This is my first post of the year and in a while. I have been silent on the blog, though I kept baking a little for the family in these past months without posting, and of course, reading my favourite blogs on a weekly basis. And though I did not actually post anything, I checked with great delight that many people came to the blog for the most popular recipes, which made me feel how alive the page is and inspires me to go on.


Este es mi primer post del año y en mucho tiempo. El blog estuvo en silencio, aunque seguí horneando un poco para la familia en estos últimos meses sin publicar, y por supuesto, leyendo mis blogs favoritos en una base semanal. Y aunque en realidad no publiqué nada, comprobé con gran deleite que mucha gente entró al blog por las recetas más populares, lo que me hizo sentir lo viva que está la página y me inspira a seguir adelante.

As for the ingredients, I realized I am starting the year where I left it on my last post. It´s that I am really obsessed with all the possibilities coconut gives us. I became a fervent user of coconut oil for cooking and coconut sugar as part of my baking recipes. For this loaf I used a creamy and frothy coconut milk from Thailand, which gave it a rich texture.


En cuanto a los ingredientes, me di cuenta de que estoy comenzando el año en donde lo dejé en mi último post. Es que estoy realmente obsesionada con todas las posibilidades que el coco nos da. Me convertí en una ferviente usuaria de aceite de coco para cocinar y azúcar de coco como parte de mis recetas para hornear. Para este budín usé una leche de coco cremosa y espumosa de Tailandia, que le dio una rica textura.

I think chocolate is one of the perfect matches for coconut. I grated a 70% cocoa dark chocolate I had kept away from my children´s sight (the remains are back in the hiding place!) and added it to the batter to complement the flavours.



Creo que el chocolate es uno de los maridajes perfectos para el coco. Rallé un chocolate negro con 70% de cacao, que había ocultado de la vista de mis hijos (¡los restos están de vuelta en el escondite!) y lo añadí a la preparación para complementar los sabores.

A lazy Sunday morning, after a long rainy week calls for this simple, yet comforting loaf, to be the perfect match for a steaming cup of coffee or tea. I don´t know about you, but changing season almost always brings some kind of discomfort to me, I can only make right with these kind of bakes that make me feel cozy again.

Una mañana de domingo perezosa, después de una larga semana de lluvia es perfecta para este simple pero reconfortante budín, el complemento ideal para una humeante taza de café o té. Yo no sé ustedes, pero el cambio de estación casi siempre me trae algún tipo de incomodidad que sólo puedo contrarrestar con este tipo de horneados que me hacen sentir confortable otra vez.

I am still trying to get familiar with the oven, but I think I am making some progress. For now I am experimenting with loaves like the almond coconut loaf I made last month and added fruit to this one, without burning it at all!!

Todavía estoy tratando de familiarizarme con el horno, pero creo que estoy haciendo algunos progresos. Por ahora estoy experimentando con budines como el budín de almendras y coco que hice el mes pasado y he añadido fruta a éste, sin quemarla en absoluto!!


The cinnamon sugar topping coated the apples, making them crispy outside but staying soft and juicy on the inside. 

El azúcar de canela recubrió las manzanas, haciéndolos crujientes por fuera pero manteniéndolas suave y jugosas por dentro.

I have been away from this page for a while now, but not without a reason. These last summer months brought all kind of changes, including not having my oven anymore. For a long time we have been wanting to move, and we finally did, and until I have our new house ready, I am renting one, that is just what we need for the time being, except for one aspect.

He estado lejos de esta página desde hace un tiempo, pero no sin una razón. Estos últimos meses del verano trajeron todo tipo de cambios, incluyendo no tener más mi horno. Durante mucho tiempo hemos querido mudarnos, y finalmente lo hicimos, y hasta que tenga nuestra nueva casa lista, estoy alquilando una, que es justo lo que necesitamos por el momento, a excepción de un aspecto.


















If you have not guessed yet, it is the only item I miss from my former house: my deeply cherished and adored oven!! I realized how privileged I have been all these years now that I don´t have it anymore! No doubt my baked goodies came out so well! I am dealing now with a common gas-yes gas-oven, and I am not particularly fond of it. But it is what I have for now and I will try to make the best I can with it.

