rustic apple and blueberry pie

Apple pie is a comforting sweet treat anytime during the year, but it tastes even better in winter. I like to make this pie for tea time and it is something I particularly enjoy.

La tarta de manzana es un postre reconfortante en cualquier momento del año, pero su sabor es aún mejor en invierno. Me gusta hacerla para la hora del té y es algo que disfruto especialmente.

I make this pie with an extra thin pastry, the same I use for the strudel or my knishes. This time I chose to mix the apples with blueberries, but I often combine them with raisins and walnuts. They combine well with gooseberries if you have any at hand. I like the tartness of Granny Smiths, but you could choose any other kind if you like it sweeter. 

Hago esta tarta con una masa extra fina, la mismo que utilizo para el strudel o mis knishes. Esta vez elegí mezclar las manzanas con los arándanos, pero a menudo las combino con pasas de uva y nueces. Van muy bien con grosellas si las tienen a mano. Me gusta la acidez de las Granny Smith, pero se puede elegir cualquier otro tipo si les gusta más dulce.

My daughter is a great fan of the Great British Bake Off Show and whenever we make pie at home, she challenges me about "soggy bottoms". I can assure you this one passes the test!

Mi hija es una gran fan del Great British Bake Off Show y cada vez que hacemos tarta en casa, me desafía para ver cuán seca queda la masa debajo de la tarta. Les puedo asegurar que ésta pasa la prueba!


rustic apple and blueberry pie (tarta rústica de manzanas y arándanos)


RECIPE/ RECETA
Makes a 10"inch round pie / Para una tarta redonda de 26 cm de diámetro

Ingredients
For the punch dough:
2 cups all purpose flour
1/2 cup vegetable oil (I use sunflower)
1/2 cup water
pinch of salt

For the filling:
2-3 big Granny Smith apples, thinly sliced
1/3 cup fresh blueberries
1 tbsp lemon juice
3 to 4 tbsp granulated sugar
2 tbsp plain flour (plus 1 tbsp for the bottom)
1 1/2 tsp ground cinnamon
1/2 tsp ground ginger

Icing sugar

Ingredientes
Para la masa golpeada:
2 tazas de harina común "0000"
1/2 taza de aceite vegetal (yo uso de girasol)
1/2 taza de agua
pizca de sal

Para el relleno:
2-3 manzanas grandes Granny Smith, en rodajas finas
1/3 taza de arándanos frescos
1 cucharada de jugo de limón
3 a 4 cucharadas de azúcar granulada
2 cucharadas de harina común "0000"(más 1 cucharada para la parte inferior de la masa)
1 1/2 cucharadita de canela molida
1/2 cucharadita de jengibre molido

Azúcar impalpable














Instructions

  1. For the punch dough: combine the water, oil and salt in a bowl and stir. Add the flour until a ball is formed and is slightly sticky. Dust your hands and take the dough.  Punch the dough several times against the work surface. Refrigerate for 30 minutes
  2. For the filling: in a large bowl combine the apples and blueberries. Add the lemon juice, granulated sugar, 2 tbsp flour, ground cinnamon and ground ginger. Toss until well combined. Allow to rest for 5 minutes
  3. Grease a 10" inch round pie plate
  4. Work the dough with a rolling pin over a lightly dusted work surface until it is translucent. Cut two circles using your chosen round pie plate as a mold. Wrap one circle around the rolling pin and carefully unroll over the greased pie plate. Fit gently into the bottom and side of the plate 
  5. Pinch the bottom circle with the help of a fork and sprinkle the remaining flour on its surface. Spread the filling evenly over the bottom dough and cover with the remaining circle. Shut both rims with the help of a fork creating a rustic edge. Pinch the top dough with a fork in several places
  6. Preheat the oven to 180 C / 350 F and bake for 40 to 45 minutes or until the top is golden brown
  7. Allow to cool and transfer to a plate. To serve dust with icing sugar 
Instrucciones
  1. Para la masa golpeada: combinar el agua, el aceite y la sal en un tazón y revolver. Añadir la harina hasta que se forme una bola y quede ligeramente pegajosa. Enharinar las manos y tomar la masa. Golpear la masa varias veces contra la superficie de trabajo. Refrigerar por 30 minutos
  2. Para el relleno: en un tazón grande, combinar las manzanas y arándanos. Agregar el jugo de limón, azúcar granulada, 2 cucharadas de harina, canela en polvo y jengibre en polvo. Mezclar hasta que esté bien combinado. Dejar reposar durante 5 minutos.
  3. Engrasar un molde para tarta redondo de 26 cm de diámetro
  4. Trabajar la masa con un rodillo sobre una superficie ligeramente enharinada hasta que esté transparente. Cortar dos círculos utilizando la tartera redonda elegida como molde. Enrollar un círculo de masa alrededor del rodillo y desenrollar cuidadosamente sobre la tartera engrasada. Acomodar suavemente a la parte inferior y lateral del molde.
  5. Pinchar el círculo inferior con la ayuda de un tenedor y espolvorear la harina restante en su superficie. Extender el relleno uniformemente sobre la masa inferior y cubrir con el círculo restante. Cerrar ambos bordes con la ayuda de un tenedor logrando un borde rústico. Pinchar la masa superior con un tenedor en varios lugares
  6. Precalentar el horno a 180 C / 350 F y hornear por 40 a 45 minutos o hasta que la superficie esté dorada
  7. Dejar enfriar y transferir a un plato. Para servir espolvorear con azúcar impalpable

  4. Hola, he descubierto tu blog y me encantaría hacer la receta. me podrías decir si en la traducción al español cuando dices taza es la medida americana? y tbsp ? y las medidas de cuchara también son las americanas. Gracias.

    1. Hola Silvia! Qué bueno que encontraste mi blog! Si, las medidas en taza cuchara y cuchara de te son las americanas. Pero si lo medis con una taza de té común, cuchara sopera y cucharadita de té también sale, porque estas respetando las proporciones, que es lo que vale. Espero que te salga! Contame!
