easy seed bars


It has been a while since my last post. I have been very busy lately and with very little time to have a quiet moment to post any of the many things I have been baking. Yet I did not want to spare the opportunity of sharing these amazingly easy seed bars, which have turned into one of my favourite snacks lately, when I take a tea/coffee break from work.

Pasó un tiempo desde mi último post. Estuve muy ocupada últimamente y con muy poco tiempo para tener un momento de tranquilidad para publicar cualquiera de las muchas cosas que he estado horneando. Sin embargo, no quería perder la oportunidad de compartir estas barras de semillas increíblemente fáciles, que se han convertido en uno de mis snacks favoritos últimamente, cuando tomo una pausa para el té / café de trabajo.










I am used to homemade granola bars but these are made entirely out of seeds, so if you have a nut allergy these might be for you. They are also gluten-free. Seeds have all sorts of good properties, which make them a healthy option, and though I usually use them for bread, they are incredibly tasty in these crunchy bars.

Estoy acostumbrada a las barras de granola caseras pero estas barras están hechas totalmente de semillas, por lo que si tienen una alergia a las nueces en general, podrían servir como opción. Son también libre de gluten. Las semillas tienen todo tipo de buenas propiedades, lo que las convierte en una opción saludable, y aunque por lo general las utilizo para hacer pan, quedan increíblemente buenas en estas barras crujientes.

I always love a good homemade bread roll. And if cheese is included, all the better. I usually make my white bread rolls on weekends but today I wanted something that would surprise my family on Easter Day, as we shared our bread together at the table.

Siempre me encanta un buen pan casero. Y si incluye queso, tanto mejor. Normalmente suelo hacer mis pancitos blancos o mignoncitos los fines de semana, pero hoy quería algo que pudiera sorprender a mi familia el día de Pascua, mientras compartimos nuestro pan juntos a la mesa.


These cheese filled bread rolls are really simple and they can be made ahead. I chose a soft cheese so it could melt easily. You must be careful to pinch the dough properly when you insert the cheese otherwise the cheese may come out of the bread.

Estos pancitos rellenos de queso son muy simples y pueden hacerse con anticipación. Elegí un queso suave para que se pudiera derretir fácilmente. Deben tener cuidado de cerrar la masa correctamente al insertar el queso de lo contrario puede salirse del pan.

Just warm them a little before serving. You will not be disappointed. Happy Easter!!

This is the type of bread I love to have ready for breakfast, especially on a holiday or festive week-end. The lemon poppy seed filling is delicate and fragrant, and allows the bread to be slathered with cream cheese, clotted cream or a citrus jam.

Este es el tipo de pan que me encanta tener listo para el desayuno, especialmente en un feriado o fin de semana festivo. El relleno de limón y semillas de amapola es delicado y fragante, y permite que el pan sea untado con queso crema, crema o una mermelada de cítricos


Braiding has always been an issue for me, and I think this time I got it well! The bread did not burst open while baking and I was quite happy with the result. I have tried before and though sometimes it came out well, as in my cinnamon cardamom bread, others have been complete failures! Which means I must go on practicing and not loose hope.

El trenzado siempre ha sido un problema para mí, y creo que esta vez lo tengo bien! El pan no se abrió de golpe mientras se horneaba y quedé muy contenta con el resultado. Lo he intentado hacer antes, y aunque a veces salió bien, como en mi pan trenza de canela y cardamomo, otras han sido un completo fracaso! Lo que significa que tengo que seguir practicando y no perder la esperanza.


The original recipe is from Martha Stewart´s book "Christmas", an old version I have and really cherish, because I can always turn to it when I am looking for a traditional holiday recipe. I topped it with some glaze, to make it look frosty, but you can choose to serve it alone or sprinkle some icing sugar on top.

La receta original es del libro de Martha Stewart "Christmas" (Navidad), una versión antigua que tengo y realmente aprecio, porque siempre puedo recurrir a ella cuando estoy en busca de una receta tradicional para las fiestas. Lo cubrí con un poco de glacé, para que parezca "escarchado", pero pueden elegir servirlo solo o espolvorearlo con un poco de azúcar impalpable en la parte superior.

I had to wait a few days before being able to bake this delicious English muffin recipe. I had been thinking about these golden goodies during the whole weekend, but could not get to my kitchen because I was behind with so much work at home, after some days out of the country.

Tuve que esperar unos días antes de poder cocinar esta receta de deliciosos muffins ingleses. Estuve pensando en estos pancitos dorados durante todo el fin de semana, pero no podía llegar a entrar a mi cocina, con tanto trabajo atrasado en casa, después de unos días fuera del país. 

