This recipe may have a long name but it is all about simple, wholesome ingredients that together make a delicious cake for breakfast or tea time. I like to imagine it´s almost like turning my breakfast bowl into a cake!!

Esta receta puede tener un nombre largo, pero tiene que ver con ingredientes simples y saludables que juntos hacen una deliciosa torta para el desayuno o la hora del té. Me gusta imaginar que es casi como convertir mi tazón de desayuno en una torta!!

apple almond oat cake

Almost a month and a half of spring already gone by, and I am still feeling as if it just started. The leaves on the trees are the only reminder of the season, which has been upto now wearier than winter, almost like a second fall. And maybe because of the moody weather, I rather crave to bake the kind of cake I would not this time of the year. Though this weekend looks as if our luck is about to change!

Ya pasó casi un mes y medio de primavera  y sigo sintiendo como si acabara de empezar. Las hojas de los árboles son el único recordatorio de la estación, que ha sido hasta ahora más gris que el invierno, casi como una segundo otoño. Y tal vez por este clima raro, prefiero hornear el tipo de torta que no haría en esta época del año. Aunque este fin de semana parece que la suerte está a punto de cambiar!

This recipe is a variation of my favorite apple almond cake and is the perfect match for a cup of tea or coffee shared in good company. It almost has no wheat flour which I replaced with oat flour, for those seeking a healthier diet.

Esta receta es una variación de mi preferida torta de almendras y manzanas y es el acompañamiento perfecto para una taza de té o café compartida en buena compañía. Prácticamente no tiene harina de trigo que sustituí con harina de avena, para aquellos que están buscando una alimentación más saludable.

I used a DIY oat flour with my regular all purpose flour. As I mentioned in my recipe for oat cinnamon sticky toffee buns it is as simple as grabbing the food processor and pulsing, transforming regular rolled oats into fine oat flour.

Usé una harina de avena hecha en casa. Como mencioné en mi receta para los bollos de avena y canela con salsa de caramelo, es tan simple como agarrar la procesadora de alimentos y pulsar, transformando los copos de avena comunes en harina de avena fina.

breakfast nut muffins

These small golden, nut packed, almost flourless cups can make a delicious breakfast. They are like a white canvas, you can pair them with whatever you like most: cream cheese, whipped cream, assorted fruit or just a sprinkle of icing sugar.

Estas pequeñas magdalenas doradas, llenas de nueces, casi sin harina, pueden convertirse en un delicioso desayuno. Son como un lienzo en blanco, pueden acompañarlas con lo que más les guste: queso crema, crema batida, frutas surtidas o simplemente espolvoreadas con azúcar impalpable.

They are not too sweet and very moist, highly satisfying in spite of their size. I recommend them if your day will need all of your energy and concentration for work or sports. Hope you try them soon!

No son demasiado dulces y son muy húmedas, altamente satisfactorias a pesar de su tamaño. Las recomiendo si su día va a necesitar de toda la energía y concentración para el trabajo o el deporte. Espero que puedan probarlas pronto!

Apple pie is a comforting sweet treat anytime during the year, but it tastes even better in winter. I like to make this pie for tea time and it is something I particularly enjoy.

La tarta de manzana es un postre reconfortante en cualquier momento del año, pero su sabor es aún mejor en invierno. Me gusta hacerla para la hora del té y es algo que disfruto especialmente.

I make this pie with an extra thin pastry, the same I use for the strudel or my knishes. This time I chose to mix the apples with blueberries, but I often combine them with raisins and walnuts. They combine well with gooseberries if you have any at hand. I like the tartness of Granny Smiths, but you could choose any other kind if you like it sweeter. 

Hago esta tarta con una masa extra fina, la mismo que utilizo para el strudel o mis knishes. Esta vez elegí mezclar las manzanas con los arándanos, pero a menudo las combino con pasas de uva y nueces. Van muy bien con grosellas si las tienen a mano. Me gusta la acidez de las Granny Smith, pero se puede elegir cualquier otro tipo si les gusta más dulce.

