Last Friday I was having a conversation with my son, concerning a game he plays online with his school friends, about people´s preferences on the web depending the subject, and how it was difficult to asses which topic could be a crowd pleaser over others. Both of us concluded that many times our choices differ completely from what will be popular or not, but all the same we want to do something about them.
El viernes pasado estaba teniendo una conversación con mi hijo en relación a un juego que él juega online con sus amigos de la escuela, sobre las preferencias de la gente en la web de acuerdo al tema, y lo difícil que era evaluar qué tema sobre otros, podría agradar a muchos. Ambos llegamos a la conclusión de que muchas veces nuestras decisiones difieren por completo de lo que va a ser popular o no, pero sin embargo queremos hacer algo respecto de ellas.
I think this is the case of plums. Around this time last year, I remember buying some giant specimens and making a fabulous plum crumble cake, yet most of those reading my blog, clicked the peach ginger streusel loaf more. Are plums underrated among summer stone fruits? I would not know, because I certainly love them, specially for desserts and baking. And as I am also fond of dry fruit, when plums are not in season, I even use prunes for cakes or as a side to my honey panna cotta.
Creo que este es el caso de las ciruelas. Alrededor de esta fecha el año pasado, recuerdo que compré unos ejemplares gigantes e hice una fabulosa torta de ciruelas con crumble, pero la mayoría de los que entran al blog leyeron más el budín de durazno con streusel de jengibre. Estarán subvaluadas las ciruelas con respecto a las otras frutas de carozo del verano? No sabría, porque ciertamente me encantan, especialmente para los postres y para hornear. Y como también me gustan las frutas secas, incluso utilizo ciruelas pasas cuando las ciruelas no están en temporada, para tortas o para acompañar mi panna cotta de miel.
This cake has two distinctive features. On the one hand the plums are poached in wine syrup (I chose a rosé tardío), slightly sweet, which gave the fruit a great texture and depth of flavour. On the other hand, the cake is so easy to make, the two bowl kind, dry ingredients on one side and wet on the other, mix and... voilá!(the method reminded me of my blueberry and coconut loaf) It could easily become gluten free substituting the plain flour for rice flour or any gluten free flour in the market, though it would not be recommended for those with nut allergies because it is heavy on the almond flour, just like the cherry almond torte.
Esta torta tiene dos características particulares. Por un lado, las ciruelas están cocidas en un jarabe de vino (elegí un rosado tardío), ligeramente dulce, que le dio a la fruta una gran textura y profundidad de sabor. Por otra parte, la torta es tan fácil de hacer, de esas que se hacen con dos bols, los ingredientes secos por un lado y húmedos por el otro, se mezcla y ... voilá! (El método me recordó al que usé para el budín de arándanos y coco). Podría fácilmente convertirse en libre de gluten sustituyendo la harina de trigo por harina de arroz o cualquier harina libre de gluten en el mercado, aunque no se recomienda para las personas con alergias a las nueces, ya que la receta tiene mucha harina de almendras, tal como la torta húmeda de almendras y cerezas.
Once I arranged the fruit over the batter in the mold, I realized there was a lot of wine-plum syrup left which I was not going to throw away, so I went fancy and served the cake after dinner with some mascarpone cream and a drizzle of reduced syrup on top.
Una vez que dispuse la fruta sobre la masa en el molde, me di cuenta de que quedaba mucho jarabe de vino y ciruela, que no iba a desperdiciar, así que serví la torta después de la cena con un poco de crema de mascarpone y un chorrito de jarabe reducido por arriba.
