oat cinnamon sticky toffee buns












Making buns is always a challenge. As I have said in previous posts I am fond of yeasted doughs and find they are the best to bake. I prefer them over cakes and loaves and any other sweet treats. These buns are a little different though. I used a DIY oat flour with my regular all purpose flour. How did I manage? As simple as grabbing the food processor and pulsing, transforming regular rolled oats into fine oat flour.

Hacer bollos es siempre un desafío. Como ya he dicho en posts anteriores, las masas con levadura son las que más me gustan y para mí, son los mejores para hornear. Las prefiero más que a las tortas o budines u otros dulces. Estos bollos son un poco diferentes. Utilicé una harina de avena hecha en casa, mezclada con la harina común que siempre uso. ¿Cómo me las arreglé? Tan simple como agarrar la procesadora de alimentos y pulsar, transformando los copos de avena comunes en harina de avena fina.














The sticky toffee sauce is altogether a different subject. I have done caramel sauce before but this recipe is superb. I learned it from watching one of Mark Bittman's videos, cooking with pastry chef Claudia Fleming, though I adapted the measurements to my recipe needs.

La salsa de caramelo es un tema totalmente aparte. He hecho salsa de caramelo antes, pero esta receta es excelente. La aprendí de ver uno de los videos de Mark Bittman, cocinando con la chef de repostería Claudia Fleming, aunque adapté las medidas a la necesidad de mi receta.












Though adding the toffee sauce is not an everyday treat, the buns are a good choice for a special breakfast or coffee break. Special enough to start my children's deserved school winter holidays in a cozy way.

Aunque la adición de salsa de caramelo no es algo que se utiliza a diario, los bollos son una buena opción para un desayuno especial o junto a un café en el descanso de trabajo. Lo suficientemente especial para comenzar las merecidas vacaciones de invierno de la escuela de mis chicos de una manera acogedora.

This caramel macadamia cheesecake summarizes the combination I was seeking for a special dessert. It is hard to choose a cake when it comes to our own birthday. Those of you who ever read this blog know that I´m kind of nuts for nuts. Almonds are my favourite but macadamias have a very close second place.

Este cheesecake de caramelo y macadamia resume la combinación que estaba buscando para un postre especial. Es difícil elegir una torta cuando se trata de nuestro propio cumpleaños. Aquellos de ustedes que alguna vez leyeron este blog saben que estoy un poco loca por las nueces. Las almendras son mis favoritas pero las macadamias tienen un segundo puesto muy cercano.


The macadamia is native to Australia, where it was already consumed by the Aboriginals before the arrival of Europeans. There are approximately eight varieties but only two can be consumed, the others being poisonous. They are great for lowering cholesterol but like all nuts should be eaten moderately as they are very caloric. But there is only one birthday per year, right? When I found these I marveled, so big and fresh ...and locally produced!

La macadamia es originaria de Australia, donde los aborígenes, antes de la llegada de los europeos ya la consumían. Hay aproximadamente ocho variedades pero se consumen sólo dos, por ser las demás venenosas. Son buenísimas para disminuir el colesterol aunque como todo fruto seco hay que comerlo con medida por ser muy calórico. Pero se tiene un cumpleaños una vez por año, cierto? Cuando encontré éstas, me maravillé, tan grandes y frescas... y producidas localmente!


The recipe is in itself a small finding. Quite a while ago I read an adaptation of a macadamia cheesecake from Ottolenghi:The Cookbook in the blog Nordljus and later I found a recipe on caramel cheesecake in an Argentine foodblog (Divino Macaron). Both of them inspired this creation.

La receta es en sí un pequeño hallazgo. Hace un tiempo había leído una adaptación de cheesecake de macadamia de Ottolenghi:The Cookbook en el blog Nordljus y después encontré una receta de cheesecake de caramelo en un foodblog argentino (Divino Macaron). Ambas inspiraron esta creación.


The cake in itself is not difficult to make but it is quite a work of dedication (if not love!) as it has several steps. Toasting the macadamia, preparing the caramel sauce, making the cheesecake and then assembling the dessert. I prepared the nuts and sauce one afternoon and made the cheesecake the following day.

La torta en sí no es difícil de hacer, pero es todo un trabajo de dedicación (si no de amor!), ya que tiene varios pasos. Tostar las macadamias, preparar la salsa de caramelo, hacer el cheesecake y luego armar el postre. Preparé la nueces y la salsa una tarde e hice la torta al día siguiente.

