This tart is originally from Derbyshire and as the story tells, it started more as a pudding than a tart. There are many versions of how it was made in the beginning, but nowadays what prevails is the shortcrust-jam-frangipane recipe. 

Esta tarta es originaria de Derbyshire y como cuenta la historia comenzó más como un postre que como una tarta. Hay muchas versiones de como era en el principio, pero hoy en día lo que prevalece es la receta de masa quebrada, mermelada y frangipane.






Apparently puff pastry was used in the beginning, but nowadays it is common to use shortcrust pastry, especially because it is apt to contain a filling such as frangipane, which needs a harder crust than puff pastry.

Aparentemente en el comienzo se utilizó hojaldre para la masa pero hoy en día la masa quebrada es lo que comunmente se utiliza, especialmente porque es apta para contener el relleno de frangipane que necesita un recipiente más rígido que el hojaldre.


The jam part deserves a distinct chapter. Originally candied fruits or compote were mixed with a variety of citrus zest. Nowadays raspberry jam is considered as the traditional jam to be used in the tart.

El tema de la mermelada merece un capítulo aparte. En el origen se usaba una compota de dulces confitados mezclados con ralladura de cítricos y hoy en día se considera tradicional el uso de la mermelada de frambuesas.





For this recipe I used a shortcrust pastry that usually comes out well, to be sure of the outcome, and I used the fig jam I recently made, because I thought it would combine perfectly with the almonds.

Para esta receta usé una base de masa quebrada que siempre me sale bien, para estar segura y aproveché la mermelada de higos que hice recientemente, porque me pareció que hace una perfecta combinación con las almendras.












The tart is traditionally garnished with flaked almonds and some like to add a drizzle of icing on top. 

La tarta está tradicionalmente adornada con almendras fileteadas y hay algunos que la decoran con glasé real en la parte superior.

A while ago I posted my turkish dried figs almonds and yoghurt cake, where I mentioned the fig tree in my parents house. This year the tree is overloaded with figs so I decided I could use them, other than eating them as fruit or in my baking, to make jam for the colder seasons. 

Hace un tiempo publiqué mi torta de higos turcos secos almendras y yoghurt, donde mencioné la higuera en la casa de mis padres. Este año, el árbol está sobrecargado de higos, así que decidí que podía usarlos, más que comerlos como fruta o en mis tortas, para hacer mermelada para las estaciones más frías.



The recipe is very simple and if you enjoy making jam, this is the kind of product you will love to have in your pantry once the sunny days are over.

La receta es muy simple y si les gusta hacer mermelada, este es el tipo de producto que les encantará tener en su despensa una vez que los días soleados se hayan terminado.

Though it is not traditional to bake Hot Cross Buns for Easter in my country, I thought it would be a good idea to give them a try for a change. A Sunday Lent morning with these buns, some butter and jam on them and the complete meal would become an awesome treat!

A pesar de que no es tradicional  hornear Hot Cross Buns (Bollos de la Cruz) para Pascuas en mi país, pensé que sería una buena idea probarlos para un cambio. Una mañana de domingo de Cuaresma con estos bollos, manteca y mermelada sobre ellos y el desayuno completo se convertiría en un impresionante festejo!
















I did the traditional buns, just a little bigger, as loaves of bread to cut and share. These buns according to tradition carry the cross remembering the crucifixion of Jesus but, as I read, they also have other meanings, they deepen friendship when shared and bring good health when eaten.

Hice los bollos tradicionales, solo que un poco más grandes, como hogazas de pan para cortar y compartir. Estos bollos según la tradición llevan la cruz recordando la crucifixión de Jesús, pero también se le otorgan otros significados como he leído, compartirlos profundizan la amistad y comerlos hacen bien a la salud.

Going through some recipes for these hot cross buns, I came across one of them, that had turned the buns into a loaf and I instantly liked the idea. I thought it would not harm them much if I changed a few things, such as using lemon zest instead of orange and adding some new green apples to the filling. The smell in my kitchen was absolutely fabulous: spices, raisins, baked apples and bread. Could not ask for more.

Hojeando algunas recetas para estos hot cross buns, me encontré con una, que había convertido a los bollos en un pan y de inmediato me gustó la idea. Pensé que no iba a hacerles mucho daño si le cambiaba algunas cosas, como usar ralladura de limón en vez de naranja y añadir algunas manzanas verdes nuevas al relleno. El olor en mi cocina era absolutamente fabuloso: a especias, pasas, manzanas al horno y pan. No podía pedir más.

I could have baked this peach ginger streusel loaf as a coffee cake if I had chosen. This recipe is so good I just turned it quickly into a loaf to enjoy with my cup of tea, but it is the perfect match for coffee, if that is what you love! A hot cappuccino maybe?

Podría haber horneado este budín de duraznos con streusel de jengibre como una torta para el café si hubiera querido. Esta receta es tan buena que la convertí rápidamente en un budín para disfrutar con mi taza de té, pero es el complemento perfecto para el café, si eso es lo que les gusta! ¿Un capuchino caliente, tal vez?













The days are getting cooler and though autumn is not yet showing, you can smell the change in the air. Whenever a season changes I get this urge of baking with whatever great fruit is left, such as I did with those gorgeous plums for my plum crumble cake. The peaches I got were awesome, probably not like those of Montreuil (a famous peach orchard in Paris), but I think that even Escoffier would have chosen them for his Melba dessert.

Los días están cada vez más frescos y aunque el otoño aún no aparece, se puede oler el cambio en el aire. Cada vez que cambia una estación tengo este impulso de hornear con cualquiera de las buenas frutas que quedan, tal como lo hice con esas magníficas ciruelas para mi torta de ciruela con crumble. Los duraznos que conseguí eran impresionantes, probablemente no como los de Montreuil (huerto de duraznos famoso de París), pero creo que incluso Escoffier los hubiera elegido para su copa Melba.




















And as autumn calls for other scents and smells, I joined this summer fruit to the flavour of spices such as ginger, that pairs so well, and perfumed the crunchy streusel with it. I added almond flakes, just because I cannot live without them, as you already know. But those are totally optional!

Y, como el otoño alude a otros aromas y olores, junté esta fruta de verano con el sabor de una especia como el jengibre, que le queda tan bien y perfumé con ella el streusel crujiente. Agregué almendras fileteadas, pero como ustedes ya saben, sólo porque no puedo vivir sin ellas. ¡Pero son totalmente opcionales!

This past winter I baked a variety of cakes in square and rectangular baking tins, to cut into small bites and always have at hand with a cup of coffee or tea. I had posted these recipes directly on my FACEBOOK page and thought it would be a good idea to save them in a post on the blog. I was tempted by the apples, pears and prunes, and spices such as ginger and cinnamon, that combined with a touch of honey, scented all the house as I baked them. Let's enjoy them!

Este invierno pasado hice una variedad de tortas en moldes cuadrados o rectangulares para cortar en porciones y tener siempre a mano con una taza de café o un té. Había posteado estas recetas directamente en mi página de FACEBOOK y pensé que sería una buena idea ponerlas en el blog para no perderlas. Me tentaron las manzanas, peras y ciruelas desecadas y especias como el jengibre y la canela, que combinadas con un toque de miel, perfumaron toda la casa al cocinarlas. ¡Vamos a disfrutarlas!
