A lazy Sunday morning, after a long rainy week calls for this simple, yet comforting loaf, to be the perfect match for a steaming cup of coffee or tea. I don´t know about you, but changing season almost always brings some kind of discomfort to me, I can only make right with these kind of bakes that make me feel cozy again.

Una mañana de domingo perezosa, después de una larga semana de lluvia es perfecta para este simple pero reconfortante budín, el complemento ideal para una humeante taza de café o té. Yo no sé ustedes, pero el cambio de estación casi siempre me trae algún tipo de incomodidad que sólo puedo contrarrestar con este tipo de horneados que me hacen sentir confortable otra vez.

I am still trying to get familiar with the oven, but I think I am making some progress. For now I am experimenting with loaves like the almond coconut loaf I made last month and added fruit to this one, without burning it at all!!

Todavía estoy tratando de familiarizarme con el horno, pero creo que estoy haciendo algunos progresos. Por ahora estoy experimentando con budines como el budín de almendras y coco que hice el mes pasado y he añadido fruta a éste, sin quemarla en absoluto!!


The cinnamon sugar topping coated the apples, making them crispy outside but staying soft and juicy on the inside. 

El azúcar de canela recubrió las manzanas, haciéndolos crujientes por fuera pero manteniéndolas suave y jugosas por dentro.

Almost a month and a half of spring already gone by, and I am still feeling as if it just started. The leaves on the trees are the only reminder of the season, which has been upto now wearier than winter, almost like a second fall. And maybe because of the moody weather, I rather crave to bake the kind of cake I would not this time of the year. Though this weekend looks as if our luck is about to change!

Ya pasó casi un mes y medio de primavera  y sigo sintiendo como si acabara de empezar. Las hojas de los árboles son el único recordatorio de la estación, que ha sido hasta ahora más gris que el invierno, casi como una segundo otoño. Y tal vez por este clima raro, prefiero hornear el tipo de torta que no haría en esta época del año. Aunque este fin de semana parece que la suerte está a punto de cambiar!


















This recipe is a variation of my favorite apple almond cake and is the perfect match for a cup of tea or coffee shared in good company. It almost has no wheat flour which I replaced with oat flour, for those seeking a healthier diet.

Esta receta es una variación de mi preferida torta de almendras y manzanas y es el acompañamiento perfecto para una taza de té o café compartida en buena compañía. Prácticamente no tiene harina de trigo que sustituí con harina de avena, para aquellos que están buscando una alimentación más saludable.

















I used a DIY oat flour with my regular all purpose flour. As I mentioned in my recipe for oat cinnamon sticky toffee buns it is as simple as grabbing the food processor and pulsing, transforming regular rolled oats into fine oat flour.

Usé una harina de avena hecha en casa. Como mencioné en mi receta para los bollos de avena y canela con salsa de caramelo, es tan simple como agarrar la procesadora de alimentos y pulsar, transformando los copos de avena comunes en harina de avena fina.

Apple pie is a comforting sweet treat anytime during the year, but it tastes even better in winter. I like to make this pie for tea time and it is something I particularly enjoy.

La tarta de manzana es un postre reconfortante en cualquier momento del año, pero su sabor es aún mejor en invierno. Me gusta hacerla para la hora del té y es algo que disfruto especialmente.

I make this pie with an extra thin pastry, the same I use for the strudel or my knishes. This time I chose to mix the apples with blueberries, but I often combine them with raisins and walnuts. They combine well with gooseberries if you have any at hand. I like the tartness of Granny Smiths, but you could choose any other kind if you like it sweeter. 

Hago esta tarta con una masa extra fina, la mismo que utilizo para el strudel o mis knishes. Esta vez elegí mezclar las manzanas con los arándanos, pero a menudo las combino con pasas de uva y nueces. Van muy bien con grosellas si las tienen a mano. Me gusta la acidez de las Granny Smith, pero se puede elegir cualquier otro tipo si les gusta más dulce.

My daughter is a great fan of the Great British Bake Off Show and whenever we make pie at home, she challenges me about "soggy bottoms". I can assure you this one passes the test!

