mushroom and shallot rustic pie






Thanks to all the preparations for Thanksgiving Day and Hanukkah, which practically coincide this year, these last weeks I have been reading dozens of pie recipes. It is impossible to choose only one! But each of us has its own favourite ingredients, and though the one I made for today is not festive, it reflects a blend of flavours very near to what I consider is a perfect combination. What do you think?

Estas últimas semanas, gracias a todos los preparativos para el Día de Acción de Gracias y Hannukah, que este año prácticamente coinciden, estuve leyendo decenas de recetas de tartas. ¡Es imposible elegir una sola! Pero cada uno tiene sus ingredientes favoritos y si bien esta que hice hoy no es festiva, refleja una mezcla de sabores muy cercanos, a lo que para mí, es una perfecta combinación. ¿Qué opinan ustedes?








I chose an assortment of onions to match with white mushrooms, portobellos and dry porcinis soaked in white wine. These were sauteed and flavoured with rosemary. You can choose not to use rosemary and just season the vegetables with salt and fresh ground black pepper, or use another herb of your choice instead.

Elegí una variedad de cebollas para combinar con champignones, portobellos y porcinis secos que remojé en vino blanco. Los salteé y aromaticé con romero. Pueden elegir no usar romero y solo salpimentar los vegetales con sal y pimienta negra en granos, o usar alguna otra hierba a elección.































I chose a ricotta shortcrust for the pie crust I had already used for the spicy butternut squash curry tartines I had done during the winter, when I started blogging. Ricotta cheese provides an incredible smoothness to the crust and makes it really tender.

Elegí un shortcrust de ricota para la masa de la tarta, que ya había usado para las especiadas tartines de calabaza y curry que había hecho en el invierno, cuando empecé con el blog. La ricota le da una suavidad increíble a la masa y la hace muy tierna.

This long week-end was an ideal time to get some rest at home. My son went to the sea-side with his father, planning to do some "boys stuff " and I stayed with my daughter to enjoy the quietness of the house.
 When we are by ourselves we tend to relax and are less formal with our meals. Even so, I asked her as usual what would she like for lunch. Surprisingly, this time she asked for a chicken curry. I had not done it for a while and it is always great  with pilaf rice as a side. But I had no chicken at home, and not because I had forgotten to buy. Lately,  I tend to cook less meat for them. I cook meat or chicken three times a week. I  give them fish a couple of times a week, too. And I try to buy fresh products from small farms. But I seldom eat any. I prefer vegetable sides or pies and  good salads.
This made me think a little about my own eating habits. I see there are quite a lot of people that claim to be vegetarian and are against animal slaughter, and I consider this a very worthy attitude. I believe many do it out of conviction but some others just follow the trend.
In general, what we eat is a consequence of our surrounding culture, which explains our eating habits, but lately, it is also a consequence of  the food industry and marketing. If we take a look at the way animals are bred, at the agro-chemicals being used, and the refined products full of man-made substances with no nutritious value we shall realize that  we are eating a  bit worse every day.
Maybe I have internalized all this and unconsciously...I am turning into a veggie!! Did it ever happen to you?
Anyway, I still had to prepare "something" with curry to satisfy my daughter's request, when I came across this delicious "tartines" recipe, that was a real source of inspiration.


Este fin de semana largo fue un buen momento para descansar y estar en casa. Mi hijo se fue con su padre a la costa los tres días en plan de hacer "cosas de varones", y yo me quedé con mi hija a disfrutar de la tranquilidad doméstica. Cuando estamos las dos solas nos relajamos un poco en cuanto a la comida y somos menos formales. Igualmente siempre le hago la pregunta de rigor... "¿qué te gustaría almorzar?"  Sorpresivamente, esta vez, me pidió un curry de pollo. Hace tiempo que no lo hacía y con arroz pilaf queda espectacular. Pero no tenía pollo y no porque me hubiera olvidado de comprar. Últimamente les doy carne en forma moderada: sólo tres veces por semana algún plato con carne o pollo. También les hago un par de veces pescado. Y trato de comprar todos los productos frescos, de granja. Pero yo casi nunca los como. Prefiero los acompañamientos con verduras o las tartas y buenas ensaladas. 
Esto me hizo pensar un poco en mis propios hábitos. Veo que hay mucha gente que declama ser vegetariana y alza banderas en pro de no matar animales y considero esto una actitud muy loable. Creo que muchos lo hacen por convicción, pero algunos otros tantos por moda. 
En general lo que comemos es una consecuencia de nuestra cultura; lo que explica muchas tendencias alimentarias y últimamente, una consecuencia de la industria alimenticia y la propaganda. Y esto hace que cada vez comamos peor, si observamos la forma en que se crían los animales para consumo, los agro-químicos, los alimentos refinados y elaborados llenos de sustancias sintéticas y sin valor nutritivo. Tal vez haya interiorizado todo esto e inconscientemente... ¡me esté volviendo vegetariana! ¿Les pasó esto a alguno de ustedes? 
De cualquier manera, todavía tenía que satisfacer el pedido de mi hija de comer "algo" con curry, cuando encontré en esta receta  deliciosa de "tartines" una verdadera fuente de inspiración.






