lemon polenta pudding











Back again. Back from my December silence, from my summer vacation, from my blog abstinence. I had a very busy end of the year concerning my job and a delightful beginning spent on the Uruguayan beach.

Estoy de vuelta. De vuelta de mi silencio de diciembre, de mis vacaciones de verano, de mi abstinencia del blog. Tuve un fin de año muy ocupado con respecto a mi trabajo y un comienzo delicioso transcurrido en la playa uruguaya.

In spite of not writing about my baking, I did quite a lot of new recipes I will be sharing soon. I wanted to start with this amazing lemon polenta pudding I adapted to fit these individual ramekins I bought during my stay at the beach. I brought with me several items for the kitchen, but these were the ones I wanted to use first!

A pesar de no escribir sobre mis horneados, hice un  montón de nuevas recetas que compartiré pronto. Quería comenzar con este increíble budín de polenta al limón que adapté para poder usar estos moldes individuales que compré durante mi estancia en la playa. Traje conmigo varios artículos para la cocina, pero éstos eran los que quería usar primero!

The main characteristic of the pudding is a soft, fluffy and spongy, cake-like texture contrasting the top, which is a golden crunchy crust. When you finish digging your spoon into it, you find a surprising lemon custard at the bottom, tangy, refreshing, tempting... A feast of textures in one mouthful with the most enticing citrus flavour.

La característica principal de este budín es su textura suave, mullida y esponjosa que contrasta con la parte superior, una corteza crujiente dorada. Cuando hayan terminado de hundir su cuchara en ella encontrarán una crema de limón sorprendente en la parte inferior, ácida y refrescante, tentadora ... Una fiesta de texturas en un solo bocado, con el sabor cítrico más apetitoso. 

What I love about it is that you can either have it warm or cold, which makes it suitable for any season, it can be kept in the fridge for at least two to three days... if puddings ever last that long... I dusted the top with icing sugar, but a dollop of whipped cream would add richness to it and smoothen the tanginess of the lemon.

Lo que me gusta de este postre es que se puede comer tibio o frío, lo que lo hace adecuado para cualquier época del año, se puede mantener en la heladera durante al menos dos o tres días (si es que los budines duran tanto tiempo...) Espolvoreé la parte superior con azúcar impalpable, pero una cucharada de crema batida le añadiría riqueza y suavizaría el sabor intenso del limón.

New year...new template! Do you like it? I am very happy with this purchase and I hope to be able to convey this happiness in all the posts of the year. You will be able to follow the blog on facebook and other social networks from here, since the previous page did not have the links. Am I happy? Just super happy!
To start enjoying my new format I want to share these "sticky buns", ideal for a good breakfast. The original recipe is from fiveandspice, and my intention was to follow it as it is, but I had to adapt it because I basically did not have two key ingredients: cardamom and  yeast.

Para empezar a disfrutar de mi nuevo formato quiero compartir estos "sticky buns", ideales para un buen desayuno. La receta original es de fiveandspice, y era mi intención hacerla tal cual, pero tuve que adaptarla porque básicamente me faltaban dos ingredientes fundamentales: cardamomo y levadura.




On January 1st every shop or market around the area where I live was closed, but I was determined to bake these buns for my family, so I had to use a bit of my imagination. I would not get the distinctive flavour of cardamom, but I could use a safe spice such as cinnamon. Also, I needed to leaven the dough, so I thought of the method I had learned from Mario Batali's recipe for panettone I recently posted on December. I made use of some cream of tartar and baking powder. Thankfully I was not short of lemons, so at least I could rescue some of the original flavours. And last but not least, instead of baking them in one round or square baking tin I used a muffin tray, as this brilliant blogger did, because the dough would not be the "pull apart" kind, I was sure it would turn out more like cake.

El 1 de enero todos los locales y mercados del área donde vivo estaban cerrados, pero yo estaba decidida a hacer estos buns para mi familia, así que tuve que usar un poco de mi imaginación. No iba a conseguir el sabor característico del cardamomo, pero podía usar una especia segura como la canela.También necesitaba que la masa leude, entonces pensé en el método de Mario Batali para la receta de panettone, que postee recientemente en diciembre. Usé un poco de cremor tártaro y polvo de hornear. Por suerte no me había quedado sin limones, así que por lo menos pude rescatar algo del sabor original. Y por último, pero no menos importante, en vez de usar un molde redondo o cuadrado, usé una bandeja para muffins, como esta brillante blogera, porque la masa no sería del tipo "pull apart", seguramente sería más parecida a una torta.

