caramel macadamia cheesecake


This caramel macadamia cheesecake summarizes the combination I was seeking for a special dessert. It is hard to choose a cake when it comes to our own birthday. Those of you who ever read this blog know that I´m kind of nuts for nuts. Almonds are my favourite but macadamias have a very close second place.

Este cheesecake de caramelo y macadamia resume la combinación que estaba buscando para un postre especial. Es difícil elegir una torta cuando se trata de nuestro propio cumpleaños. Aquellos de ustedes que alguna vez leyeron este blog saben que estoy un poco loca por las nueces. Las almendras son mis favoritas pero las macadamias tienen un segundo puesto muy cercano.


The macadamia is native to Australia, where it was already consumed by the Aboriginals before the arrival of Europeans. There are approximately eight varieties but only two can be consumed, the others being poisonous. They are great for lowering cholesterol but like all nuts should be eaten moderately as they are very caloric. But there is only one birthday per year, right? When I found these I marveled, so big and fresh ...and locally produced!

La macadamia es originaria de Australia, donde los aborígenes, antes de la llegada de los europeos ya la consumían. Hay aproximadamente ocho variedades pero se consumen sólo dos, por ser las demás venenosas. Son buenísimas para disminuir el colesterol aunque como todo fruto seco hay que comerlo con medida por ser muy calórico. Pero se tiene un cumpleaños una vez por año, cierto? Cuando encontré éstas, me maravillé, tan grandes y frescas... y producidas localmente!


The recipe is in itself a small finding. Quite a while ago I read an adaptation of a macadamia cheesecake from Ottolenghi:The Cookbook in the blog Nordljus and later I found a recipe on caramel cheesecake in an Argentine foodblog (Divino Macaron). Both of them inspired this creation.

La receta es en sí un pequeño hallazgo. Hace un tiempo había leído una adaptación de cheesecake de macadamia de Ottolenghi:The Cookbook en el blog Nordljus y después encontré una receta de cheesecake de caramelo en un foodblog argentino (Divino Macaron). Ambas inspiraron esta creación.


The cake in itself is not difficult to make but it is quite a work of dedication (if not love!) as it has several steps. Toasting the macadamia, preparing the caramel sauce, making the cheesecake and then assembling the dessert. I prepared the nuts and sauce one afternoon and made the cheesecake the following day.

La torta en sí no es difícil de hacer, pero es todo un trabajo de dedicación (si no de amor!), ya que tiene varios pasos. Tostar las macadamias, preparar la salsa de caramelo, hacer el cheesecake y luego armar el postre. Preparé la nueces y la salsa una tarde e hice la torta al día siguiente.

Thanks to all the preparations for Thanksgiving Day and Hanukkah, which practically coincide this year, these last weeks I have been reading dozens of pie recipes. It is impossible to choose only one! But each of us has its own favourite ingredients, and though the one I made for today is not festive, it reflects a blend of flavours very near to what I consider is a perfect combination. What do you think?

Estas últimas semanas, gracias a todos los preparativos para el Día de Acción de Gracias y Hannukah, que este año prácticamente coinciden, estuve leyendo decenas de recetas de tartas. ¡Es imposible elegir una sola! Pero cada uno tiene sus ingredientes favoritos y si bien esta que hice hoy no es festiva, refleja una mezcla de sabores muy cercanos, a lo que para mí, es una perfecta combinación. ¿Qué opinan ustedes?








I chose an assortment of onions to match with white mushrooms, portobellos and dry porcinis soaked in white wine. These were sauteed and flavoured with rosemary. You can choose not to use rosemary and just season the vegetables with salt and fresh ground black pepper, or use another herb of your choice instead.

Elegí una variedad de cebollas para combinar con champignones, portobellos y porcinis secos que remojé en vino blanco. Los salteé y aromaticé con romero. Pueden elegir no usar romero y solo salpimentar los vegetales con sal y pimienta negra en granos, o usar alguna otra hierba a elección.































I chose a ricotta shortcrust for the pie crust I had already used for the spicy butternut squash curry tartines I had done during the winter, when I started blogging. Ricotta cheese provides an incredible smoothness to the crust and makes it really tender.

Elegí un shortcrust de ricota para la masa de la tarta, que ya había usado para las especiadas tartines de calabaza y curry que había hecho en el invierno, cuando empecé con el blog. La ricota le da una suavidad increíble a la masa y la hace muy tierna.

