almond coconut loaf


I have been away from this page for a while now, but not without a reason. These last summer months brought all kind of changes, including not having my oven anymore. For a long time we have been wanting to move, and we finally did, and until I have our new house ready, I am renting one, that is just what we need for the time being, except for one aspect.

He estado lejos de esta página desde hace un tiempo, pero no sin una razón. Estos últimos meses del verano trajeron todo tipo de cambios, incluyendo no tener más mi horno. Durante mucho tiempo hemos querido mudarnos, y finalmente lo hicimos, y hasta que tenga nuestra nueva casa lista, estoy alquilando una, que es justo lo que necesitamos por el momento, a excepción de un aspecto.


















If you have not guessed yet, it is the only item I miss from my former house: my deeply cherished and adored oven!! I realized how privileged I have been all these years now that I don´t have it anymore! No doubt my baked goodies came out so well! I am dealing now with a common gas-yes gas-oven, and I am not particularly fond of it. But it is what I have for now and I will try to make the best I can with it.

Si no adivinaron todavía, es el único ítem que extraño de mi casa anterior: mi profundamente apreciado y adorado horno!! Me di cuenta de lo privilegiada que he sido todos estos años, ahora que no lo tengo más! No hay duda de que mis productos horneados salieran tan bien! Estoy lidiando ahora con un horno común a gas- sí gas-, y no estoy especialmente contenta con él. Pero es lo que tengo por ahora y voy a tratar de hacer lo mejor que pueda.




After trying the oven with many recipes (I burnt a few!) this loaf came out quite reasonably, and it better did, because I used homemade coconut toasted flakes here, which gave me a bit of work, cracking the fresh coconut open, grating the flakes and toasting them afterwards.

Después de probar el horno con muchas recetas (se me quemaron algunas!) este budín salió bastante razonable, y es mejor que lo hiciera, porque hice el coco rallado tostado casero, que me dio un poco de trabajo: abrir el coco fresco, rallar las hojuelas y tostarlo después.

So I´m starting this years recipe collection a bit late but I hope you enjoy them as I become acquainted to my new-old device!  Let's see throughout the months to come what it may bake!

Así que estoy empezando la colección de recetas de este año un poco tarde, pero espero que las disfruten a medida que vaya conociendo a mi nuevo-viejo dispositivo! Veamos a lo largo de los próximos meses lo que pueda hornear!

Even though it is still hot, I know summer is coming to an end and as true as it may be that changing seasons bring new things, I don´t want to let it go. At least for now. 

A pesar de que todavía hace calor, sé que el verano está llegando a su fin y aunque sea cierto que los cambios de estaciones traen cosas nuevas, no quiero dejarlo ir. Al menos por ahora.










This lemon raspberry crumble cake reminds me of all the good things we have had so far: lots of sunshine and fresh products. This cake is very similar to my lemon blueberry crumb loaf but way much tender. I think lemon works well with any red fruit and I love them all!

Esta torta de limón y frambuesas con crumble me recuerda a todas las cosas buenas que hemos tenido hasta ahora: mucho sol y productos frescos. Es muy similar al budín de limón y arándanos con crumble pero mucho más tierna. Creo que el limón funciona bien con cualquier fruta roja y las amo a todas!










The cake is topped with a lightly flavoured crumble which makes it extra lemony...to indulge those of us who love it so bad!

La torta tiene por encima un crumble ligeramente aromatizado que la hace extra alimonada ... para complacer a aquellos de nosotros que lo amamos tanto!

A while ago I posted my turkish dried figs almonds and yoghurt cake, where I mentioned the fig tree in my parents house. This year the tree is overloaded with figs so I decided I could use them, other than eating them as fruit or in my baking, to make jam for the colder seasons. 

Hace un tiempo publiqué mi torta de higos turcos secos almendras y yoghurt, donde mencioné la higuera en la casa de mis padres. Este año, el árbol está sobrecargado de higos, así que decidí que podía usarlos, más que comerlos como fruta o en mis tortas, para hacer mermelada para las estaciones más frías.