Did you realize how close we are to Christmas? Which are the flavours that remind you it is near? Dried fruits and nuts remind me of this time and take me directly to my childhood. This time of the year, so close to Christmas, brings indelible memories of that time. One of the things I most remember are dried figs. My grandfather Misak, who spent part of his own childhood in Smirna (Izmir), used to prepare for my brother, my cousin and me, dried figs, halved and stuffed with walnuts. It was a feast within the feast! At least for me, because I really don't know wether the other two children devoured them as I did, or not. I loved those Turkish dried figs and to me, they just simply meant Christmas and my grandfather...and all his amazing stories in Anatolian land.

¿Se dieron cuenta de lo poco que falta para Navidad? ¿Qué sabores les hace acordar que está cerca? A mí, las frutas secas y las nueces me traen memorias de esta época y me llevan directamente a la niñez. Esta parte del año, tan cerca de Navidad, me trae recuerdos imborrables de mi infancia. Una de las cosas que más recuerdo son los higos secos. Mi abuelo Misak, que pasó parte de su propia infancia en Esmirna ( Izmir), nos preparaba, a mi hermano, a mi prima y a mí, higos secos cortados a la mitad y rellenos con nueces. ¡Era toda una fiesta dentro de la fiesta! Por lo menos para mí, porque realmente no sé si los otros dos niños se los devoraban como yo o no. Amaba esos higos turcos secos y para mí representaban simplemente eso: Navidad y mi abuelo... y todas sus increíbles historias en tierra de Anatolia.






The great advantage about dried figs, as well as other dried fruits, is that we can have them for Christmas and New Year Eve's Holidays. Figs are a late summer fruit and as such, those living in the Northern Hemisphere already delighted themselves with their sweet, juicy and seedy taste and those of us down South will have to wait till late February for their matchless scent and flavour. Around the end of summer I love to collect some from the fig tree in my parents' house, that yields loads of Spanish figs (before the birds pick their fleshy inside!), to make a favourite Greek fig paste recipe I love to serve with fresh bread and homemade ricotta cheese.

La gran ventaja de los higos secos, y de las otras frutas secas, es que podemos usarlas en las fiestas de Navidad y Año Nuevo. El higo es una fruta tardía del verano y como tal, los que viven en el hemisferio norte ya se deleitaron con su gusto dulce, jugoso y semillado y aquellos de nosotros en el sur, tendremos que esperar hasta fin de Febrero por su incomparable aroma y sabor. Alrededor del fin del verano me encanta recolectar algunos higos del árbol de la casa de mis padres, que da cantidad de higos españoles (¡antes de que los pájaros picoteen su pulpa carnosa!), para hacer una receta griega favorita de pasta de higos, que me encanta servir para acompañar con pan fresco y ricota casera.

I had these gorgeous dried Turkish figs and I inspired myself in THIS recipe from Ottolenghi´s blog. Just read it. It is absolutely amazing. The cake reminded me of my apple almond cake because it has ground almonds and greek yoghurt, yet the main difference is that he uses butter creamed with  sugar, which makes it richer, while I use vegetable oil (as I usually do in my cakes) to get a leaner cake. And of course, those fresh figs from summer, so exuberant and luscious.
I had to do something with mine to make them look a bit like them. So I coated them in a sweet and sticky caramel sauce, that once again reminded me of my childhood. As a child, I remember my parents buying for my brother and me caramel dried figs on a stick, covered with sweet popcorn stuck all around them, from an elderly man who had a cart full of  this delicious booty and sold them on the street. 

Tenía estos maravillosos higos turcos secos y me inspiré en ESTA receta del blog de Ottolenghi. Sólo léanlo. Es absolutamente increíble. La torta me recordó a mi torta de manzanas y almendras porque tiene almendras molidas y yoghurt griego, pero la gran diferencia es que él usa la manteca batida con el azúcar, lo que la enriquece más, mientras que yo utilizo aceite vegetal (como usualmente hago en mis tortas) para obtener una torta más ligera. Y por supuesto, esos higos frescos del verano, tan exuberantes y deliciosos. 
Yo tenía que hacer algo con los míos para que se les parecieran un poco. Los bañé con una capa de salsa de caramelo, dulce y pegajosa, y una vez más recordé mi niñez. De chica, recuerdo a mis padres comprando para mi hermano y para mí, higos secos acaramelados en un palito, recubiertos con pochoclo dulce, de un señor mayor que, desde un carrito lleno de este delicioso botín, los vendía en la calle.