Summer here is as hot as it can get. Or so it seems. However, sometimes, despite the heat, and though we want to be away from the kitchen as much as possible (or rather go into it as briefly as we can!) we have to bake for some special occasion. And this was the case. My next door neighbour had a small family gathering and she needed some help. I volunteered cheerfully and asked her to choose something for dessert. Just as I thought, she said "whatever you do is fine, but be sure it has chocolate in it, it´s my brother's favorite flavor"

El verano aquí está tan caluroso como pueda llegar a ser. Al menos eso parece. Sin embargo, a veces, a pesar del calor, y aunque queremos estar lejos de la cocina tanto como nos sea posible (o más bien entrar en ella tan brevemente como nos sea posible!) tenemos que cocinar para una ocasión especial. Y este fue el caso. Mi vecina de al lado tenía una pequeña reunión familiar y necesitaba un poco de ayuda. Me ofrecí alegremente y le pedí que eligiera algo para el postre. Tal como pensaba, me dijo "cualquier cosa que hagas está bien, pero asegurate de que tenga chocolate, es el sabor favorito de mi hermano"


Chocolate was the word I was dreading. How would I manage to do anything without it melting before it even got to the table? Chocolate mousse or parfait (a sort of ice cream I make) were out of the question. Creamy fillings or anything that could melt easily or go bad, too.

Chocolate era la palabra que estaba temiendo. ¿Cómo podría llegar a hacer alguna cosa que no se derrita antes de que siquiera llegue a la mesa? Mousse de chocolate o parfait (una especie de helado que hago) estaban fuera de la cuestión. Rellenos cremosos o cualquier cosa que se pudiera derretir fácilmente o ponerse mal, también.


During the week I had saved in my small corner of my favorite site, a hazelnut brittle recipe.  I then realized that it would make a great praliné (processed brittle) for my dessert, I only needed to pair it with "something" that had chocolate and would not melt!
I turned to one of the cakes I loved most, when reading the recipe, from dear Suzanne, a trustworthy chef in the community (she has won contests, been a finalist and earned any amount of community picks!) and is at her blog apuginthekitchen sharing always every kind of good food.
I chose to top it with the same meringue I had done for my genoise with dulce de leche pavlova. If meringue is done properly it gets stiff and won´t come down, even if the weather is hot.

Durante la semana había guardado, en mi pequeño rincón de mi sitio favorito, una receta de crocante de avellanas. Me di cuenta de que sería un buen praliné (crocante procesado) para mi postre, sólo necesitaba combinarlo con "algo" que tuviera chocolate y no se derrita!
Elegí la torta que más me gustó, al leer la receta, de la querida Suzanne, una reconocida chef en la comunidad  (ella ha ganado concursos, ha sido finalista y ganó cualquier cantidad de community picks!) La pueden encontrar en su blog apuginthekitchen siempre compartiendo todo tipo de buenas recetas.
Usé como topping el mismo merengue que había hecho para mi genoise con pavlova de dulce de leche. Si el merengue se hace correctamente toma consistencia y no se baja, incluso si el clima es cálido.



The cake called for cocoa powder (which does not melt!) and oil instead of butter. It also has a hint of coffee which made it very appealing to me because I was doing a cake for adults. The recipe is for a two layered cake, so I did half of it, spread some nutella on top and a quick chocolate ganache. I finished it with a heap of Italian meringue in the center, drizzled some of the ganache that was left and sprinkled the golden and crunchy hazelnut processed brittle on top. 

La receta pedía cacao en polvo (que no se derrite!) y aceite en lugar de manteca. También cuenta con un toque de café que la hacía muy atractiva para mí, porque estaba haciendo una torta para adultos. La receta es para una torta de dos capas, así que hice la mitad, la unté con un poco de nutella en la parte superior y una ganache de chocolate rápida. La terminé amontonando en el centro el merengue italiano, la rocié con un poco de la ganache que quedaba y espolvoreé con el crocante dorado y crujiente de avellana procesada en la parte superior.





Maybe it is a coincidence, but today is my brother´s birthday, too. 

Quizás sea una coincidencia, pero hoy es el cumpleaños de mi hermano, también.