Si no adivinaron todavía, es el único ítem que extraño de mi casa anterior: mi profundamente apreciado y adorado horno!! Me di cuenta de lo privilegiada que he sido todos estos años, ahora que no lo tengo más! No hay duda de que mis productos horneados salieran tan bien! Estoy lidiando ahora con un horno común a gas- sí gas-, y no estoy especialmente contenta con él. Pero es lo que tengo por ahora y voy a tratar de hacer lo mejor que pueda.




After trying the oven with many recipes (I burnt a few!) this loaf came out quite reasonably, and it better did, because I used homemade coconut toasted flakes here, which gave me a bit of work, cracking the fresh coconut open, grating the flakes and toasting them afterwards.

Después de probar el horno con muchas recetas (se me quemaron algunas!) este budín salió bastante razonable, y es mejor que lo hiciera, porque hice el coco rallado tostado casero, que me dio un poco de trabajo: abrir el coco fresco, rallar las hojuelas y tostarlo después.

So I´m starting this years recipe collection a bit late but I hope you enjoy them as I become acquainted to my new-old device!  Let's see throughout the months to come what it may bake!

It is amazing how time flies! I can hardly believe I have been doing this foodblogging "thing" for  two years already. My greatest joy is sharing with all those who care to read my recipes and bring happiness to their tables through them.
This small nook on the web has given me some beautiful friends and acquainted me with a lot of worthy people around the globe. Though I am not posting much, I shall try to keep it up, because it is just wonderful being around!!
I am leaving below the kind of recipe I enjoy most: quick, simple, for our everyday delight, to enjoy with family and friends.


Es increíble cómo pasa el tiempo! Apenas puedo creer que estuve haciendo esta "cosa" del foodblogging por dos años ya. Mi mayor alegría es compartir con todos aquellos que se preocupan por leer mis recetas y traer felicidad a sus mesas a través de ellas.
Este pequeño rincón en la web me ha dado hermosas amigas y me contactó con una gran cantidad de personas geniales por todo el mundo. Aunque no estoy publicando mucho, voy a tratar de hacerlo cuanto pueda, porque es simplemente maravilloso estar acá!!

Even though it is still hot, I know summer is coming to an end and as true as it may be that changing seasons bring new things, I don´t want to let it go. At least for now. 

A pesar de que todavía hace calor, sé que el verano está llegando a su fin y aunque sea cierto que los cambios de estaciones traen cosas nuevas, no quiero dejarlo ir. Al menos por ahora.










This lemon raspberry crumble cake reminds me of all the good things we have had so far: lots of sunshine and fresh products. This cake is very similar to my lemon blueberry crumb loaf but way much tender. I think lemon works well with any red fruit and I love them all!

Esta torta de limón y frambuesas con crumble me recuerda a todas las cosas buenas que hemos tenido hasta ahora: mucho sol y productos frescos. Es muy similar al budín de limón y arándanos con crumble pero mucho más tierna. Creo que el limón funciona bien con cualquier fruta roja y las amo a todas!










The cake is topped with a lightly flavoured crumble which makes it extra lemony...to indulge those of us who love it so bad!

La torta tiene por encima un crumble ligeramente aromatizado que la hace extra alimonada ... para complacer a aquellos de nosotros que lo amamos tanto!

As I mentioned previously, on my post for my cherry almond torte, I am a huge fan of this red fruit. And I go crazy when they are available in the market and buy as many as I can afford! So half of the ones I set aside went into my cake, and I decided to try this delicious cherry chocolate loaf with what was left.

Como les mencioné antes, en mi post para mi torta de almendras y cerezas, soy una gran fanática de este fruto rojo. Y me vuelvo loca cuando están disponibles en el mercado y compro todas las que me puedo permitir! Así que, la mitad de las que aparté fueron  mi torta y me decidí a probar este delicioso budín de chocolate y cerezas con las que quedaba.

I used a good quality cocoa powder, the one I had bought for the basic chocolate loaf and also some dark chocolate in chunks, to enhance the chocolate flavour and also because I like how those bits of pure chocolate work together with the fruit when you get a bite.

Usé un cacao en polvo de buena calidad, el que había comprado para el budín de chocolate básico y también un poco de chocolate negro en trozos, para mejorar el sabor del chocolate y también porque me gusta como estos pedacitos de chocolate puro quedan con la fruta cuando se come un bocado.

