apple almond oat cake

Almost a month and a half of spring already gone by, and I am still feeling as if it just started. The leaves on the trees are the only reminder of the season, which has been upto now wearier than winter, almost like a second fall. And maybe because of the moody weather, I rather crave to bake the kind of cake I would not this time of the year. Though this weekend looks as if our luck is about to change!

This recipe is a variation of my favorite apple almond cake and is the perfect match for a cup of tea or coffee shared in good company. It almost has no wheat flour which I replaced with oat flour, for those seeking a healthier diet.

I used a DIY oat flour with my regular all purpose flour. As I mentioned in my recipe for oat cinnamon sticky toffee buns it is as simple as grabbing the food processor and pulsing, transforming regular rolled oats into fine oat flour.

fig bakewell tart

This tart is originally from Derbyshire and as the story tells, it started more as a pudding than a tart. There are many versions of how it was made in the beginning, but nowadays what prevails is the shortcrust-jam-frangipane recipe.

Apparently puff pastry was used in the beginning, but nowadays it is common to use shortcrust pastry, especially because it is apt to contain a filling such as frangipane, which needs a harder crust than puff pastry.

The jam part deserves a distinct chapter. Originally candied fruits or compote were mixed with a variety of citrus zest. Nowadays raspberry jam is considered as the traditional jam to be used in the tart.

For this recipe I used a shortcrust pastry that usually comes out well, to be sure of the outcome, and I used the fig jam I recently made, because I thought it would combine perfectly with the almonds.

The tart is traditionally garnished with flaked almonds and some like to add a drizzle of icing on top.

strawberry pistachio valentine muffins

Valentine´s Day is round the corner and though I never do anything special on that day, this time I wanted to try these strawberry pistachio muffins, inspired in a cake with a story.

Apparently there was a French lady (some versions say she actually was a Persian princess) in love with a Persian prince, who prepared a delicious pistachio cake with delicate spices and a fragrant saffron cream, which was meant to conquer his love.

This poor woman´s intention turned so bad, she ended up killing the prince. He died on the spot when he tasted the cake for he was terribly allergic to saffron. Not the kind of ending one expects for a sweet Valentine's story!

I am not going to risk it here, so I left the saffron out of the recipe! Pistachios are relevant as an ingredient in Persian cuisine and the cake is delicately spiced. The strawberries are a perfect match and I was happy to find some in the market, because they appear early in spring, and we are in mid summer by now, so what we get is the last of the season.

You will see a small cake in the pictures, that is because I made a double recipe.

wine poached plum almond cake

Last Friday I was having a conversation with my son, concerning a game he plays online with his school friends, about people´s preferences on the web depending the subject, and how it was difficult to asses which topic could be a crowd pleaser over others. Both of us concluded that many times our choices differ completely from what will be popular or not, but all the same we want to do something about them.

I think this is the case of plums. Around this time last year, I remember buying some giant specimens and making a fabulous plum crumble cake, yet most of those reading my blog, clicked the peach ginger streusel loaf more. Are plums underrated among summer stone fruits? I would not know, because I certainly love them, specially for desserts and baking. And as I am also fond of dry fruit, when plums are not in season, I even use prunes for cakes or as a side to my honey panna cotta.

This cake has two distinctive features. On the one hand the plums are poached in wine syrup (I chose a rosé tardío), slightly sweet, which gave the fruit a great texture and depth of flavour. On the other hand, the cake is so easy to make, the two bowl kind, dry ingredients on one side and wet on the other, mix and... voilá!(the method reminded me of my blueberry and coconut loaf) It could easily become gluten free substituting the plain flour for rice flour or any gluten free flour in the market, though it would not be recommended for those with nut allergies because it is heavy on the almond flour, just like the cherry almond torte.

Once I arranged the fruit over the batter in the mold, I realized there was a lot of wine-plum syrup left which I was not going to throw away, so I went fancy and served the cake after dinner with some mascarpone cream and a drizzle of reduced syrup on top.

brown butter apple blueberry mini cakes

Sometimes splitting one cake recipe into smaller versions gives us freedom to present the same bake with some variations. Such is the case of this brown butter cake I divided in smaller molds and garnished some with apples, others with blueberries, or both.