The proper way to cook them is on a griddle or a heavy bottomed pan and finish them in the oven. I had seen a recipe that was completely done in the oven, that caught my eye, and decided to give it a try. They came out quite well, I must say, though their interior was not filled with the signature fissures of a griddle-baked English muffin, yet the texture was craggy enough to hold the raspberry jam I slathered on top- which was my ambition after all!

La forma correcta de cocinar estos panes es en una plancha o sartén de fondo grueso y terminarlos en el horno. Había visto una receta que estaba completamente hecha en el horno, que me llamó la atención y decidí darle una oportunidad. Salieron bastante bien, debo decir, y aunque su interior no quedó lleno de las fisuras típicas de un muffin inglés hecho a la plancha, la textura fue lo suficientemente rugosa como para sostener la mermelada de frambuesa con la que los unté- que era mi ambición después de todo!









I adapted Paul Hollywood´s recipe because it is the one I like best, though he does not bake them and chose polenta or corn meal instead of semolina for the topping, simply because it was what I had at home, though any of them will do.

Adapté la receta de Paul Hollywood porque es la que más me gusta, a pesar de que él no los hornea y elegí polenta o harina de maíz en lugar de sémola para espolvorear por encima, simplemente porque era lo que tenía en casa, aunque cualquiera de los dos va bien.

Which does not mean it is gluten-free. Nope. This Flourless German Walnut Cake has a tiny secret. The beautiful light brown, almost golden colour, is all about the ground walnuts in it, but the bread crumbs are responsible for it too. And for the texture, of course.

Lo cual no significa que sea libre de gluten. No. Esta torta de nuez alemana sin harina tiene un pequeño secreto. El lindísimo color marrón claro, casi dorado, se debe a las nueces molidas en la misma, pero el pan rallado en ella es responsable también. Y por la textura, por supuesto.















The best way to pair this cake is with a tempered chocolate cover. When it dries up, it becomes bright and hard, covering a humid, light and fluffy, just crunchy interior. It is best to finely chop the walnuts without pulverizing them.

El mejor acompañamiento para esta torta es una cubierta de chocolate puro templado. Al secarse queda brillante y duro, cubriendo un interior húmedo, liviano y esponjoso, apenas crujiente. Es ideal que las nueces estén picadas finamente pero no pulverizadas. 

This cake is wonderful for tea-time, but it makes a great dessert, served with whipped cream and halved walnuts. I decided to make a bundt cake, but the recipe is suitable for a layered cake, too. You just have to divide the batter in two and use round 9" inch baking tins, baking them for about 40 minutes each or until golden brown. The cream is ideal as a filling and the tempered chocolate will make a delicious cover. Some walnuts here and there to garnish it,  and your special dinner dessert will be ready!

Esta torta es maravillosa para la hora del té, pero puede convertirse en un gran postre, servido con crema batida y nueces en mitades. Me decidí a hacer una torta bundt, pero la receta es adecuada para un torta en capas también. Sólo tienen que dividir la masa en dos y usar un molde redondo de 23 cm de diámetro, hornearlas durante unos 40 minutos cada una, o hasta que estén doradas. La crema es ideal como relleno y el chocolate templado es una deliciosa cobertura. Algunas nueces aquí y allá, para adornar y el postre de esa cena especial estará listo!



















I almost forgot to tell you this heirloom recipe is one of the treasures we keep with my mother, who recently turned eighty, from a very "sixties" cook-book she greatly values, by a lady cook of Greek descent, who was very famous at that time, in these southern latitudes.

Casi se me olvidaba contarles que esta receta, una reliquia de familia, es uno de los tesoros que guardamos con mi madre, que acaba de cumplir ochenta años, sacada de un libro de cocina muy "años sesenta" que ella valora mucho, cuya autora es una cocinera de ascendencia griega, que era muy famosa en ese momento, por estas latitudes australes.

These are the typical white bread rolls I would buy in the bakery for a Sunday lunch. I decided it would be fun to try and bake them at home and we were not disappointed at all. Here we call them "mignon" ("small" in French), because they are sold in small pieces and the French influence in bread making is quite big.

Estos son los pancitos blancos típicos que compro en la panadería para una comida de domingo. Decidí que sería divertido probar y hornearlos en casa y no nos decepcionó en absoluto. Acá los llamamos "mignon" ("pequeño" en francés), porque se venden en pequeños trozos y la influencia francesa en la elaboración del pan es bastante grande.

























The size is important and also the shape. The crust is hard and inside, the crumb is fluffy and very white. It is ideal to eat with any dish that has a great sauce you will not want to spare, or to spread with soft, creamy butter. It is best to eat them just warm.