The loaf can be served alone but I found it good to garnish it with some thick chocolate ganache... to leave no doubt that I love chocolate!

El budín se puede servir solo, pero a mi me pareció bueno decorarlo con un poco de una gruesa ganache de chocolate...como para que no queden dudas de que me encanta el chocolate!

As I also mentioned on my other post, I think this loaf would also work with preserved sour cherries or even cranberries, and make a delicious breakfast or mid-afternoon sweet treat.

Como también mencioné en mi otro post, creo que este budín también funcionaría con cerezas en frasco o incluso con cranberries, y podría ser parte de un delicioso desayuno o bocadito dulce para la media tarde.

Back again. Back from my December silence, from my summer vacation, from my blog abstinence. I had a very busy end of the year concerning my job and a delightful beginning spent on the Uruguayan beach.

Estoy de vuelta. De vuelta de mi silencio de diciembre, de mis vacaciones de verano, de mi abstinencia del blog. Tuve un fin de año muy ocupado con respecto a mi trabajo y un comienzo delicioso transcurrido en la playa uruguaya.

In spite of not writing about my baking, I did quite a lot of new recipes I will be sharing soon. I wanted to start with this amazing lemon polenta pudding I adapted to fit these individual ramekins I bought during my stay at the beach. I brought with me several items for the kitchen, but these were the ones I wanted to use first!

A pesar de no escribir sobre mis horneados, hice un  montón de nuevas recetas que compartiré pronto. Quería comenzar con este increíble budín de polenta al limón que adapté para poder usar estos moldes individuales que compré durante mi estancia en la playa. Traje conmigo varios artículos para la cocina, pero éstos eran los que quería usar primero!

The main characteristic of the pudding is a soft, fluffy and spongy, cake-like texture contrasting the top, which is a golden crunchy crust. When you finish digging your spoon into it, you find a surprising lemon custard at the bottom, tangy, refreshing, tempting... A feast of textures in one mouthful with the most enticing citrus flavour.

La característica principal de este budín es su textura suave, mullida y esponjosa que contrasta con la parte superior, una corteza crujiente dorada. Cuando hayan terminado de hundir su cuchara en ella encontrarán una crema de limón sorprendente en la parte inferior, ácida y refrescante, tentadora ... Una fiesta de texturas en un solo bocado, con el sabor cítrico más apetitoso. 

What I love about it is that you can either have it warm or cold, which makes it suitable for any season, it can be kept in the fridge for at least two to three days... if puddings ever last that long... I dusted the top with icing sugar, but a dollop of whipped cream would add richness to it and smoothen the tanginess of the lemon.

Lo que me gusta de este postre es que se puede comer tibio o frío, lo que lo hace adecuado para cualquier época del año, se puede mantener en la heladera durante al menos dos o tres días (si es que los budines duran tanto tiempo...) Espolvoreé la parte superior con azúcar impalpable, pero una cucharada de crema batida le añadiría riqueza y suavizaría el sabor intenso del limón.

I am currently loving crumble in almost every bake I make. Could it be I love the crunch? Maybe. What I do know is that this lemon blueberry loaf just got better with the crumb on top!

Actualmente me está gustando mucho ponerle crumble a casi todo lo que horneo ¿Podría ser que amo el crocante? Tal vez. Lo que sí sé, es que este budín de limón y arándanos está mejor que nunca con el crumble por encima!

The loaf is very similar to my classic lemon loaf with coconut glaze, but in this case, red fruit and crumble make a delicious combination and improves the whole bake! As soon as spring began, we had a great amount of strawberries in the market and now it is the turn of blueberries... and I can´t wait for the cherries to come out in December! A real blessed season. 

El budín es muy similar a mi budín clásico de limón con glaseado de coco, pero en este caso, la fruta roja y el crumble hacen una deliciosa combinación y perfecciona todo el horneado! Ni bien la primavera comenzó, tuvimos una gran cantidad de frutillas en el mercado y ahora es el turno de los arándanos ... y no puedo esperar a que las cerezas aparezcan en diciembre! Una temporada verdaderamente bendita.

The hint of cinnamon in the crumble is really enhancing. I usually like to add some spice to the crumble as I did for the peach ginger streusel loaf. The great thing about crumble is that you can store it in the freezer as long as you use an airtight container. Making it ahead always comes in handy!