The cake really goes well with any other fruit you might have, any kind of berries, concord grapes, pears or even figs. The point is to use whatever you have that is suitable, but not enough for a big mold. Sometimes at home we have an assortment of left over fruit and I find this is a good way to finish them and then buy fresh ones.

Brown butter is simply butter that has been cooked until golden brown, which gives off a delicious nutty aroma. The recipe I use complements this nutty scent with the use of almond meal and only calls for egg whites. The cake in itself is so soft and fluffy you have to be careful not to end up eating all of them!

As a topping for the fruit I made some cinnamon sugar, mixing granulated sugar, brown sugar and ground cinnamon. It is best to do it ahead so that the cinnamon flavour really blends into the sugar.

We had them for breakfast with a sprinkle of dusting sugar but next time I think I shall do them for tea time and indulge ourselves with a dollop of crème fraîche on top!

cherry almond torte

Baking with seasonal fruit is one of the things, among many, that I enjoy about baking. Spring started with fabulous strawberries that turned irresistible some bakes, like my strawberry cream cheese cinnamon crumble rolls and all sorts of red fruits that allowed us to enjoy delicacies such as raspberry coconut mini scones or a delicious lemon blueberry crumb loaf.

But I was eager to get to that special time, around mid November , when we start getting cherries in the market. I don´t know about you, but cherries are the red fruit I like best. When the season starts they are not at their best , but as we get closer to Christmas they are big, plump and intensely red, almost purple, and very juicy and tasty.

The ones I bought were rather sour to the taste, but excellent for baking this special recipe. I could produce with them a couple of bakes that really satisfies any cherry fan like me! This cherry almond torte is almost flourless, the great amount of ground almond makes it crumbly and together with the rest of the ingredients, turns it moist, perfect for a dessert.

This cake is quite dense so I added a personal touch and flavoured the cake with some lemon zest, which made it light and fragrant, and also dusted some icing sugar on top, though the plain cake would also make a delicious bite for a mid morning coffee break.

The great part about this cake is that you can use a jar of sour cherries, if you are not in cherry season, and satisfy any red fruit craving!

apple honey cake

It is that time again when our choice of seasonal fruit comes down to apples and pears. Not that I complain, but as I love to add fruit to my bakes, I get rather nostalgic seeing the varied choice of summer in Northern Hemisphere foodblogs!

Even so, there is wisdom in nature, because winter fruit produces amazingly comforting sweet treats. Its scent invades the house, bringing a sense of coziness to the air.

Such is the case of this cake: a tender almond crumb, scented with honey and lemon and crowned with thin, sliced and baked, tart Granny Smith apples, sweetened with the right amount of caramelized sugar. A perfect blend of flavours for our weekly afternoon tea.

chocolate fudge cake

I have a serious problem with words when it comes to chocolate. How much can you relate to that?

Fudgy. Moist. Dense.

Fudgy. Húmeda. Densa.

Let's get the recipe!

¡Vamos a la receta!

peach ginger streusel loaf

I could have baked this peach ginger streusel loaf as a coffee cake if I had chosen. This recipe is so good I just turned it quickly into a loaf to enjoy with my cup of tea, but it is the perfect match for coffee, if that is what you love! A hot cappuccino maybe?

The days are getting cooler and though autumn is not yet showing, you can smell the change in the air. Whenever a season changes I get this urge of baking with whatever great fruit is left, such as I did with those gorgeous plums for my plum crumble cake. The peaches I got were awesome, probably not like those of Montreuil (a famous peach orchard in Paris), but I think that even Escoffier would have chosen them for his Melba dessert.