Curry is a mix of spices originally used in India to highten sauces in different types of stews or casseroles. It was introduced in Europe around the eighteenth century by Britain and the Netherlands, from the colonies both countries had in the far East.
These delicate "tartines" have a perfect combination of taste and texture: the sweetness and softness of the butternut squash against the character of the onions and garlic hightened by the distinct intensity of  the curry. All of this poured over a variation of the traditional shortcrust pie.

El curry es una mezcla de especias que se utiliza en la India para realzar salsas de diferentes platos de guisos o estofados, traída a Europa alrededor del siglo XVIII por el Reino Unido y Holanda, desde sus colonias en Oriente.
Estas delicadas "tartines" tienen una combinación de sabores y texturas perfectas: la dulzura y suavidad de la calabaza  contrasta con el carácter de las cebollas y ajos acentuado por la intensidad inconfundible del curry. Todo esto volcado sobre una variación de masa "quebrada" tradicional.

Hace un tiempo que vengo pensando en esto. ¡Cocinar me hace tan feliz! Cocinar fue siempre algo central en mi vida. Desde muy chica de la mano de mi talentosa madre, de quien aprendí mirando y preguntando y  de mis abuelas, de quienes recibí el legado de la cocina armenia, enriquecido por el hecho de que una vino de Grecia y la otra de Francia, países donde se refugiaron y crecieron después de haber tenido que huir de Armenia por el genocidio de 1915.
Cocino para mi familia y mis amigos. La alegría y satisfacción que cada plato nos trae es mi fuente de placer y motivación para investigar e innovar, creando mi propio estilo, inspirado por la riqueza y diversidad de la herencia que me ha sido legada.

I have been thinking this for a while. Cooking makes me so happy! Cooking has always been a central aspect of my life. Since I was a child, learning from my talented mother  by watching her cook and asking, and both my grandmothers, who gave me the heritage of Armenian cuisine, enriched by the influence of Greek and French cuisine, both sources from countries where each of them took refuge and grew up after fleeing from the 1915 genocide that took place in Armenia.
I cook for my family and friends. The joy and satisfaction in every dish is the source of pleasure and motivation to go on investigating and innovating, creating a style of my own, inspired by the rich and diverse heritage I have been offered.



Carrot Cake (para mis amigas golosas: ¡FELIZ DÍA!)
 UNA TORTA QUE ESTA LEJOS DE MI ETNIA PERO NO DE MI PALADAR


¡¡Tan lejos de mi legado familiar!!.... pero muy cerca de mi paladar y especialmente de mis amigas, con las que quiero compartirla.
Esta torta es muy tradicional y existen varias recetas parecidas que aseguran el éxito. Su característica fundamental es la humedad y el sabor de las especias combinado con la dulzura realzada de las zanahorias.
Tenía mucha curiosidad por saber si podía cambiar ciertos ingredientes y pasos sin alterar el resultado, o más aún, potenciarlo. Quería una torta más liviana y aún más saludable. Usé un poco de harina leudante en vez de harina común más polvo de hornear, cambié el azúcar por miel, separé los huevos y batí las claras a nieve, añadí nuez moscada molida y nueces comunes en vez de pecans porque son las que usualmente comen mis hijos. Tarda un poco más en cocinar por el molde que elegí. Si lo ponen en uno más chato el tiempo de horneado es de 25 a 30 minutos. Espero que la disfruten con una buena taza de té y  la compañía de los que aman.