El tamaño también es importante y la forma. La corteza es dura y en el interior, la miga es esponjosa y muy blanca. Es ideal para comer con cualquier plato que tenga una gran salsa que no se querrían perder, o para untar con manteca cremosa y suave. Lo mejor es comerlos tibios.











As I always say, simple things are the best. I´m saving these to have with a cheese selection and red wine with some friends that are coming over for dinner tonight. Have a great week!

Como siempre digo, las cosas sencillas son las mejores. Guardé estos para degustar con una selección de quesos y vino tinto con algunos amigos que vienen a cenar esta noche a casa. Que tengan una buena semana!

Seed bread is about my favourite bread. I love the texture of this bread recipe and the slight crunch added by the seeds. I chose sunflower seed, linseed, poppy-seed and sesame, but the combination is really upto you, if tempted to do some bread at home.

El pan de semillas es mi pan favorito. Me encanta la textura de esta receta de pan y el leve crocante agregado por las semillas. Elegí semilla de girasol, de lino, semillas de amapola y sésamo, pero la combinación realmente depende de uno, si los tienta hacer pan en casa.

At home we love to eat this bread fresh, with some butter or cream cheese for breakfast, but it is also delicious when toasted for a sandwich with chicken or tenderloin, juicy tomatoes and some hearty mustard for a light dinner.

En casa nos encanta comer este pan fresco, con un poco de manteca o queso crema para el desayuno, pero también es delicioso cuando está tostado para un sandwich de pollo o lomo, tomates jugosos y un poco de mostaza fuerte para una cena ligera.

Kneading bread by hand can be so therapeutical and I do so every time I have the chance. Though this bread can be made in a bread machine if you have one. I personally don´t use it, it feels so good to work the dough!


Amasar el pan con las manos puede ser tan terapéutico y lo hago cada vez que puedo. Sin embargo, este pan se puede hacer en una máquina de pan, si ustedes tiene una. Personalmente no la uso, es tan bueno trabajar la masa!

I was invited to a last-minute gathering my neighbours organized for Easter so that the children might be together for an egg hunt, as Sunday is the day for family gatherings. I quickly prepared one of my favourite breads for Easter, which are usually decorated with crème pâtissière, but as I had little time I just garnished it with a delicious almond crumble.

Me invitaron a una reunión de último momento, que mis vecinos organizaron para Pascuas, para que los chicos pudieran estar juntos en una búsqueda de huevos, ya que el domingo es el día para las reuniones familiares. Rápidamente preparé uno de mis panes favoritos o rosca de Pascua, que suele ser adornado con crema pastelera, pero como tenía poco tiempo sólo lo decoré con un delicioso crumble de almendras.











I used some colourful jelly beans and some royal icing to give the braid a real Easter look!
Usé algunos caramelos de colores y un poco de glasé real para darle a la rosca un verdadero aspecto de Pascuas!

Though it is not traditional to bake Hot Cross Buns for Easter in my country, I thought it would be a good idea to give them a try for a change. A Sunday Lent morning with these buns, some butter and jam on them and the complete meal would become an awesome treat!

A pesar de que no es tradicional  hornear Hot Cross Buns (Bollos de la Cruz) para Pascuas en mi país, pensé que sería una buena idea probarlos para un cambio. Una mañana de domingo de Cuaresma con estos bollos, manteca y mermelada sobre ellos y el desayuno completo se convertiría en un impresionante festejo!
















I did the traditional buns, just a little bigger, as loaves of bread to cut and share. These buns according to tradition carry the cross remembering the crucifixion of Jesus but, as I read, they also have other meanings, they deepen friendship when shared and bring good health when eaten.

Hice los bollos tradicionales, solo que un poco más grandes, como hogazas de pan para cortar y compartir. Estos bollos según la tradición llevan la cruz recordando la crucifixión de Jesús, pero también se le otorgan otros significados como he leído, compartirlos profundizan la amistad y comerlos hacen bien a la salud.

Going through some recipes for these hot cross buns, I came across one of them, that had turned the buns into a loaf and I instantly liked the idea. I thought it would not harm them much if I changed a few things, such as using lemon zest instead of orange and adding some new green apples to the filling. The smell in my kitchen was absolutely fabulous: spices, raisins, baked apples and bread. Could not ask for more.

Hojeando algunas recetas para estos hot cross buns, me encontré con una, que había convertido a los bollos en un pan y de inmediato me gustó la idea. Pensé que no iba a hacerles mucho daño si le cambiaba algunas cosas, como usar ralladura de limón en vez de naranja y añadir algunas manzanas verdes nuevas al relleno. El olor en mi cocina era absolutamente fabuloso: a especias, pasas, manzanas al horno y pan. No podía pedir más.