Mi hija es una gran fan del Great British Bake Off Show y cada vez que hacemos tarta en casa, me desafía para ver cuán seca queda la masa debajo de la tarta. Les puedo asegurar que ésta pasa la prueba!

This is a very short post to share with you these delicious muffins for breakfast or as a snack. It has been very hot lately and finally the rain came and dropped the temperature, to make it possible for anyone to turn on an oven! 

Este es un muy breve post para compartir con ustedes estas deliciosas magdalenas para el desayuno o como merienda. El tiempo estuvo muy caluroso últimamente y, finalmente, la lluvia llegó y dejó caer la temperatura, para hacer posible que cualquiera pueda encender un horno!

























These muffins are easy and quick to assemble. It would be ideal to have muffin cases, but I  did not, so I greased and lined the bottom of each muffin mold, so go ahead and try them...and come again and tell me how you found them!

Estas magdalenas o muffins son fáciles y rápidos de armar. Sería ideal tener pirotines pero yo no tenía, entonces, enmantequé y forré la parte inferior de cada molde para muffin, así que vayan y pruébenlos... y vengan otra vez y cuénten cómo los han encontrado!

Sometimes splitting one cake recipe into smaller versions gives us freedom to present the same bake with some variations. Such is the case of this brown butter cake I divided in smaller molds and garnished some with apples, others with blueberries, or both.

A veces, dividir una receta de torta en versiones más chicas nos da la libertad para presentar el mismo horneado con algunas variaciones. Esto es lo que hice con esta torta de "beurre noisette" o manteca de nuez, la dividí en moldes pequeños y completé algunas con manzanas, otras con arándanos, o con ambos.


The cake really goes well with any other fruit you might have, any kind of berries, concord grapes, pears or even figs. The point is to use whatever you have that is suitable, but not enough for a big mold. Sometimes at home we have an assortment of left over fruit and I find this is a good way to finish them and then buy fresh ones.

La torta realmente va bien con cualquier otra fruta que puedan tener, cualquier tipo de frutos rojos, uvas, peras o incluso higos. El punto es usar lo que tengan que sea adecuado, pero cuya cantidad no sea suficiente para un molde grande. A veces en casa tenemos un surtido de frutas que quedaron y me parece que es una buena manera de terminarlas para luego comprar frescas.


Brown butter is simply butter that has been cooked until golden brown, which gives off a delicious nutty aroma. The recipe I use complements this nutty scent with the use of almond meal and only calls for egg whites. The cake in itself is so soft and fluffy you have to be careful not to end up eating all of them!

La manteca de nuez o "noisette" es simplemente la manteca que se ha cocinado hasta que esté dorada, y desprende un delicioso aroma a nuez. La receta que uso complementa este aroma a nuez con la utilización de harina de almendra y sólo lleva claras de huevo. La torta en sí es tan suave y esponjosa que hay que tener cuidado de no terminar comiéndolas todas!


As a topping for the fruit I made some cinnamon sugar, mixing granulated sugar, brown sugar and ground cinnamon. It is best to do it ahead so that the cinnamon flavour really blends into the sugar.

Para espolvorear sobre la fruta hice un poco de azúcar de canela, mezclando azúcar común con azúcar negra y canela en polvo. Lo mejor es hacerlo con anticipación para que el sabor de la canela realmente se impregne en el azúcar.


We had them for breakfast with a sprinkle of dusting sugar but next time I think I shall do them for tea time and indulge ourselves with a dollop of crème fraîche on top!

Las comimos para el desayuno espolvoreadas con azúcar impalpable pero la próxima vez creo que voy a hacerlas para la hora del té con una cucharada de crema fresca por encima!

Is there anything more comforting than apple cake? I wonder! Especially when you have some alone time and you need to go through papers and stuff. In my opinion, the best company for a cup of coffee or tea if you prefer, as I do.

¿Hay algo más reconfortante que la torta de manzana? ¡Me pregunto! Especialmente cuando se tiene un poco de tiempo a solas y se necesita para arreglar papeles y otras cosas. En mi opinión, la mejor compañía para una taza de café o té, si lo prefieren como yo.













Fortunately we always have apples all year round, and though it has been terribly hot to turn on the oven these days, I managed to bake this simple beauty, while putting in order a lot of paper work I had lingering around, that needed to be done before the end of the year.

