the original flavours. And last but not least, instead of baking them in one round or square baking tin I used a muffin tray, as this brilliant blogger did, because the dough would not be the "pull apart" kind, I was sure it would turn out more like cake.

El 1 de enero todos los locales y mercados del área donde vivo estaban cerrados, pero yo estaba decidida a hacer estos buns para mi familia, así que tuve que usar un poco de mi imaginación. No iba a conseguir el sabor característico del cardamomo, pero podía usar una especia segura como la canela.También necesitaba que la masa leude, entonces pensé en el método de Mario Batali para la receta de panettone, que postee recientemente en diciembre. Usé un poco de cremor tártaro y polvo de hornear. Por suerte no me había quedado sin limones, así que por lo menos pude rescatar algo del sabor original. Y por último, pero no menos importante, en vez de usar un molde redondo o cuadrado, usé una bandeja para muffins, como esta brillante blogera, porque la masa no sería del tipo "pull apart", seguramente sería más parecida a una torta.

A very short post to tell you that my HONEY POTATO KNISHES were chosen as a Community Pick! I am so happy and grateful. Thank you very much FOOD 52 for your amazing site, fiveandspice for your review and all of you out there supporting me in this new adventure of blogging! These past four months I have learned a lot, discovered a whole new way of communicating through food, known incredibly talented people and made good friends (Yes Joanne, this one goes specially for you!)
I will cherish this nomination as my very first Christmas present this year!

blueberry and baked ricotta cheesecake and puddings



Do you have a favourite cheesecake? Last week, after buying some beautiful blueberries, I found myself in the search of the ideal cheesecake, since I wanted to use them as a topping with one of the most delicious bought marmalades I have ever tried.
I searched through my cook-books, but I found I would be serving AGAIN the same old cookie processed-crust and cream-cheese cake I always do, that is indeed a delicious cake, but above everything, a safe recipe.

¿Tienen ustedes una receta favorita de cheesecake? La semana pasada, luego de comprar unos muy lindos arándanos, me encontré en la búsqueda del cheesecake ideal, porque quería usar los arándanos como cubierta de la torta junto a una de las más deliciosas mermeladas compradas que jamás haya probado.
Busqué en mis libros de cocina, pero encontré que estaría sirviendo DE NUEVO la misma vieja conocida, de masa de galletitas molidas y relleno de queso crema que siempre hago, que realmente es una torta deliciosa, pero sobre todo, una receta segura.

























So I turned to the blogs for some help and inspiration and after some reading, I came out with this unique combination. I remembered a genius recipe from Paula's (an amazingly talented, well respected and highly reputed lady foodblogger I had the good fortune to meet on the web) blog in English. She had done some rolls (Caramel Graham Cracker Almond Raspberry Cinnamon Skillet Rolls) which I tried at home, but with some apples I had, since I could not find raspberries at the time, and everybody in the family was anxious and drooling over the recipe.
The great part of the recipe is that she used the Graham Crackers dough as such. I adopted this dough ever since! Thanks Paula!
For the filling I adapted a recipe I liked from the blog Nordljus, mainly because it combined ricotta cheese and traditional cream cheese.

Entonces me volqué a los blogs por ayuda e inspiración, y después de un poco de lectura se me ocurrió esta combinación única. Me acordé de una receta genial del blog en inglés de Paula (una increíblemente talentosa foodblogger, muy respetada y de gran reputación, que tuve la buena fortuna de conocer en la web). Ella había hecho unos rolls (Caramel Graham Cracker Almond Raspberry Cinnamon Skillet Rolls) que probé hacer en casa, pero con manzanas, porque en el momento no encontré frambuesas y mi familia estaba ansiosa y babeando por la receta.
La parte genial de la receta es que usa la masa de galletitas Graham como masa. ¡Desde entonces la adopté! ¡Gracias Paula!
Para el relleno adapté una receta del blog Nordljus, mayormente porque combina la ricota con el queso crema tradicional.
















My daughter liked the filling so much, we made some baked blueberry ricotta puddings also, adding some flour and blueberries to the mixture and topping them with the marmalade glaze.
When we finally sat down to have our tea, we discovered the unique taste of the spicy pastry combined with the very creamy filling, contrasting the freshness of the fruit. A cheesecake to become our favourite, don't you think so? There were the puddings, of course, for those who wanted extra filling. This way, we spent a delightful afternoon...and everyone,  happy.

A mi hija le gustó tanto el relleno, que hicimos unos puddings de ricota horneada con arándanos, añadiendo a la mezcla del relleno un poco de harina y arándanos y para la cubierta, glaceándolos con la mermelada.
Cuando finalmente nos sentamos a la mesa del té, descubrimos el sabor único de la masa especiada combinado con el relleno tan cremoso, contrastando con las frutas tan frescas. Un cheesecake para convertirlo en favorito, ¿no lo creen? También estaban los puddings, por supuesto, para los que querían relleno extra y así, pasamos una deleitosa tarde...y todo el mundo, feliz.