This week I fell in love with a cinnamon cardamom kringel bread featured in Food 52. I had a recipe from my mother´s Danish neighbour which was very similar, and that also reminded me of the dough I had used for the sticky buns with brown sugar frangipane. I had never braided a bread before, so I thought it might be time for me to give it a try.

Esta semana me enamoré de un pan trenzado de canela y cardamomo publicado en Food 52. Tenía una receta de la vecina danesa de mi madre que era muy similar, y que me recordó a la masa que había utilizado para los sticky buns con frangipane de azúcar negra. Nunca había hecho una trenza antes, así que pensé que podría ser el momento para mí de probar.


The unusual thing I did was to infuse the milk with the seeds from the cardamom pods. The recipe I had called for ground cardamom, but this time I did not want to use my grinder so I just pestled them in the mortar and when the milk simmered I added them, turned off the heat and allowed them to infuse the milk for a while.

Lo inusual que hice fue impregnar la leche con las semillas de cardamomo. La receta que tenía requería cardamomo molido, pero esta vez no quise usar mi molinillo, por lo que las machaqué en el mortero y cuando la leche estuvo a punto de ebullición, las eché, apagué el fuego y dejé que la perfumaran por un rato.













The braid couldn´t have been more irregular and untidy, but I was satisfied with the result because though the shape was not as perfect as I would have wished, the texture of the bread and its scent were unbeatable. The cinnamon filling paired the soft flavoured bread delicately and we really enjoyed my brave attempt over a rich cup of coffee. 

La trenza no podría haber sido más irregular y desprolija, pero estaba satisfecha con el resultado, ya que a pesar de que la forma no era tan perfecta como yo hubiera deseado, la textura del pan y su aroma eran inmejorables. El relleno de canela acompañó con delicadeza el pan suavemente saborizado y realmente disfrutamos de mi valiente intento con una buena taza de café. 

The days are getting cooler gradually and these sort of treats are just fit! Moreover Easter is round the corner and I will try to make another one with frangipane or crème pâtissière, something very traditional in this country. Hope it is prim and proper next time!

Los días se están poniendo gradualmente más frescos y este tipo de rosca viene justa! Además Pascua está cerca y voy a intentar hacer otra con frangipane o crema pastelera, algo muy tradicional en este país. Espero que me salga como corresponde la próxima vez!

How many times do we have to wait just a little while before we serve food, when we invite our friends to have dinner at home? It is the ideal time for pouring out drinks, chat about the latest news and offer a tempting appetizer before we start the proper meal.
As an ideal starter before an informal dinner or appetizer before some good home-made pizzas, this quick, easy-to- make recipe will raise more than one praise.

¿Cuantas veces hay que esperar un ratito hasta que la cena esté totalmente lista cuando invitamos amigos a comer a casa? Es el momento ideal para servir bebidas, ponernos al día con las últimas novedades y ofrecer algo tentador para disfrutar juntos antes de empezar a cenar.
Ideal para una cena informal, o como aperitivo antes de unas buenas pizzas caseras esta receta super fácil y rápida se va a llevar más de una ovación.



This simple recipe has a few but noble ingredients. It is true that sometimes working with fresh yeast may seem a bit scary,  but the method used ensures a good result. My favourite pizza recipe has active dry yeast in it, but for this bread we will have to risk working with the "real"  stuff.
The other ingredient that gives the recipe a distinct flavour is oregano (origanum vulgare), a perennial herb often used in Mediterranean cuisine for its leaves (dry or fresh). The name is from Cyprus and ancient Greeks and Romans considered it as a symbol of happiness (so "Bonheurcuisine"!). We shall be using both in this recipe. It is good to have a small plant at home and if  you would like to try it,  you must know it  requires a lot of watering and plenty of sun.

Esta receta sencilla tiene unos pocos, pero nobles ingredientes. Es cierto que a veces asusta un poco trabajar la levadura fresca, pero el método aplicado nos va a asegurar un buen resultado. Mi receta favorita para hacer pizza es con levadura seca, pero para este pan hay que aventurarse a usar la tradicional.
 El otro ingrediente que le da un sabor inequívoco es el orégano (origanum vulgare), una herbácea perenne cuyas hojas son muy utilizada en la cocina mediterránea como condimento (secas o frescas). El nombre es originario de Chipre y los antiguos griegos y romanos lo consideraban un símbolo de la felicidad (tan ¡"Bonheurcuisine"!).  En esta receta vamos a usar las dos versiones. Tener una plantita en casa siempre viene bien, y si quieren intentarlo, para cuidarla tienen que saber que hay que regarla bastante y que necesita mucho sol.