Afortunadamente siempre tenemos manzanas durante todo el año y aunque estuvo terriblemente caluroso para encender el horno en estos días, me las arreglé para hornear esta simple belleza, mientras ponía en orden un montón de papeleo que tenía dando vueltas, que necesitaba hacer antes de que finalice el año.













One of the things I love about this cake is that it is so light. Brown sugar takes the texture to a new level and cinnamon rounds up the flavour. I also liked the idea of sunken apples which I have seen lately in other blogs. Don´t they look beautiful?

Una de las cosas que me encanta de esta torta es que es tan liviana. El azúcar negra lleva a la textura a un nuevo nivel y la canela redondea el sabor. También me gustó la idea de las manzanas hundidas que he visto últimamente en otros blogs. ¿No quedan lindas?


And it is not a proper coffee cake if the streusel is missing, so I topped the cake with some easy and quick crumble I made. Hope you try this one... it suits for fall too!

Y no es una torta para café propiamente dicha si le falta streusel, así que coloqué un poco de crumble fácil y rápido que hice por encima. Espero que intenten hacerla ... se adapta para el otoño también!

Recently I started buying from two ladies who sell incredibly good organic nuts, raisins and the sort. I had the opportunity to visit a friend, who is lactose intolerant, and knowing how much he likes sweet things, I decided to try the ingredients I had bought from them in this delicious cookie recipe, and take them for a cup of coffee at his place, for a small gathering he had organized. Though, I must admit, I did a few more to keep at home, because they are just the kind of healthy treat anybody would want their children to have after an exhausting day at school.

Recientemente comencé a comprarle a dos señoras que venden frutos secos orgánicos, increíblemente buenos, pasas de uva y cosas por estilo. Tuve la oportunidad de visitar a un amigo que es intolerante a la lactosa y sabiendo lo mucho que le gustan las cosas dulces, decidí probar los ingredientes que les había comprado en esta deliciosa receta de galletas y las llevé para acompañar una taza de café, para un pequeño evento que realizó en su casa. Aunque, debo admitir, hice un poco más para tener en casa, ya que son precisamente el tipo de alimento saludable que cualquiera quisiera que sus hijos tenga después de un día agotador en la escuela.


The shredded apple substitutes the milk or cream I often use in this kind of dough, and not only gives it a rich moist texture, but enhances the flavour in such a great manner! I love the combination of raisin and cinnamon and the extra flavour of apple just made them scrumptious.

La manzana rallada sustituye la leche o crema, que utilizo a menudo en este tipo de masa, y no sólo le da una rica textura húmeda, sino que realza el sabor en una gran manera! Me encanta la combinación de pasas y canela, y el sabor extra de la manzana los termina de hacer deliciosos.









I was very happy to see how all of those invited devoured the cookies, as they had their coffee, and were ready to ask for more. These are the simple things baking gives me as a reward, I was very pleased to see how a batch of cookies could make a bunch of grown ups act like kids!

Me puso muy feliz ver cómo todos los invitados devoraban las galletas, mientras tomaban su café, y estaban dispuestos a pedir más. Estas son las cosas simples que hornear me da como recompensa, me alegró ver como una fuente de galletas logró que un grupo de adultos actuara como chicos!

It is that time again when our choice of seasonal fruit comes down to apples and pears. Not that I complain, but as I love to add fruit to my bakes, I get rather nostalgic seeing the varied choice of summer in Northern Hemisphere foodblogs!

Es otra vez el tiempo en que nuestra elección de frutas de temporada se reduce a las manzanas y las peras. No es que me queje, pero como me encanta añadir fruta a lo que horneo, me agarra nostalgia cuando veo la variada opción del verano en los blogs del hemisferio norte!


Even so, there is wisdom in nature, because winter fruit produces amazingly comforting sweet treats. Its scent invades the house, bringing a sense of coziness to the air.

Aun así, hay sabiduría en la naturaleza, porque la fruta de invierno produce horneados increíblemente reconfortantes. Su aroma invade la casa, dándole un aire acogedor al ambiente. 









Such is the case of this cake: a tender almond crumb, scented with honey and lemon and crowned with thin, sliced and baked, tart Granny Smith apples, sweetened with the right amount of caramelized sugar. A perfect blend of flavours for our weekly afternoon tea.


