cinnamon sugar cream cheese plum cake












When I first posted my plum crumble cake I was not so sure that many would like plums in their cake as I do. But then, when I made the wine poached plum almond cake I definitely realized that we are a real bunch liking this fruit in our pudding.

La primera vez que publiqué mi torta de ciruelas con crumble no estaba tan segura de que a muchos les gustaría las ciruelas en las tortas como a mí. Pero entonces, cuando hice la torta de almendras y ciruelas al vino, definitivamente me di cuenta de que somos un grupo grande al que de verdad nos gusta esta fruta en nuestro postre.

The crazy thing about this cake is that you must surely have all the ingredients it takes in your pantry, apart from the fruit, which you could replace by any other stone fruit, though I would stick to plums here.

Lo más loco de esta torta es que seguramente deben tener todos los ingredientes que se necesitan para hacerla en su despensa, aparte de la fruta, que pueden reemplazar por cualquier otra fruta de carozo, aunque yo me quedaría con las ciruelas.

The cake calls for olive oil and I was surprised that it did not turn green as I expected! I love using oil in my cakes such as the lemon ricotta cake or the apple almond cake. I even use it for chocolate cakes! But I thought olive oil would be too strong and even dye it, but it was not the case. Together with the cream cheese it made a perfect fluffy sponge, so delicate and light you will not be able to stop till you finish the last bit. 

La torta requiere aceite de oliva y me sorprendió que no se puso verde como yo esperaba! Me encanta usar aceite en mis tortas como la torta de ricota y limón o la torta de almendras y manzanas. Incluso lo uso para las tortas de chocolate! Pero pensé que el aceite de oliva sería demasiado fuerte e incluso la teñiría, pero no fue el caso. Junto con el queso crema se logra una esponja perfectamente suave, tan delicada y ligera que no van a poder parar de comer hasta que terminen el último pedacito.










The best part is the contrast between the soft, spongy cake, flavoured slightly by the oil and the fruit covered with the cinnamon sugar, which I explain how to make in the recipe that follows.

Lo mejor es el contraste suave y esponjoso de la masa con ese aroma especial que le otorga el aceite de oliva contrastado por la fruta cubierta por el azúcar de canela, que les explico como hacer en la receta que sigue.

This is a very long name for such a small bite! But if you like figs, and why not blue cheese, as I do, you will find they are absolutely worth the try as an appetizer or snack, special for a party with friends or a weekend treat with a boozy beverage. It can also make a wonderful light dinner with a fresh arugula salad on the side.

Este es un nombre muy largo para un bocadito tan pequeño! Pero si les gustan los higos, y porque no el queso azul, como a mí, encontrarán que vale absolutamente la pena probarlos como aperitivo o snack, especial para una festejo con amigos o como picada de fin de semana junto a una bebida espirituosa. También pueden ser maravillosos como cena liviana, acompañados por una ensalada de rúcula fresca.

Fresh figs are in season now, though I have managed to cook with figs even if it is not the season, like I did with my turkish dry figs, almonds and yoghurt cake, liked by all those who, like me, are fans of this fruit. As for the blue cheese, which I often use for snacks, like the blue cheese walnut and rosemary biscuits, it pairs figs in a very special way, adding the sharp and salty edge to the ensemble. 

Estamos ahora en época de higos frescos, pero aún cuando no es la estación, me las arreglo para cocinar con higos, como lo hice con mi torta de higos turcos secos, almendras y yoghurt, que como a mi, tanto le gusta a todos los amantes de esta fruta. En cuanto al queso azul, que a menudo utilizo para aperitivos, como en las galletas de queso azul nueces y romero, acompaña los higos de una manera muy especial, añadiendo su sabor picante y salado al conjunto.

Where I live, we get packets of puff pastry in 4" inches round disks, which are used for "empanadas" and make it easy to assemble the small puff pastry baskets that hold the filling for the bites. If you don´t have these in your area, the round disks can be cut from a store bought puff pastry sheet, just like the ones you get for tarts and pies. I prepared a tutorial* to show you how to assemble the baskets because, as they say, an image is worth a thousand words!

Donde vivo, tenemos paquetes de hojaldre en discos redondos de 10 cm (4" pulgadas), que se utilizan para empanadas y hacen que sea fácil armar las pequeñas canastas de hojaldre que llevan el relleno de los bocaditos. Si no los consiguen en su localidad, los discos redondos se pueden cortar de una hoja de hojaldre comprada, como las que se usan para las tartas y pasteles. Preparé un tutorial* que muestra cómo armar las canastas porque, como dicen, una imagen vale más que mil palabras.

These are the typical white bread rolls I would buy in the bakery for a Sunday lunch. I decided it would be fun to try and bake them at home and we were not disappointed at all. Here we call them "mignon" ("small" in French), because they are sold in small pieces and the French influence in bread making is quite big.

Estos son los pancitos blancos típicos que compro en la panadería para una comida de domingo. Decidí que sería divertido probar y hornearlos en casa y no nos decepcionó en absoluto. Acá los llamamos "mignon" ("pequeño" en francés), porque se venden en pequeños trozos y la influencia francesa en la elaboración del pan es bastante grande.

























The size is important and also the shape. The crust is hard and inside, the crumb is fluffy and very white. It is ideal to eat with any dish that has a great sauce you will not want to spare, or to spread with soft, creamy butter. It is best to eat them just warm.

El tamaño también es importante y la forma. La corteza es dura y en el interior, la miga es esponjosa y muy blanca. Es ideal para comer con cualquier plato que tenga una gran salsa que no se querrían perder, o para untar con manteca cremosa y suave. Lo mejor es comerlos tibios.