And as autumn calls for other scents and smells, I joined this summer fruit to the flavour of spices such as ginger, that pairs so well, and perfumed the crunchy streusel with it. I added almond flakes, just because I cannot live without them, as you already know. But those are totally optional!

cinnamon and raisin lemony frangipane sticky buns

New year...new template! Do you like it? I am very happy with this purchase and I hope to be able to convey this happiness in all the posts of the year. You will be able to follow the blog on facebook and other social networks from here, since the previous page did not have the links. Am I happy? Just super happy!
To start enjoying my new format I want to share these "sticky buns", ideal for a good breakfast. The original recipe is from fiveandspice, and my intention was to follow it as it is, but I had to adapt it because I basically did not have two key ingredients: cardamom and  yeast.

On January 1st every shop or market around the area where I live was closed, but I was determined to bake these buns for my family, so I had to use a bit of my imagination. I would not get the distinctive flavour of cardamom, but I could use a safe spice such as cinnamon. Also, I needed to leaven the dough, so I thought of the method I had learned from Mario Batali's recipe for panettone I recently posted on December. I made use of some cream of tartar and baking powder. Thankfully I was not short of lemons, so at least I could rescue some of the original flavours. And last but not least, instead of baking them in one round or square baking tin I used a muffin tray, as this brilliant blogger did, because the dough would not be the "pull apart" kind, I was sure it would turn out more like cake.

panettone -no yeast-

Early in December I had read this genius recipe from Mario Batali and I was eager to give it a try. Mainly because I was wondering how it would turn out since it has no yeast and because it is just as I love things: straightforward and simple. I firmly believe that "less is more" and this recipe confirms one of the principles I follow, not only at work, but also in the kitchen. (Though you should know that many say that "less is boring"... You choose!)

There are few days left before Christmas so I thought it was the right time to start baking my panettone. There is a strong Italian influence in the country and panettone is a must for the holidays. These past days have been terribly hot. Temperatures have risen above 30º C (i.e. above 86º F) and it is not easy to get into the kitchen and bake, so as I predicted, this recipe was not only my right choice for its handiness, but also because it barely took time!

You can copy the recipe directly from the article or follow it with the slight adaptations I made to adecuate it to the taste of my family and friends, since I got carried away and made it twice to have enough to giveaway!

turkish dried figs, almonds and yoghurt cake

Did you realize how close we are to Christmas? Which are the flavours that remind you it is near? Dried fruits and nuts remind me of this time and take me directly to my childhood. This time of the year, so close to Christmas, brings indelible memories of that time. One of the things I most remember are dried figs. My grandfather Misak, who spent part of his own childhood in Smirna (Izmir), used to prepare for my brother, my cousin and me, dried figs, halved and stuffed with walnuts. It was a feast within the feast! At least for me, because I really don't know wether the other two children devoured them as I did, or not. I loved those Turkish dried figs and to me, they just simply meant Christmas and my grandfather...and all his amazing stories in Anatolian land.

The great advantage about dried figs, as well as other dried fruits, is that we can have them for Christmas and New Year Eve's Holidays. Figs are a late summer fruit and as such, those living in the Northern Hemisphere already delighted themselves with their sweet, juicy and seedy taste and those of us down South will have to wait till late February for their matchless scent and flavour. Around the end of summer I love to collect some from the fig tree in my parents' house, that yields loads of Spanish figs (before the birds pick their fleshy inside!), to make a favourite Greek fig paste recipe I love to serve with fresh bread and homemade ricotta cheese.

I had these gorgeous dried Turkish figs and I inspired myself in THIS recipe from Ottolenghi´s blog. Just read it. It is absolutely amazing. The cake reminded me of my apple almond cake because it has ground almonds and greek yoghurt, yet the main difference is that he uses butter creamed with  sugar, which makes it richer, while I use vegetable oil (as I usually do in my cakes) to get a leaner cake. And of course, those fresh figs from summer, so exuberant and luscious.
I had to do something with mine to make them look a bit like them. So I coated them in a sweet and sticky caramel sauce, that once again reminded me of my childhood. As a child, I remember my parents buying for my brother and me caramel dried figs on a stick, covered with sweet popcorn stuck all around them, from an elderly man who had a cart full of  this delicious booty and sold them on the street.