The recipe is very simple and if you enjoy making jam, this is the kind of product you will love to have in your pantry once the sunny days are over.

La receta es muy simple y si les gusta hacer mermelada, este es el tipo de producto que les encantará tener en su despensa una vez que los días soleados se hayan terminado.

Last Friday I was having a conversation with my son, concerning a game he plays online with his school friends, about people´s preferences on the web depending the subject, and how it was difficult to asses which topic could be a crowd pleaser over others. Both of us concluded that many times our choices differ completely from what will be popular or not, but all the same we want to do something about them.

El viernes pasado estaba teniendo una conversación con mi hijo en relación a un juego que él juega online con sus amigos de la escuela, sobre las preferencias de la gente en la web de acuerdo al tema, y lo difícil que era evaluar qué tema sobre otros, podría agradar a muchos. Ambos llegamos a la conclusión de que muchas veces nuestras decisiones difieren por completo de lo que va a ser popular o no, pero sin embargo queremos hacer algo respecto de ellas.


I think this is the case of plums. Around this time last year, I remember buying some giant specimens and making a fabulous plum crumble cake, yet most of those reading my blog, clicked the peach ginger streusel loaf more. Are plums underrated among summer stone fruits? I would not know, because I certainly love them, specially for desserts and baking. And as I am also fond of dry fruit, when plums are not in season, I even use prunes for cakes or as a side to my honey panna cotta.

Creo que este es el caso de las ciruelas. Alrededor de esta fecha el año pasado, recuerdo que compré unos ejemplares gigantes e hice una fabulosa torta de ciruelas con crumble, pero la mayoría de los que entran al blog leyeron más el budín de durazno con streusel de jengibre. Estarán subvaluadas las ciruelas con respecto a las otras frutas de carozo del verano? No sabría, porque ciertamente me encantan, especialmente para los postres y para hornear. Y como también me gustan las frutas secas, incluso utilizo ciruelas pasas cuando las ciruelas no están en temporada, para tortas o para acompañar mi panna cotta de miel.

This cake has two distinctive features. On the one hand the plums are poached in wine syrup (I chose a rosé tardío), slightly sweet, which gave the fruit a great texture and depth of flavour. On the other hand, the cake is so easy to make, the two bowl kind, dry ingredients on one side and wet on the other, mix and... voilá!(the method reminded me of my blueberry and coconut loaf) It could easily become gluten free substituting the plain flour for rice flour or any gluten free flour in the market, though it would not be recommended for those with nut allergies because it is heavy on the almond flour, just like the cherry almond torte.

Esta torta tiene dos características particulares. Por un lado, las ciruelas están cocidas en un jarabe de vino (elegí un rosado tardío), ligeramente dulce, que le dio a la fruta una gran textura y profundidad de sabor. Por otra parte, la torta es tan fácil de hacer, de esas que se hacen con dos bols, los ingredientes secos por un lado y húmedos por el otro, se mezcla y ... voilá! (El método me recordó al que usé para el budín de arándanos y coco). Podría fácilmente convertirse en libre de gluten sustituyendo la harina de trigo por harina de arroz o cualquier harina libre de gluten en el mercado, aunque no se recomienda para las personas con alergias a las nueces, ya que la receta tiene mucha harina de almendras, tal como la torta húmeda de almendras y cerezas.

Once I arranged the fruit over the batter in the mold, I realized there was a lot of wine-plum syrup left which I was not going to throw away, so I went fancy and served the cake after dinner with some mascarpone cream and a drizzle of reduced syrup on top. 

Una vez que dispuse la fruta sobre la masa en el molde, me di cuenta de que quedaba mucho jarabe de vino y ciruela, que no iba a desperdiciar, así que serví la torta después de la cena con un poco de crema de mascarpone y un chorrito de jarabe reducido por arriba.

