lemon polenta pudding











Back again. Back from my December silence, from my summer vacation, from my blog abstinence. I had a very busy end of the year concerning my job and a delightful beginning spent on the Uruguayan beach.

Estoy de vuelta. De vuelta de mi silencio de diciembre, de mis vacaciones de verano, de mi abstinencia del blog. Tuve un fin de año muy ocupado con respecto a mi trabajo y un comienzo delicioso transcurrido en la playa uruguaya.

In spite of not writing about my baking, I did quite a lot of new recipes I will be sharing soon. I wanted to start with this amazing lemon polenta pudding I adapted to fit these individual ramekins I bought during my stay at the beach. I brought with me several items for the kitchen, but these were the ones I wanted to use first!

A pesar de no escribir sobre mis horneados, hice un  montón de nuevas recetas que compartiré pronto. Quería comenzar con este increíble budín de polenta al limón que adapté para poder usar estos moldes individuales que compré durante mi estancia en la playa. Traje conmigo varios artículos para la cocina, pero éstos eran los que quería usar primero!

The main characteristic of the pudding is a soft, fluffy and spongy, cake-like texture contrasting the top, which is a golden crunchy crust. When you finish digging your spoon into it, you find a surprising lemon custard at the bottom, tangy, refreshing, tempting... A feast of textures in one mouthful with the most enticing citrus flavour.

La característica principal de este budín es su textura suave, mullida y esponjosa que contrasta con la parte superior, una corteza crujiente dorada. Cuando hayan terminado de hundir su cuchara en ella encontrarán una crema de limón sorprendente en la parte inferior, ácida y refrescante, tentadora ... Una fiesta de texturas en un solo bocado, con el sabor cítrico más apetitoso. 

What I love about it is that you can either have it warm or cold, which makes it suitable for any season, it can be kept in the fridge for at least two to three days... if puddings ever last that long... I dusted the top with icing sugar, but a dollop of whipped cream would add richness to it and smoothen the tanginess of the lemon.

Lo que me gusta de este postre es que se puede comer tibio o frío, lo que lo hace adecuado para cualquier época del año, se puede mantener en la heladera durante al menos dos o tres días (si es que los budines duran tanto tiempo...) Espolvoreé la parte superior con azúcar impalpable, pero una cucharada de crema batida le añadiría riqueza y suavizaría el sabor intenso del limón.

lemon polenta pudding (budín de polenta al limón)
RECIPE/ RECETA
Serves 6 / Porciones 6 (Adapted from Emma Gardner´s Lemon Surprise Pudding)

Ingredients
1 lemon, juice and zest 
2 large eggs, separated
4 oz/ 115 g caster sugar 
1 oz/ 30 g plain flour 
2 oz/ 60 g fine polenta or corn meal
0.5oz/ 15 g unsalted butter, soft 
pinch of salt 
1 cup whole milk (240ml) 

Ingredientes
1 limón, el jugo y la ralladura
2 huevos grandes, separados
4 oz / 115 g de azúcar 
1 oz / 30 g de harina común "0000"
2 oz / 60 g polenta fina o harina de maíz
0.5 oz / 15 g de manteca, blanda
pizca de sal
1 taza de leche (240 ml)


Instructions
  1. Preheat the oven to 180 C / 350 F 
  2. Grease six small-medium ramekins with vegetable oil spray 
  3. Place the sugar, plain flour, fine polenta, lemon zest and egg yolks in a big bowl and mix. Add the soft butter and lemon juice and stir
  4. Slowly add the cup of milk to the batter and mix gently
  5. Place the egg whites in a clean bowl, add the pinch of salt and whisk until soft peaks are formed. Gently fold the egg whites into the lemon mixture. Carefully transfer the mixture to the greased ramekins 
  6. Place gently into a deep oven tray and fill with hot water to about halfway up the tin. Transfer carefully to the oven and bake for 25 to 30 minutes until browned on the top
  7. Leave to cool for about 10 minutes. Dust icing sugar on top and serve warm

Instrucciones

  1. Precalentar el horno a 180 C / 350 F
  2. Engrasar seis moldes de pequeños a medianos con aceite vegetal en aerosol
  3. Colocar el azúcar, harina común, polenta fina, la ralladura de limón y las yemas de huevo en un bol grande y mezclar. Añadir la manteca blanda y el jugo de limón y unir
  4. De a poco agregar la taza de leche a la preparación y mezclar suavemente
  5. Colocar las claras en un recipiente limpio, agregar la pizca de sal y batir hasta que se formen picos suaves. Incorporar suavemente las claras de huevo a la mezcla de limón. Transferir cuidadosamente la mezcla a los moldes engrasados
  6. Colocar con cuidado en una bandeja de horno profunda y llenar con agua caliente aproximadamente a la mitad. Transferir cuidadosamente al horno y hornear durante 25 a 30 minutos hasta que estén doradas en la parte superior.
  7. Dejar enfriar durante 10 minutos aproximadamente. Espolvorear con azúcar impalpable en la parte superior y servir tibio

    1. Thank you Jodee, it is really good! We are lucky to enjoy lemons all the year round so I have done it in winter too, and had it warm.