Do you have a favourite cheesecake? Last week, after buying some beautiful blueberries, I found myself in the search of the ideal cheesecake, since I wanted to use them as a topping with one of the most delicious bought marmalades I have ever tried.
I searched through my cook-books, but I found I would be serving AGAIN the same old cookie processed-crust and cream-cheese cake I always do, that is indeed a delicious cake, but above everything, a safe recipe.

¿Tienen ustedes una receta favorita de cheesecake? La semana pasada, luego de comprar unos muy lindos arándanos, me encontré en la búsqueda del cheesecake ideal, porque quería usar los arándanos como cubierta de la torta junto a una de las más deliciosas mermeladas compradas que jamás haya probado.
Busqué en mis libros de cocina, pero encontré que estaría sirviendo DE NUEVO la misma vieja conocida, de masa de galletitas molidas y relleno de queso crema que siempre hago, que realmente es una torta deliciosa, pero sobre todo, una receta segura.

























So I turned to the blogs for some help and inspiration and after some reading, I came out with this unique combination. I remembered a genius recipe from Paula's (an amazingly talented, well respected and highly reputed lady foodblogger I had the good fortune to meet on the web) blog in English. She had done some rolls (Caramel Graham Cracker Almond Raspberry Cinnamon Skillet Rolls) which I tried at home, but with some apples I had, since I could not find raspberries at the time, and everybody in the family was anxious and drooling over the recipe.
The great part of the recipe is that she used the Graham Crackers dough as such. I adopted this dough ever since! Thanks Paula!
For the filling I adapted a recipe I liked from the blog Nordljus, mainly because it combined ricotta cheese and traditional cream cheese.

Entonces me volqué a los blogs por ayuda e inspiración, y después de un poco de lectura se me ocurrió esta combinación única. Me acordé de una receta genial del blog en inglés de Paula (una increíblemente talentosa foodblogger, muy respetada y de gran reputación, que tuve la buena fortuna de conocer en la web). Ella había hecho unos rolls (Caramel Graham Cracker Almond Raspberry Cinnamon Skillet Rolls) que probé hacer en casa, pero con manzanas, porque en el momento no encontré frambuesas y mi familia estaba ansiosa y babeando por la receta.
La parte genial de la receta es que usa la masa de galletitas Graham como masa. ¡Desde entonces la adopté! ¡Gracias Paula!
Para el relleno adapté una receta del blog Nordljus, mayormente porque combina la ricota con el queso crema tradicional.
















My daughter liked the filling so much, we made some baked blueberry ricotta puddings also, adding some flour and blueberries to the mixture and topping them with the marmalade glaze.
When we finally sat down to have our tea, we discovered the unique taste of the spicy pastry combined with the very creamy filling, contrasting the freshness of the fruit. A cheesecake to become our favourite, don't you think so? There were the puddings, of course, for those who wanted extra filling. This way, we spent a delightful afternoon...and everyone,  happy.

A mi hija le gustó tanto el relleno, que hicimos unos puddings de ricota horneada con arándanos, añadiendo a la mezcla del relleno un poco de harina y arándanos y para la cubierta, glaceándolos con la mermelada.
Cuando finalmente nos sentamos a la mesa del té, descubrimos el sabor único de la masa especiada combinado con el relleno tan cremoso, contrastando con las frutas tan frescas. Un cheesecake para convertirlo en favorito, ¿no lo creen? También estaban los puddings, por supuesto, para los que querían relleno extra y así, pasamos una deleitosa tarde...y todo el mundo, feliz.

The recipe is mine and I hope you try it. It is quick, simple and very tender. I dusted it with some icing sugar to have it for breakfast or with a cup of coffee, but it can easily turn into dessert with some whipped cream on top and some fresh strawberries, that are so good these days in the market.


Fue el perfecto fin de semana. La indecisión del clima de la semana afectó mi ánimo y hornée todas las peras y las manzanas que quedaban del invierno, que se fue recientemente y por un momento pensé que debería retardar el buen tiempo en mi cocina. Pero amanecí el sábado y el día me sorprendió con mucho sol, una brisa fresca de primavera y mucha energía para combinar en esta torta sencilla, la frescura del limón y la suavidad cremosa de la ricota.
 La receta es mía y espero que la prueben. Es rápida, simple y muy tierna. La espolvoreé con azúcar impalpable para comer en el desayuno o para acompañar con un café, pero también se puede convertir en un rico postre con crema batida y frutillas de estación, que están tan buenas por estos días en el mercado.















To make lemon ricotta mix the lemon zest with the cheese and add to the batter.