El toque de canela en el crumble lo mejora mucho. Normalmente me gusta añadir un poco de especias al crumble como hice para el budín de duraznos con streusel de jengibre. La gran cosa sobre el crumble es que se puede guardar en el freezer, siempre y cuando se utilice un recipiente hermético. Hacerlo de antemano siempre viene muy bien!


I am sure that even cranberries would be perfect for such a versatile version of lemon loaf and make it a festive treat for the incoming season. Just give it a thought. For now, we shall sit with a cup of tea and enjoy this one!

Estoy segura de que incluso los arándanos agrios o cranberries irían perfectos para una versión tan versátil de budín de limón y lo convertirían en un postre festivo para la temporada entrante. Sólo piénsenlo. Por ahora, vamos a sentarnos con una taza de té y a disfrutar de este!

This cream cheese and chocolate swirl loaf is something between a cake and a pudding. So soft and moist, really humid, and yet so cake like. I got inspiration from a Nigel Slater programme I was watching with my daughter. He was doing a lemon pudding loaf cake, which has little to do with our present loaf, yet the concept is identical. I love lemon flavour, as those who read my blog know, and specially loaves such as the classic lemon loaf with coconut glaze. But I think the rainy day had something to do with my mood for some chocolate, so I decided this creamy combination would be ideal. 

Este budín marmolado de queso crema y chocolate está entre una torta y un postre. Tan suave y húmedo, muy húmedo, y sin embargo, tan parecido a una torta. La inspiración surgió de un programa de Nigel Slater que estaba viendo con mi hija. Hizo un budín de limón, que tiene poco que ver con nuestro presente budín, pero el concepto es el mismo. Me encanta el sabor del limón, como los que leen mi blog saben, y especialmente budines como el budín de limón clásico con glaseado de coco. Pero me parece que el día lluvioso tuvo que ver con mi humor para un poco de chocolate, así que decidí que esta combinación cremosa sería ideal.

The batter is almost like the one you would do for a cheesecake, if it weren't for the flour, which turns it into a spongy, fluffy cake. The chocolate layer is almost like a ganache preparation, or the sort of filling you would do for a chocolate babka.

La mezcla es casi como la que haríamos para un cheesecake, si no fuera por la harina, que la convierte en una torta esponjosa y suave. La capa de chocolate es casi como una preparación para ganache o el tipo de relleno que usaríamos para un babka de chocolate.


This kind of cake makes you want to dig your spoon into it until no crumb is left! Don't you think so?

Con este tipo de budín dan ganas de meter la cuchara hasta que no quede una miga! No les parece?

swirl chocolate chip and vanilla bean loaf


I made this loaf for the long weekend, always having in mind that it is better to have a simple cake to grab on the counter, than allow the kids to eat store bought "stuff". As a rule I try to keep their intake as homemade as possible!

Hice este budín para el fin de semana largo, siempre teniendo en cuenta que es mejor tener una torta sencilla para comer sobre la mesada, que permitirle a los chicos comer "cualquier cosa" comprada hecha. Como regla, trato de mantener su consumo lo más casero como sea posible!


As simple as it may sound, I did changed a few things I usually do when baking a daily treat. I had a vanilla pod left from my last "crème caramel", a dessert we are very fond of and I hope to share some day here, so I decided I could infuse the milk with it, as I do for such dessert, instead of turning to my favourite extract.

Aunque este budín suene simple, he cambiado algunas cosas que suelo hacer cuando horneo una torta de entrecasa. Tenía una chaucha de vainilla que sobró de mi último "crème caramel" o flan, un postre que nos encanta y espero poder compartir algún día acá, así que decidí que podía perfumar la leche con ella, como lo hago para ese postre, en lugar de usar mi extracto favorito.










Once I had the vanilla batter, aside from incorporating cocoa powder to half of the preparation, I added a good amount of bittersweet chocolate chips, enriching the mixture with a favourite for everyone! ... It is a great surprise to find the little chunks after the first bite... Who can resist chocolate chips?

Una vez hecha la preparación, aparte de ponerle cacao para la parte de chocolate, añadí una buena cantidad de chips de chocolate semiamargo, enriqueciendo la mezcla con un favorito para todos!... Es una gran sorpresa descubrir los pequeños trozos con el primer bocado... Quién se puede resistir a los chips de chocolate? 










