lemon blueberry oat crumble muffins

I was inspired by an article I read about the search for the perfect blueberry muffin. Reading the article I realized that maybe my perfect muffin would be something like my lemon blueberry crumb loaf only more cakey, yet moist, with a tight crumb. The good tip in the article was to fill the muffin molds with one third batter, one third blueberry and the last third with crumble.

Leyendo el artículo me di cuenta de que tal vez mi magdalena perfecta sería algo así como mi budín de limón y arándanos con crumble sólo que más tipo torta, aunque húmeda, con una miga densa. El buen consejo del artículo para armar los moldes para magdalenas consistía en llenar un tercio con preparación, un tercio con arándanos y el último tercio con crumble.


I chose to add some extra crunchiness and flavour to the crumble with some rolled oats. It worked so well! Just like having a sort of fruity granola topping.

Elegí añadir algo de textura crujiente y sabor extra para el crumble con algunos copos de avena. Funcionó tan bien! Como tener una especie de cobertura de granola frutada por encima .

I decided to use some small tins I recycled as molds instead of using my usual muffin tray. It was real fun to prepare them and peep through the glass in the oven to see how they baked so well.

Decidí usar algunas latas pequeñas que reciclé como moldes en lugar de utilizar mi bandeja para muffins de costumbre. Fue muy divertido prepararlos y espiar a través del vidrio del horno para ver cómo se iban horneando tan bien.


lemon blueberry oat crumble muffins (magdalenas de limón y arándanos con crumble de avena)



RECIPE / RECETA
Makes 6 / Para 6  (Inspired by an article from Food 52)


Ingredients
1/3 cup unsalted butter, soft
2 tbsp vegetable oil
3/4 cup sugar
1 large egg
1/2 lemon, juice and zest
1 tsp lemon oil (optional, in case your lemons are not flavourful)
1 1/2 cups self raising flour, sifted
1/3 cup plain yoghurt
3/4 cup blueberries
1 cup crumble

For the crumble:
1/2 cup plain flour
1/2 cup rolled oats
1/2 cup granulated sugar
2 oz unsalted butter, melted and at room temperature

Ingredientes
1/3 taza de manteca, blanda
2 cucharadas de aceite vegetal
3/4 taza de azúcar
1 huevo grande
1/2 limón, el jugo y la ralladura
1 cucharadita de esencia de limón (opcional, en caso de que los limones no sean sabrosos)
1 1/2 tazas de harina leudante, tamizada
1/3 taza de yogur natural
3/4 taza de arándanos
1 taza crumble

Para el crumble:
1/2 taza de harina común "0000"
1/2 taza de copos de avena
1/2 taza de azúcar granulada
2 oz de manteca, derretida y a temperatura ambiente



Instructions
  1. For the crumble: mix the plain flour, rolled oats and granulated sugar in a bowl. Add the melted butter at room temperature. Stir with the help of a fork until the crumble is formed. Refrigerate
  2. In a bowl beat the egg and sugar until fluffy
  3. Add the soft butter and vegetable oil and mix. Add the lemon zest and lemon juice until incorporated. Add the lemon oil (if your lemon is not flavourful enough)
  4. In a separate bowl sift the self raising flour. Add to the batter and mix
  5. Incorporate the plain yoghurt and fold into the batter
  6. Grease and line six muffin tins and spoon the batter, filling one third of each mold
  7. Garnish the second third with the blueberries and sprinkle with crumble the remaining third 
  8. Preheat the oven to 180 º  C / 350 º  F and bake for 30 minutes or until golden brown
  9. Allow to cool for 10 minutes and unmold
Instrucciones
  1. Para el crumble: mezclar la harina, copos de avena y el azúcar granulada en un bols. Añadir la manteca derretida a temperatura ambiente. Revolver con la ayuda de un tenedor hasta que se formen los grumos. Refrigerar
  2. En un bols batir el huevo y el azúcar hasta que quede esponjoso
  3. Añadir la manteca blanda y aceite vegetal y mezclar. Añadir la ralladura de limón y el jugo de limón hasta que se incorpore. Agregar la esencia de limón (si el limón no es lo suficientemente sabroso)
  4. En un recipiente aparte tamizar la harina leudante. Añadir a la preparación y mezclar
  5. Incorporar el yogur natural y mezclar suavemente
  6. Enmantecar y forrar seis moldes para magdalenas y llenar con la preparación un tercio de cada molde
  7. Decorar el segundo tercio con los arándanos y espolvorear con crumble el tercio restante
  8. Precalentar el horno a 180 º C / 350 º F y hornear por 30 minutos o hasta que estén doradas
  9. Dejar enfriar durante 10 minutos y desmoldar

  2. Cualquier cosa con crumble tiene mi atención y estos muffins te quedaron geniales! Las latitas son lo más! Y si, el muffin ideal de blueberry creo que es un trabajo de toda la vida, jaja, nunca me convence del todo ninguna receta!

    1. jaja las latitas son geniales, si, me las guarda mí mamá, que es la mentora de mi afán por el reciclaje desde que tengo memoria! y es cierto, lo de ideal es una búsqueda casi eterna...pero mejor porque sino sería muy aburrido!