Thanks to all the preparations for Thanksgiving Day and Hanukkah, which practically coincide this year, these last weeks I have been reading dozens of pie recipes. It is impossible to choose only one! But each of us has its own favourite ingredients, and though the one I made for today is not festive, it reflects a blend of flavours very near to what I consider is a perfect combination. What do you think?

Estas últimas semanas, gracias a todos los preparativos para el Día de Acción de Gracias y Hannukah, que este año prácticamente coinciden, estuve leyendo decenas de recetas de tartas. ¡Es imposible elegir una sola! Pero cada uno tiene sus ingredientes favoritos y si bien esta que hice hoy no es festiva, refleja una mezcla de sabores muy cercanos, a lo que para mí, es una perfecta combinación. ¿Qué opinan ustedes?








I chose an assortment of onions to match with white mushrooms, portobellos and dry porcinis soaked in white wine. These were sauteed and flavoured with rosemary. You can choose not to use rosemary and just season the vegetables with salt and fresh ground black pepper, or use another herb of your choice instead.

Elegí una variedad de cebollas para combinar con champignones, portobellos y porcinis secos que remojé en vino blanco. Los salteé y aromaticé con romero. Pueden elegir no usar romero y solo salpimentar los vegetales con sal y pimienta negra en granos, o usar alguna otra hierba a elección.































I chose a ricotta shortcrust for the pie crust I had already used for the spicy butternut squash curry tartines I had done during the winter, when I started blogging. Ricotta cheese provides an incredible smoothness to the crust and makes it really tender.

Elegí un shortcrust de ricota para la masa de la tarta, que ya había usado para las especiadas tartines de calabaza y curry que había hecho en el invierno, cuando empecé con el blog. La ricota le da una suavidad increíble a la masa y la hace muy tierna.

Not everything is so sweet. Or pleasant. Just as I told you last week about all the good things I found on GOOGLE+, I also ran into some unscrupulous administrator account on FACEBOOK. I had found a page of Argentina through a friend, where they promote new chefs who organize meals in their homes. Through the site you meet the cook and book your place. So far so good. The downside is that to promote this ( which also has a dark legal side because they perform a public activity in private places and do not pay any taxes or have the corresponding permissions) they used (note the verb tense) photos of well known international foodblogs and credited recipes and photos as their own, editing their name on photos. In a comment I complained, asking them to be fair and show the credits. If there's anything I learned with my blog is that the most appreciated foodbloggers are those who show an honest attitude towards other foodbloggers in the communities. In a world where sometimes everything is not so fair, finding a virtual paradise, where people appreciate and value the work of others, is one of the things that make me happy  about having  started  this blog.

No todo es tan dulce. Ni tan agradable. Así como les conté la semana pasada sobre todo lo bueno que encontré en GOOGLE+, también me topé con algún administrador de cuenta inescrupuloso en FACEBOOK. Había encontrado una página de Argentina a través de una amiga, donde promocionan chefs nuevos que organizan comidas en sus casas. A través del sitio se conoce al chef y se concreta la reserva. Hasta allí todo bien. Lo malo es que para promocionar todo esto (que también tiene un costado legal turbio porque realizan una actividad pública en lugares privados y no pagan ningún impuesto ni tienen los permisos para ejercer el oficio, ni las habilitaciones correspondientes) utilizaban (noten el tiempo de verbo) fotos de foodblogs internacionales muy conocidos y acreditaban como propias las recetas y las fotos, editando el nombre de ellos sobre las fotos. En un comentario me quejé, pidiéndoles que pusieran los créditos y que fueran honestos. Si hay algo que aprendí con mi blog es que los foodbloggers más apreciados son aquellos que muestran una actitud honesta con los demás foodbloggers en las comunidades. En un mundo donde a veces todo no es tan limpio, encontrar un paraíso virtual, donde la gente aprecia y valora el trabajo del otro, es una de las cosas que más me alegran de haber iniciado este blog.





















The story ended in a simple manner. Several people commented that I was right, some of them (also foodbloggers) said they had already complained, but that the manager had not attended their claims. It created a somewhat tense situation. So I decided to do something about it. I wrote a message via inbox to one of the most affected pages and warned them about the misuse of their material. The next day I checked the page in question and all the material had been removed. It did not look so attractive but at least, it looked more real. I think we all somehow inspire ourselves in other people, but to take ownership of intellectual property is something else.
Today I leave you with something that tastes the way I think things should be: authentic, with character and personality. I see cauliflower that way. It is one of those vegetables you either like or not. It is accompanied by a dip reminiscent of the Middle East with Greek yoghurt... to soften so much personality!

La historia terminó de manera sencilla. Varias personas comentaron que yo tenía razón, algunas de ellas (también foodbloggers) dijeron que ya se habían quejado pero que el administrador no había atendido sus reclamos. Se creó una situación un tanto tensa. Y decidí hacer algo. Escribí un mensaje por inbox a una de las páginas más afectadas y les advertí del uso indebido de su material. Al día siguiente volví a la página en cuestión y todo el material estaba retirado. Ya no se veía tan atractiva pero, por lo menos, era más real. Creo que todos nos inspiramos en alguien más, pero adueñarnos de su propiedad intelectual es otra cosa.
Hoy les dejo algo cuyo sabor es como creo que deberían ser las cosas: auténtico, con carácter y personal. Así es para mi el coliflor. Es uno de esos vegetales que te gustan o no. Está acompañado por un dip con reminiscencias de Medio Oriente que lleva yoghurt griego... para suavizar tanta personalidad!