I did not garnish the loaf because it had an amazing crust,  but you could sprinkle some powder sugar, drizzle icing or chocolate ganache on top. Whatever your choice I think it will taste terrific!!

Dejé el budín sin cobertura porque tenía una corteza increíble, pero se puede espolvorear con azúcar impalpable, un glacé real o una ganache de chocolate. Lo dejó al gusto de ustedes, porque lo que elijan les va a quedar espectacular!!

There are not many secrets for a perfect classic lemon loaf. You need the right proportions between your basic ingredients and finding some flavourful lemons and that is about it. The problem is when you don´t find decent lemons. Around this time of the year they are not as good as they should be. So I decided a little lemon oil would make the difference and enhance the flavour.

No hay muchos secretos para un perfecto budín clásico de limón. Se necesitan las proporciones justas entre los ingredientes básicos y encontrar algunos limones con buen sabor y eso es casi todo. El problema es no encontrar limones decentes. Alrededor de esta época del año no son tan buenos como deberían ser. Así que decidí que un poco de extracto de limón haría la diferencia y realzaría el sabor.

To balance the tartness I always finish my loaf with a sweet glaze and sometimes I dust it with poppy seeds, but this time, after seeing this combination work successfully in other recipes, I thought it would be good to try with coconut.

Para cortar la acidez siempre lo termino con un glaseado dulce y a veces lo espolvoreo con semillas de amapolas, pero esta vez, después de ver esta combinación de manera exitosa en otras recetas, pensé que sería bueno probar con coco.



The sweet, sugary glaze trapped the coconut flakes and together provided the necessary crunch to  this lemon savoured, delicate and light loaf. The perfect excuse for some afternoon tea time on Labour´s Day!

El glaseado dulce y azucarado atrapó los copos de coco y juntos proporcionaron la cobertura crujiente necesaria para acompañar a este budín alimonado, delicado y ligero. La excusa perfecta para una tarde de té en el Día del Trabajo!

I could have baked this peach ginger streusel loaf as a coffee cake if I had chosen. This recipe is so good I just turned it quickly into a loaf to enjoy with my cup of tea, but it is the perfect match for coffee, if that is what you love! A hot cappuccino maybe?

Podría haber horneado este budín de duraznos con streusel de jengibre como una torta para el café si hubiera querido. Esta receta es tan buena que la convertí rápidamente en un budín para disfrutar con mi taza de té, pero es el complemento perfecto para el café, si eso es lo que les gusta! ¿Un capuchino caliente, tal vez?













The days are getting cooler and though autumn is not yet showing, you can smell the change in the air. Whenever a season changes I get this urge of baking with whatever great fruit is left, such as I did with those gorgeous plums for my plum crumble cake. The peaches I got were awesome, probably not like those of Montreuil (a famous peach orchard in Paris), but I think that even Escoffier would have chosen them for his Melba dessert.

Los días están cada vez más frescos y aunque el otoño aún no aparece, se puede oler el cambio en el aire. Cada vez que cambia una estación tengo este impulso de hornear con cualquiera de las buenas frutas que quedan, tal como lo hice con esas magníficas ciruelas para mi torta de ciruela con crumble. Los duraznos que conseguí eran impresionantes, probablemente no como los de Montreuil (huerto de duraznos famoso de París), pero creo que incluso Escoffier los hubiera elegido para su copa Melba.




















And as autumn calls for other scents and smells, I joined this summer fruit to the flavour of spices such as ginger, that pairs so well, and perfumed the crunchy streusel with it. I added almond flakes, just because I cannot live without them, as you already know. But those are totally optional!

Y, como el otoño alude a otros aromas y olores, junté esta fruta de verano con el sabor de una especia como el jengibre, que le queda tan bien y perfumé con ella el streusel crujiente. Agregué almendras fileteadas, pero como ustedes ya saben, sólo porque no puedo vivir sin ellas. ¡Pero son totalmente opcionales!

We shared a lot of chocolate recipes this week. I have saved a few myself and expect to try them soon. I don´t know about yourselves, but it is never enough for me when it comes to chocolate. And I find there is always something new to learn about it. I´ve been reading a lot of what experts have to say about it. 

