chocolate fudge cake

I have a serious problem with words when it comes to chocolate. How much can you relate to that?

Fudgy. Moist. Dense.

Fudgy. Húmeda. Densa.

Let's get the recipe!

¡Vamos a la receta!

chocolate fudge cake (torta fudge de chocolate)

RECIPE /RECETA
Serves 8/ Porciones 8

Ingredients
3 eggs, separated
1/2 cup light brown sugar
1 tsp vanilla extract
2.5 oz unsalted butter
5.5 oz dark chocolate
1 tbsp cocoa powder
11/2 tsp baking powder
1/2 cup almond meal
1/8 cup plain flour
2 tbsp Greek yoghurt (optional)

Ingredientes
3 huevos, separados
1/2 taza de azúcar rubia
1 cucharadita de extracto de vainilla
2.5 oz / 70 g de manteca
5.5 oz / 155 g de chocolate amargo
1 cucharada de cacao en polvo
11/2 cucharadita de polvo de hornear
1/2 taza de harina de almendra
1/8 taza de harina común "0000"
2 cucharadas de yogur griego (opcional)

Instructions

  1. In a large bowl mix the egg yolks with the light brown sugar until fluffy. Add the vanilla extract
  2. Melt the butter and the chocolate in the microwave. Stir into the egg mixture
  3. In a separate bowl beat the egg whites until they form soft peaks
  4. Combine the cocoa powder, baking powder, plain flour and almond meal
  5. Add the dry ingredients to the wet mixture
  6. Add the egg whites in 2 times and fold gently until just combined
  7. Optionally add 2 tbsp Greek yoghurt to the batter and stir
  8. Preheat oven to 180º C /350º F.  Grease, flour and line a round 9" inch baking tin
  9. Pour the batter and bake for 20 minutes and reduce heat to 160º C /320º F for 10 minutes more or until a skewer comes out clean when inserted in the centre
  10. Allow to cool for 10 minutes and unmold gently. You will notice the cake grows tall and will start shrinking once it gets cool
  11. Best served with a dollop of whipped cream and some fresh berries of your choice.

Instrucciones