My daughter is a great fan of the Great British Bake Off Show and whenever we make pie at home, she challenges me about "soggy bottoms". I can assure you this one passes the test!

Mi hija es una gran fan del Great British Bake Off Show y cada vez que hacemos tarta en casa, me desafía para ver cuán seca queda la masa debajo de la tarta. Les puedo asegurar que ésta pasa la prueba!

It is amazing how time flies! I can hardly believe I have been doing this foodblogging "thing" for  two years already. My greatest joy is sharing with all those who care to read my recipes and bring happiness to their tables through them.

This small nook on the web has given me some beautiful friends and acquainted me with a lot of worthy people around the globe. Though I am not posting much, I shall try to keep it up, because it is just wonderful being around!!

Es increíble cómo pasa el tiempo! Apenas puedo creer que estuve haciendo esta "cosa" del foodblogging por dos años ya. Mi mayor alegría es compartir con todos aquellos que se preocupan por leer mis recetas y traer felicidad a sus mesas a través de ellas.

Making buns is always a challenge. As I have said in previous posts I am fond of yeasted doughs and find they are the best to bake. I prefer them over cakes and loaves and any other sweet treats. Hacer bollos es siempre un desafío. Como ya he dicho en posts anteriores, las masas con levadura son las que más me gustan y para mí, son los mejores para hornear. Las prefiero más que a las tortas o budines u otros dulces. Estos bollos son un poco diferentes. Utilicé una harina de avena hecha en casa, mezclada con la harina común que siempre uso. ¿Cómo me las arreglé? Tan simple como agarrar la procesadora de alimentos y pulsar, transformando los copos de avena comunes en harina de avena fina.

The sticky toffee sauce is altogether a different subject. I have done caramel sauce before but this recipe is superb. I learned it from watching one of Mark Bittman's videos, cooking with pastry chef Claudia Fleming, though I adapted the measurements to my recipe needs.

La salsa de caramelo es un tema totalmente aparte. He hecho salsa de caramelo antes, pero esta receta es excelente. La aprendí de ver uno de los videos de Mark Bittman, cocinando con la chef de repostería Claudia Fleming, aunque adapté las medidas a la necesidad de mi receta.

Though adding the toffee sauce is not an everyday treat, the buns are a good choice for a special breakfast or coffee break. Special enough to start my children's deserved school winter holidays in a cozy way.

Aunque la adición de salsa de caramelo no es algo que se utiliza a diario, los bollos son una buena opción para un desayuno especial o junto a un café en el descanso de trabajo. Lo suficientemente especial para comenzar las merecidas vacaciones de invierno de la escuela de mis chicos de una manera acogedora.

lemon blueberry oat crumble muffins

I was inspired by an article I read about the search for the perfect blueberry muffin. Reading the article I realized that maybe my perfect muffin would be something like my lemon blueberry crumb loaf only more cakey, yet moist, with a tight crumb. The good tip in the article was to fill the muffin molds with one third batter, one third blueberry and the last third with crumble.

Me inspiré en un artículo que leí sobre la búsqueda de la magdalena de arándanos perfecta. Leyendo el artículo me di cuenta de que tal vez mi magdalena perfecta sería algo así como mi budín de limón y arándanos con crumble sólo que más tipo torta, aunque húmeda, con una miga densa. El buen consejo del artículo para armar los moldes para magdalenas consistía en llenar un tercio con preparación, un tercio con arándanos y el último tercio con crumble.

I chose to add some extra crunchiness and flavour to the crumble with some rolled oats. It worked so well! Just like having a sort of fruity granola topping.

Elegí añadir algo de textura crujiente y sabor extra para el crumble con algunos copos de avena. Funcionó tan bien! Como tener una especie de cobertura de granola frutada por encima .

I decided to use some small tins I recycled as molds instead of using my usual muffin tray. It was real fun to prepare them and peep through the glass in the oven to see how they baked so well.

Decidí usar algunas latas pequeñas que reciclé como moldes en lugar de utilizar mi bandeja para muffins de costumbre. Fue muy divertido prepararlos y espiar a través del vidrio del horno para ver cómo se iban horneando tan bien.