Compartimos un montón de recetas de chocolate esta semana. Guardé algunas y espero probarlas pronto. Yo no sé si para ustedes, pero para mí nunca es suficiente cuando se trata de chocolate. Y me parece que siempre hay algo nuevo para aprender de él. He estado leyendo mucho sobre lo que los expertos en el tema tienen que decir al respecto.

I normally add chocolate to my preparations, the very dark kind, and seldom use only cocoa powder. Probably it is because I think it will not taste enough of chocolate! Though I have tried it in the great recipe I used for my chocolate dessert cake with hazelnut brittle and it was really awesome. I think the secret lies in using always good quality cocoa powder. But what does this exactly mean?


Normalmente agrego chocolate a mis preparaciones, el verdaderamente oscuro, y rara vez uso sólo cacao en polvo. Probablemente porque creo que no va a saber bastante a chocolate! Aunque lo probé en la gran receta que utilicé para mi torta de chocolate con crocante de avellanas y fue realmente espectacular. Creo que el secreto está en usar siempre cacao en polvo de buena calidad. Pero ¿qué significa esto exactamente?


Apparently the difference between good quality cocoa powder and any other is the percentage of fat per serving. According to experts you should find 1 gram of fat every 5 to 6 grams serving. The regular cocoa has only half the fat, which would be around 24% for good quality stuff. This is the key to enhanced flavour.  I´ll be checking labels as from now!

Al parecer, la diferencia entre el polvo de cacao de buena calidad y cualquier otro es el porcentaje de grasa por porción. Según los expertos debería tener 1 gramo de grasa cada 5 a 6 gramos de porción. El cacao común tiene sólo la mitad de esa grasa, que estaría alrededor de 24% para la materia de buena calidad. Esta es la clave para un mejor sabor. Voy a estar chequeando etiquetas a partir de ahora!

Hi! It´s been a while since my last post. I took a short break from writing but not from cooking! In spite of the heat and the copious rains (the weather here has gone crazy, it seems absolutely subtropical!) I have been trying several recipes. The one I want to share with you is from an amazing Australian food site, which I have adapted slightly after trying it. The original version, which was the first I made, had cherries and though they are in season now, I wanted to combine the loaf with blueberries for a change, specially because I know there are blueberries in most markets all the year round. I also adapted the amount of wheat flour adding some almond meal. 

¡Hola! Pasó algún tiempo desde mi último post. Me tomé un recreo corto de la escritura pero no de la cocina! A pesar del calor y las copiosas lluvias (¡el clima se volvió loco y parece absolutamente subtropical!) estuve probando varias recetas. La que quiero compartir con ustedes es de un maravilloso sitio de recetas australiano, que adapté un poco después de probarla. La versión original, que fue la que hice primero, era con cerezas, y aunque están en época ahora, quise combinarla  con arándanos para un cambio y especialmente porque ahora se encuentran en la mayoría de los mercados todo el año. También adapté la cantidad de harina de trigo añadiendo algo de harina de almendras.
















Coconut speaks of freshness and summer, don´t you think so? The great thing about it is that we can use desiccated coconut and coconut milk throughout the whole year and bring the reminiscence of sunshine and warmer days even in the coldest weather. I must admit I liked this recipe so much I did it a third time, dividing the batter and mixing some cocoa powder to one half and coconut to the other. The marble version was a total hit among my children and their friends! It is such an easy recipe I think I will do these adapted versions again sometime in the following seasons.

El coco habla de frescura y de verano, ¿no les parece? Lo bueno que tiene es que podemos usar coco desecado y leche de coco a lo largo de todo el año y traer el recuerdo del sol y los días cálidos, incluso en el clima más frío. Debo admitir que me gustó tanto esta receta que la hice una tercera vez, dividiendo la masa y mezclando un poco de cacao en polvo en una mitad y coco en la otra. La versión marmolada fue un éxito total entre mis hijos y sus amigos! Es una receta tan fácil que creo que voy a hacer estas versiones adaptadas de nuevo, en algún momento de las próximas estaciones.





















One last thing. If you want to try the recipe but do not have coconut milk and you don´t mind if it is not dairy free, I recommend using whole dairy milk and  some pouring cream. Hope you enjoy!

Una última cosa. Si quieren probar la receta pero no tienen leche de coco y no les importa que tenga lactosa, les recomiendo usar leche entera común y un poco de crema simple. Espero que lo disfruten!