There are a few things I enjoy the most during late summer. One of them is baking with seasonal fruits that are at hand, because you really don´t know if you will find them so good again. I thought it was perfect to use some amazing plums I had bought, before I turned every single one of them into jam for the incoming colder seasons.

Hay algunas cosas de las que más disfruto durante el final del verano. Una de ellas es hornear con frutas de temporada de las que hay a mano, porque realmente no sabemos si las vamos a encontrar tan buenas de nuevo. Pensé que era perfecto usar unas ciruelas increíbles que había comprado, antes de convertir cada una de ellas en mermelada para las estaciones entrantes más frías.


This plum crumble cake has been in my plans for the summer for a time now. I had saved the recipe and was waiting for the right occasion and a glorious day. The weather has been very whimsical all along the season but apparently we have been favoured with two delightful weekends on a row! So I seized the moment and as soon as these beauties arrived yesterday afternoon, I knew it was the time to let them show their full flavour.

Esta torta de ciruelas con crumble ha estado en mis planes para el verano desde hace un tiempo. Había guardado la receta y estaba esperando la ocasión justa. El clima estuvo muy caprichoso a lo largo de la temporada, pero aparentemente hemos sido favorecidos con dos fines de semana seguidos espectaculares!  Así que aproveché el momento, y tan pronto como estas bellezas llegaron ayer por la tarde, supe que era el tiempo para que mostraran todo su sabor.







The plums for this cake have been hand picked by some local producers who grow organic vegetables and fruits in the area. This summer we have been purchasing all sorts of amazing veggies and fruits, together with my neighbour, from this small organic place and they even bring it to our homes. Every Friday afternoon we place our order and enjoy its arrival the following day. Lately it is very difficult to find reliable products in the market, or rather find them at all! I hope to keep this practice during the year because it has been a change for good and price wise, unbelievable as it may be in our current chaotic economical situation, it is cheaper than in the market.

Las ciruelas para esta torta fueron recogidas a mano por algunos productores locales que cultivan verduras orgánicas y frutas en la zona. Este verano hemos estado comprando todo tipo de verduras y frutas increíbles, junto con mi vecina, a este pequeño lugar orgánico que incluso nos trae las cosas a nuestras casas. Todos los viernes por la tarde hacemos el pedido y disfrutamos de su llegada al día siguiente. Últimamente es muy difícil encontrar productos de confianza en el mercado, o más bien encontrarlos del todo! Espero seguir esta práctica durante el año, ya que ha sido un cambio para bien y con respecto a los precios, aunque parezca increíble en la actualmente caótica situación económica, son más baratos que en el mercado.











I cut the plums into wedges to prepare the fruit for the cake and simply added some granulated sugar, macerating them for about an hour.

Corté las ciruelas en trozos para preparar la fruta para la torta y simplemente les añadí un poco de azúcar granulada, macerándolas por aproximadamente una hora.

Hi! It´s been a while since my last post. I took a short break from writing but not from cooking! In spite of the heat and the copious rains (the weather here has gone crazy, it seems absolutely subtropical!) I have been trying several recipes. The one I want to share with you is from an amazing Australian food site, which I have adapted slightly after trying it. The original version, which was the first I made, had cherries and though they are in season now, I wanted to combine the loaf with blueberries for a change, specially because I know there are blueberries in most markets all the year round. I also adapted the amount of wheat flour adding some almond meal. 

¡Hola! Pasó algún tiempo desde mi último post. Me tomé un recreo corto de la escritura pero no de la cocina! A pesar del calor y las copiosas lluvias (¡el clima se volvió loco y parece absolutamente subtropical!) estuve probando varias recetas. La que quiero compartir con ustedes es de un maravilloso sitio de recetas australiano, que adapté un poco después de probarla. La versión original, que fue la que hice primero, era con cerezas, y aunque están en época ahora, quise combinarla  con arándanos para un cambio y especialmente porque ahora se encuentran en la mayoría de los mercados todo el año. También adapté la cantidad de harina de trigo añadiendo algo de harina de almendras.
















