toasted coconut and macadamia blondies


Oh winter! There is a time of the year when staying at home is an incredible blessing, while outside is pouring, the wind is blowing, and the skies are heavy with thunder and lightning. In the middle of such storm the thought of a homemade bake is the only certain attempt of having some comfort. 

Oh invierno! Hay una época del año en que quedarse en casa es una bendición increíble, mientras que afuera está diluviando, el viento sopla, y el cielo está cargado con truenos y relámpagos. En medio de tal tormenta un horneado casero es el único intento cierto de tener un poco de consuelo.



A very simple bake, such as these blondies, can make a miracle on a midweek, winter school-break afternoon, and bring the coziness needed to withstand the awful weather. 

Un horneado simple, como estas blondies, puede hacer un milagro en una tarde de vacaciones de invierno a mitad de la semana, y convertirla en lo necesariamente acogedora para soportar el mal tiempo. 


"Where there are no brownies there are blondies", I read somewhere and it´s just right. I wanted so much to make this recipe and try the magic of the brown sugar, which substitutes chocolate in the batter.

"Donde no hay brownies hay blondies", leí en alguna parte y es tal cual. Quería mucho a hacer esta receta y probar la magia del azúcar negra, que sustituye al chocolate en la masa. 



Yet I love chocolate, so I did not make a "fully blonde" blondie and added some dark chocolate chunks together with the chopped macadamia nuts. The toasted coconut on top, sprinkled with some granulated sugar, made an excellent topping! 

Sin embargo, me encanta el chocolate, así que no hice una blondie "toda rubia" y añadí algunos trozos de chocolate amargo junto con las nueces de macadamia picadas. El coco tostado en la parte superior, espolvoreado con un poco de azúcar común, quedó espectacular como cobertura!

How do you get ready for Christmas? It has become a family tradition, since my kids were born, to start decorating the house and setting up the tree for Christmas the first weekend of December. This time, we sweetened our busy afternoons with a delicious tea and these recipes.