Tal es el caso de esta torta: una miga de almendra tierna, aromatizada con miel y limón, y coronada con finas rodajas cocidas al horno de ácidas manzanas Granny Smith, endulzadas con la cantidad correcta de azúcar caramelizada. Una mezcla perfecta de sabores para nuestro té semanal de la tarde.

Though it is not traditional to bake Hot Cross Buns for Easter in my country, I thought it would be a good idea to give them a try for a change. A Sunday Lent morning with these buns, some butter and jam on them and the complete meal would become an awesome treat!

A pesar de que no es tradicional  hornear Hot Cross Buns (Bollos de la Cruz) para Pascuas en mi país, pensé que sería una buena idea probarlos para un cambio. Una mañana de domingo de Cuaresma con estos bollos, manteca y mermelada sobre ellos y el desayuno completo se convertiría en un impresionante festejo!
















I did the traditional buns, just a little bigger, as loaves of bread to cut and share. These buns according to tradition carry the cross remembering the crucifixion of Jesus but, as I read, they also have other meanings, they deepen friendship when shared and bring good health when eaten.

Hice los bollos tradicionales, solo que un poco más grandes, como hogazas de pan para cortar y compartir. Estos bollos según la tradición llevan la cruz recordando la crucifixión de Jesús, pero también se le otorgan otros significados como he leído, compartirlos profundizan la amistad y comerlos hacen bien a la salud.

Going through some recipes for these hot cross buns, I came across one of them, that had turned the buns into a loaf and I instantly liked the idea. I thought it would not harm them much if I changed a few things, such as using lemon zest instead of orange and adding some new green apples to the filling. The smell in my kitchen was absolutely fabulous: spices, raisins, baked apples and bread. Could not ask for more.

Hojeando algunas recetas para estos hot cross buns, me encontré con una, que había convertido a los bollos en un pan y de inmediato me gustó la idea. Pensé que no iba a hacerles mucho daño si le cambiaba algunas cosas, como usar ralladura de limón en vez de naranja y añadir algunas manzanas verdes nuevas al relleno. El olor en mi cocina era absolutamente fabuloso: a especias, pasas, manzanas al horno y pan. No podía pedir más.

This past winter I baked a variety of cakes in square and rectangular baking tins, to cut into small bites and always have at hand with a cup of coffee or tea. I had posted these recipes directly on my FACEBOOK page and thought it would be a good idea to save them in a post on the blog. I was tempted by the apples, pears and prunes, and spices such as ginger and cinnamon, that combined with a touch of honey, scented all the house as I baked them. Let's enjoy them!

Este invierno pasado hice una variedad de tortas en moldes cuadrados o rectangulares para cortar en porciones y tener siempre a mano con una taza de café o un té. Había posteado estas recetas directamente en mi página de FACEBOOK y pensé que sería una buena idea ponerlas en el blog para no perderlas. Me tentaron las manzanas, peras y ciruelas desecadas y especias como el jengibre y la canela, que combinadas con un toque de miel, perfumaron toda la casa al cocinarlas. ¡Vamos a disfrutarlas!

Almond is my favourite nut. Sometimes I wonder if it has to do with my Armenian descent. It is told that the edible almond (the wild variety is poisonous) comes from the Middle East, specifically a region between Armenia and Azerbaijan. Anyway, this valued fruit is very versatile as an ingredient in the kitchen.
The edible type of almond derives from the prunus amygdalus or prunus dulcis, one of the first domesticated fruit trees in the ancient Middle East. It is common to the Armenian, Arab and Jewish culture. It can be found in numerous passages of the Old Testament in the Bible, as a symbol of watchfulness and promise, probably due to its early flowering. It is told that the rod of Aaron, brother of Moses, was an almond rod that blossomed with bitter or sweet almonds, according to the behaviour of the Jewish people.