Coconut speaks of freshness and summer, don´t you think so? The great thing about it is that we can use desiccated coconut and coconut milk throughout the whole year and bring the reminiscence of sunshine and warmer days even in the coldest weather. I must admit I liked this recipe so much I did it a third time, dividing the batter and mixing some cocoa powder to one half and coconut to the other. The marble version was a total hit among my children and their friends! It is such an easy recipe I think I will do these adapted versions again sometime in the following seasons.

El coco habla de frescura y de verano, ¿no les parece? Lo bueno que tiene es que podemos usar coco desecado y leche de coco a lo largo de todo el año y traer el recuerdo del sol y los días cálidos, incluso en el clima más frío. Debo admitir que me gustó tanto esta receta que la hice una tercera vez, dividiendo la masa y mezclando un poco de cacao en polvo en una mitad y coco en la otra. La versión marmolada fue un éxito total entre mis hijos y sus amigos! Es una receta tan fácil que creo que voy a hacer estas versiones adaptadas de nuevo, en algún momento de las próximas estaciones.





















One last thing. If you want to try the recipe but do not have coconut milk and you don´t mind if it is not dairy free, I recommend using whole dairy milk and  some pouring cream. Hope you enjoy!

Una última cosa. Si quieren probar la receta pero no tienen leche de coco y no les importa que tenga lactosa, les recomiendo usar leche entera común y un poco de crema simple. Espero que lo disfruten!


panettone -no yeast-

Early in December I had read this genius recipe from Mario Batali and I was eager to give it a try. Mainly because I was wondering how it would turn out since it has no yeast and because it is just as I love things: straightforward and simple. I firmly believe that "less is more" and this recipe confirms one of the principles I follow, not only at work, but also in the kitchen. (Though you should know that many say that "less is boring"... You choose!)

A principio de diciembre había leído esta genial receta de Mario Batali y estaba ansiosa por probarla. Principalmente porque me preguntaba como resultaría, ya que no contiene levadura, y porque es justamente como amo las cosas: sin complicaciones y simples. Creo firmemente que "menos es más" y esta receta confirma este principio que aplico, no solo en mi trabajo, sino también en la cocina. (Aunque deberían saber que muchos afirman que "menos es aburrido"... ustedes elijan!)
There are few days left before Christmas so I thought it was the right time to start baking my panettone. There is a strong Italian influence in the country and panettone is a must for the holidays. These past days have been terribly hot. Temperatures have risen above 30º C (i.e. above 86º F) and it is not easy to get into the kitchen and bake, so as I predicted, this recipe was not only my right choice for its handiness, but also because it barely took time!

Faltan pocos días para Navidad, por lo que consideré que era el momento justo para hacer mi "panettone" (pan dulce). En el país hay una influencia italiana muy fuerte y el "panettone" es un infaltable en la mesa navideña. Estos días pasados han sido muy calurosos. Las temperaturas estuvieron por encima de los 30º C (eso es más de 86º F) y no es fácil meterse en la cocina y hornear, así que, tal como lo había predicho, esta receta no fue solamente mi elección correcta por ser tan manejable sino también porque casi no llevó tiempo hacerla!

Did you realize how close we are to Christmas? Which are the flavours that remind you it is near? Dried fruits and nuts remind me of this time and take me directly to my childhood. This time of the year, so close to Christmas, brings indelible memories of that time. One of the things I most remember are dried figs. My grandfather Misak, who spent part of his own childhood in Smirna (Izmir), used to prepare for my brother, my cousin and me, dried figs, halved and stuffed with walnuts. It was a feast within the feast! At least for me, because I really don't know wether the other two children devoured them as I did, or not. I loved those Turkish dried figs and to me, they just simply meant Christmas and my grandfather...and all his amazing stories in Anatolian land.