Far away from my family legacy...yet so close to my taste and specially of the friends I want to share it with.
There are many similar recipes for  this traditional cake that may assure a succesful result. Its main characteristic is its humid texture and the taste of the spices combined with the enhanced sweetness of the carrots.
I wandered if I could change a few ingredients and steps without altering the result, moreover, make it better. I wanted a lighter and even healthier cake. I used some cake flour instead of plain flour combined with baking powder, I changed sugar for honey, separated the eggs and beat the whites until stiff, added ground nutmeg and walnuts instead of pecans because these are the ones my children usually eat. It took longer to cook because of the dish I used. If you use a flatter one you will bake it in  25 to 30 minutes. I wish you enjoy it over a cup of tea and the company of those you love.

RECETA/RECIPE
Porciones 8 a 10/ Serves 8 to 10

Ingredientes
1 taza harina común (0000)                             
1/3 taza harina leudante                                 
1/4 taza de aceite vegetal de buena calidad            
1 taza de miel                                                   
2 huevos                                                            
2 tazas de zanahorias ralladas                              
1/4 taza de leche en polvo                                 
3/4 taza nueces picadas                                        
1/2 cucharadita de té de extracto de vainilla       
1/4 cucharadita de té de nuez moscada molida       
1 cucharadita de té de canela molida                
Spray vegetal                                                    
Pizca de sal
   
                                                
  Ingredients
  1 cup all-purpose flour 
1/3 cup cake flour
1/4 cup acceptable vegetable oil
 1 cup honey
 2 eggs
 2 cups grated carrots
1/4 cup milk powder
3/4 cup chopped walnuts
1/2 tsp vainilla extract
 1/4 tsp ground nutmeg
1 tsp ground cinnamon
 Vegetable spray
   Pinch of salt

Instrucciones  

1. Precalentar el horno a 180 C / 350 F
2. Rociar con spray vegetal un molde de 22 cm  diam. y 8 cm alto con aro
3. Mezclar el aceite vegetal con la miel con batidora hasta unificar
4. Separar las yemas e incorporar de a una mezclando con batidora
5. Agregar extracto de vainilla y mezclar
6. Incorporar las zanahorias y mezclar con espátula
7. En otro recipiente batir las claras a nieve con una pizca de sal y reservar
8. Unir los ingredientes secos (harinas, leche en polvo y especias) e incorporarlos hasta unir perfectamente con la primer preparación húmeda.
9. Incorporar las nueces picadas previamente espolvoreadas con un poco de harina y mezclar
10. Por último incorporar las claras batidas a nieve con movimiento envolvente y verter la preparación en el molde preparado
11. Llevar a horno por 35 a 40 minutos o hasta que con un palillo verifique que salga limpio
12. Retirar del horno y dejar enfriar  sobre rejilla y luego desmoldar
13. Terminar con glasé según receta a continuación

Glasé:
60 g manteca blanda
120 g queso tipo philadelphia
50 g azúcar impalpable
1/2 cucharadita de extracto de vainilla

En un recipiente mezclar con batidora la manteca y el queso, incorporar el azúcar sin dejar de batir y por último el extracto para perfumar. Debe quedar una crema homogénea.


Instructions 

1. Preheat oven to 180C/ 350F
2. Spray a baking dish (22cm x 8cm ) with oil spray
3. Combine vegetable oil and honey with electric mixer until smooth 
4. Separate yolks and beat in  one by one
5. Add vainilla extract and mix
6. Add carrots and stir with a spatula
7. In a separate bowl beat whites until stiff
8. Combine in another bowl the dry ingredients and add to the liquid mixture
9. Add the chopped walnuts slightly powdered with flour
10. Fold the egg whites to the mixture and pour into the prepared dish
11. Bake 35 to 40 minutes or until poked, the knife comes out clean
12. Remove from the oven and allow to cool in the pan on a rack. Unmold
13. Finish with frosting

Frosting:
60 g softened unsalted butter
120 gr philadelphia cream cheese
50 g icing sugar
1/2 tsp vainilla extract

Mix in a bowl the softened butter with the cheese, add the icing sugar, still beating and the vainilla extract until you obtain a  smooth cream