Para la ricota al limón se mezcla la ralladura con el queso y se añade a la mezcla de la torta.


The lemon juice has to be added little by little and the beating must be thorough but gentle.

El jugo de limón se añade de a poco y se bate suave pero continuamente.

This long week-end was an ideal time to get some rest at home. My son went to the sea-side with his father, planning to do some "boys stuff " and I stayed with my daughter to enjoy the quietness of the house.
 When we are by ourselves we tend to relax and are less formal with our meals. Even so, I asked her as usual what would she like for lunch. Surprisingly, this time she asked for a chicken curry. I had not done it for a while and it is always great  with pilaf rice as a side. But I had no chicken at home, and not because I had forgotten to buy. Lately,  I tend to cook less meat for them. I cook meat or chicken three times a week. I  give them fish a couple of times a week, too. And I try to buy fresh products from small farms. But I seldom eat any. I prefer vegetable sides or pies and  good salads.
This made me think a little about my own eating habits. I see there are quite a lot of people that claim to be vegetarian and are against animal slaughter, and I consider this a very worthy attitude. I believe many do it out of conviction but some others just follow the trend.
In general, what we eat is a consequence of our surrounding culture, which explains our eating habits, but lately, it is also a consequence of  the food industry and marketing. If we take a look at the way animals are bred, at the agro-chemicals being used, and the refined products full of man-made substances with no nutritious value we shall realize that  we are eating a  bit worse every day.
Maybe I have internalized all this and unconsciously...I am turning into a veggie!! Did it ever happen to you?
Anyway, I still had to prepare "something" with curry to satisfy my daughter's request, when I came across this delicious "tartines" recipe, that was a real source of inspiration.


Este fin de semana largo fue un buen momento para descansar y estar en casa. Mi hijo se fue con su padre a la costa los tres días en plan de hacer "cosas de varones", y yo me quedé con mi hija a disfrutar de la tranquilidad doméstica. Cuando estamos las dos solas nos relajamos un poco en cuanto a la comida y somos menos formales. Igualmente siempre le hago la pregunta de rigor... "¿qué te gustaría almorzar?"  Sorpresivamente, esta vez, me pidió un curry de pollo. Hace tiempo que no lo hacía y con arroz pilaf queda espectacular. Pero no tenía pollo y no porque me hubiera olvidado de comprar. Últimamente les doy carne en forma moderada: sólo tres veces por semana algún plato con carne o pollo. También les hago un par de veces pescado. Y trato de comprar todos los productos frescos, de granja. Pero yo casi nunca los como. Prefiero los acompañamientos con verduras o las tartas y buenas ensaladas. 
Esto me hizo pensar un poco en mis propios hábitos. Veo que hay mucha gente que declama ser vegetariana y alza banderas en pro de no matar animales y considero esto una actitud muy loable. Creo que muchos lo hacen por convicción, pero algunos otros tantos por moda. 
En general lo que comemos es una consecuencia de nuestra cultura; lo que explica muchas tendencias alimentarias y últimamente, una consecuencia de la industria alimenticia y la propaganda. Y esto hace que cada vez comamos peor, si observamos la forma en que se crían los animales para consumo, los agro-químicos, los alimentos refinados y elaborados llenos de sustancias sintéticas y sin valor nutritivo. Tal vez haya interiorizado todo esto e inconscientemente... ¡me esté volviendo vegetariana! ¿Les pasó esto a alguno de ustedes? 
De cualquier manera, todavía tenía que satisfacer el pedido de mi hija de comer "algo" con curry, cuando encontré en esta receta  deliciosa de "tartines" una verdadera fuente de inspiración.






Curry is a mix of spices originally used in India to highten sauces in different types of stews or casseroles. It was introduced in Europe around the eighteenth century by Britain and the Netherlands, from the colonies both countries had in the far East.
These delicate "tartines" have a perfect combination of taste and texture: the sweetness and softness of the butternut squash against the character of the onions and garlic hightened by the distinct intensity of  the curry. All of this poured over a variation of the traditional shortcrust pie.

El curry es una mezcla de especias que se utiliza en la India para realzar salsas de diferentes platos de guisos o estofados, traída a Europa alrededor del siglo XVIII por el Reino Unido y Holanda, desde sus colonias en Oriente.
Estas delicadas "tartines" tienen una combinación de sabores y texturas perfectas: la dulzura y suavidad de la calabaza  contrasta con el carácter de las cebollas y ajos acentuado por la intensidad inconfundible del curry. Todo esto volcado sobre una variación de masa "quebrada" tradicional.