¿Se dieron cuenta de lo poco que falta para Navidad? ¿Qué sabores les hace acordar que está cerca? A mí, las frutas secas y las nueces me traen memorias de esta época y me llevan directamente a la niñez. Esta parte del año, tan cerca de Navidad, me trae recuerdos imborrables de mi infancia. Una de las cosas que más recuerdo son los higos secos. Mi abuelo Misak, que pasó parte de su propia infancia en Esmirna ( Izmir), nos preparaba, a mi hermano, a mi prima y a mí, higos secos cortados a la mitad y rellenos con nueces. ¡Era toda una fiesta dentro de la fiesta! Por lo menos para mí, porque realmente no sé si los otros dos niños se los devoraban como yo o no. Amaba esos higos turcos secos y para mí representaban simplemente eso: Navidad y mi abuelo... y todas sus increíbles historias en tierra de Anatolia.






The great advantage about dried figs, as well as other dried fruits, is that we can have them for Christmas and New Year Eve's Holidays. Figs are a late summer fruit and as such, those living in the Northern Hemisphere already delighted themselves with their sweet, juicy and seedy taste and those of us down South will have to wait till late February for their matchless scent and flavour. Around the end of summer I love to collect some from the fig tree in my parents' house, that yields loads of Spanish figs (before the birds pick their fleshy inside!), to make a favourite Greek fig paste recipe I love to serve with fresh bread and homemade ricotta cheese.

La gran ventaja de los higos secos, y de las otras frutas secas, es que podemos usarlas en las fiestas de Navidad y Año Nuevo. El higo es una fruta tardía del verano y como tal, los que viven en el hemisferio norte ya se deleitaron con su gusto dulce, jugoso y semillado y aquellos de nosotros en el sur, tendremos que esperar hasta fin de Febrero por su incomparable aroma y sabor. Alrededor del fin del verano me encanta recolectar algunos higos del árbol de la casa de mis padres, que da cantidad de higos españoles (¡antes de que los pájaros picoteen su pulpa carnosa!), para hacer una receta griega favorita de pasta de higos, que me encanta servir para acompañar con pan fresco y ricota casera.

I had these gorgeous dried Turkish figs and I inspired myself in THIS recipe from Ottolenghi´s blog. Just read it. It is absolutely amazing. The cake reminded me of my apple almond cake because it has ground almonds and greek yoghurt, yet the main difference is that he uses butter creamed with  sugar, which makes it richer, while I use vegetable oil (as I usually do in my cakes) to get a leaner cake. And of course, those fresh figs from summer, so exuberant and luscious.
I had to do something with mine to make them look a bit like them. So I coated them in a sweet and sticky caramel sauce, that once again reminded me of my childhood. As a child, I remember my parents buying for my brother and me caramel dried figs on a stick, covered with sweet popcorn stuck all around them, from an elderly man who had a cart full of  this delicious booty and sold them on the street. 

Tenía estos maravillosos higos turcos secos y me inspiré en ESTA receta del blog de Ottolenghi. Sólo léanlo. Es absolutamente increíble. La torta me recordó a mi torta de manzanas y almendras porque tiene almendras molidas y yoghurt griego, pero la gran diferencia es que él usa la manteca batida con el azúcar, lo que la enriquece más, mientras que yo utilizo aceite vegetal (como usualmente hago en mis tortas) para obtener una torta más ligera. Y por supuesto, esos higos frescos del verano, tan exuberantes y deliciosos. 
Yo tenía que hacer algo con los míos para que se les parecieran un poco. Los bañé con una capa de salsa de caramelo, dulce y pegajosa, y una vez más recordé mi niñez. De chica, recuerdo a mis padres comprando para mi hermano y para mí, higos secos acaramelados en un palito, recubiertos con pochoclo dulce, de un señor mayor que, desde un carrito lleno de este delicioso botín, los vendía en la calle.