Did you realize how close we are to Christmas? Which are the flavours that remind you it is near? Dried fruits and nuts remind me of this time and take me directly to my childhood. This time of the year, so close to Christmas, brings indelible memories of that time. One of the things I most remember are dried figs. My grandfather Misak, who spent part of his own childhood in Smirna (Izmir), used to prepare for my brother, my cousin and me, dried figs, halved and stuffed with walnuts. It was a feast within the feast! At least for me, because I really don't know wether the other two children devoured them as I did, or not. I loved those Turkish dried figs and to me, they just simply meant Christmas and my grandfather...and all his amazing stories in Anatolian land.

¿Se dieron cuenta de lo poco que falta para Navidad? ¿Qué sabores les hace acordar que está cerca? A mí, las frutas secas y las nueces me traen memorias de esta época y me llevan directamente a la niñez. Esta parte del año, tan cerca de Navidad, me trae recuerdos imborrables de mi infancia. Una de las cosas que más recuerdo son los higos secos. Mi abuelo Misak, que pasó parte de su propia infancia en Esmirna ( Izmir), nos preparaba, a mi hermano, a mi prima y a mí, higos secos cortados a la mitad y rellenos con nueces. ¡Era toda una fiesta dentro de la fiesta! Por lo menos para mí, porque realmente no sé si los otros dos niños se los devoraban como yo o no. Amaba esos higos turcos secos y para mí representaban simplemente eso: Navidad y mi abuelo... y todas sus increíbles historias en tierra de Anatolia.






The great advantage about dried figs, as well as other dried fruits, is that we can have them for Christmas and New Year Eve's Holidays. Figs are a late summer fruit and as such, those living in the Northern Hemisphere already delighted themselves with their sweet, juicy and seedy taste and those of us down South will have to wait till late February for their matchless scent and flavour. Around the end of summer I love to collect some from the fig tree in my parents' house, that yields loads of Spanish figs (before the birds pick their fleshy inside!), to make a favourite Greek fig paste recipe I love to serve with fresh bread and homemade ricotta cheese.

La gran ventaja de los higos secos, y de las otras frutas secas, es que podemos usarlas en las fiestas de Navidad y Año Nuevo. El higo es una fruta tardía del verano y como tal, los que viven en el hemisferio norte ya se deleitaron con su gusto dulce, jugoso y semillado y aquellos de nosotros en el sur, tendremos que esperar hasta fin de Febrero por su incomparable aroma y sabor. Alrededor del fin del verano me encanta recolectar algunos higos del árbol de la casa de mis padres, que da cantidad de higos españoles (¡antes de que los pájaros picoteen su pulpa carnosa!), para hacer una receta griega favorita de pasta de higos, que me encanta servir para acompañar con pan fresco y ricota casera.

I had these gorgeous dried Turkish figs and I inspired myself in THIS recipe from Ottolenghi´s blog. Just read it. It is absolutely amazing. The cake reminded me of my apple almond cake because it has ground almonds and greek yoghurt, yet the main difference is that he uses butter creamed with  sugar, which makes it richer, while I use vegetable oil (as I usually do in my cakes) to get a leaner cake. And of course, those fresh figs from summer, so exuberant and luscious.
I had to do something with mine to make them look a bit like them. So I coated them in a sweet and sticky caramel sauce, that once again reminded me of my childhood. As a child, I remember my parents buying for my brother and me caramel dried figs on a stick, covered with sweet popcorn stuck all around them, from an elderly man who had a cart full of  this delicious booty and sold them on the street. 

Tenía estos maravillosos higos turcos secos y me inspiré en ESTA receta del blog de Ottolenghi. Sólo léanlo. Es absolutamente increíble. La torta me recordó a mi torta de manzanas y almendras porque tiene almendras molidas y yoghurt griego, pero la gran diferencia es que él usa la manteca batida con el azúcar, lo que la enriquece más, mientras que yo utilizo aceite vegetal (como usualmente hago en mis tortas) para obtener una torta más ligera. Y por supuesto, esos higos frescos del verano, tan exuberantes y deliciosos. 
Yo tenía que hacer algo con los míos para que se les parecieran un poco. Los bañé con una capa de salsa de caramelo, dulce y pegajosa, y una vez más recordé mi niñez. De chica, recuerdo a mis padres comprando para mi hermano y para mí, higos secos acaramelados en un palito, recubiertos con pochoclo dulce, de un señor mayor que, desde un carrito lleno de este delicioso botín, los vendía en la calle.