La almendra es mi fruto seco preferido. A veces me pregunto si no será por mi origen armenio. Según se cuenta, la almendra comestible (la salvaje es venenosa) proviene de Medio Oriente, específicamente de una zona entre Armenia y Azerbaijan. Cualquiera sea el caso, este fruto tan apreciado es muy versátil a la hora de ser un ingrediente en la cocina.
La variedad de almendra comestible es el fruto del prunus amygdalus o prunus dulcis, uno de los primeros árboles de frutos domesticados en el antiguo Medio Oriente. Es común a la cultura armenia, árabe y judía.
En relatos del Antiguo Testamento de la Biblia podemos encontrarla en numerosos pasajes, como símbolo de vigilancia y promesa, probablemente por su florecimiento anticipado, como lo era la vara de Aarón, el hermano de Moisés, cuya vara de almendro florecía con almendras amargas o dulces de acuerdo al comportamiento del pueblo judío.







From a nutritional standpoint the almond has countless qualities. Most of the vitamin B complex, a significant amount of vitamin E and minerals such as zinc, iron, calcium, magnesium, phosphorus and potassium. Nevertheless it is very rich in calories. Its energy value is approximately 576cal per 100gr. It is eaten as a fruit and also processed as flour (almond meal), oil, milk or paste and its uses in cooking are varied.

Desde el punto de vista de la nutrición la almendra posee innumerables cualidades. Casi todo el complejo de vitamina B, una importante cantidad de vitamina E y minerales como el zinc, hierro, calcio, magnesio, fósforo y potasio. No obstante, cabe destacar que tiene muchas calorías. Su valor energético aproximado es de 576 cal. cada 100 gr. Se come como fruto y se puede procesar en harina, aceite, leche o pasta y sus usos en la cocina son muy variados.

It is still cold, yet we know spring will start showing its first signs anytime. For this reason, these following weeks we shall be seizing winters last goods. The bright Sunday afternoon turned out as the ideal time for this delicate and nutritious apple pie, that beside a warm cup of tea, joined me while I finished the last details of the recipe for a very inventive contest I entered during the week-end. Enjoy yourselves, while I go on cooking, taking pictures and filling up forms...
There is a deadline!

Sigue haciendo mucho frío pero sabemos que en cualquier momento los primeros signos de la primavera van a empezar a aparecer. Por esta razón, estas próximas semanas vamos a aprovechar lo bueno del invierno. La tarde luminosa del domingo se convirtió en el momento ideal para esta delicada y nutritiva tarta de manzanas, que junto a una taza de té caliente, me acompañó mientras terminaba de ajustar los últimos detalles de mi receta para un concurso muy original en el que me acabo de inscribir el fin de semana. Así que, disfruten, mientras yo sigo cocinando, sacando fotos y llenando los formularios...
¡ Hay fecha limite de entrega!


Amaranth is a perennial plant with edible leaves and seeds, though it is also used in an ornamental manner. Its name derives from the Greek amarantus, meaning "unfading". In ancient Greece the purple and red flowers were offered to Ephesian Artemis. They were supposed to have healing properties and were held as a symbol of immortality. It was known in the past not only by the Greeks. Aztecs in America and many other cultures in Asia and Africa made use of it. 
Nowadays it is recognized by its high nutritious value, and together with quinoa it is a "pseudograin"  highly used in recipes and considered as "the crop of the future".
The grain is very small, like that of the poppy seed, but harder. To become edible it must be cooked or , as I did for this pie, it must be toasted in a pan, so that the seeds may open up like popcorn.


El amaranto es una herbácea perenne cuyas hojas y semillas tienen uso culinario, aunque la planta también se usa de manera ornamental.  Su nombre deriva del griego amarantus, "que no se marchita". En la Grecia antigua las flores púrpuras y rojas se ofrecían a la diosa Artemisa de Efeso. Se suponía que la planta poseía propiedades curativas y se la consideraba como símbolo de la inmortalidad. No solo en Grecia antigua sino también en América, entre los Aztecas y pueblos de Asia y África se encuentra en uso desde el pasado.
Hoy en día se reconoce por su alto valor nutritivo y junto a la quinoa es un "pseudograno" muy utilizado en recetas y considerado como el "alimento del futuro". 
El grano es muy pequeño, como el de la amapola, pero más duro. Para poder comerlo hay que cocinarlo o como hice para esta tarta, colocarlo en una sarten tapada al fuego para que los granos se abran como el pochoclo.
