Last Friday I was having a conversation with my son, concerning a game he plays online with his school friends, about people´s preferences on the web depending the subject, and how it was difficult to asses which topic could be a crowd pleaser over others. Both of us concluded that many times our choices differ completely from what will be popular or not, but all the same we want to do something about them.

El viernes pasado estaba teniendo una conversación con mi hijo en relación a un juego que él juega online con sus amigos de la escuela, sobre las preferencias de la gente en la web de acuerdo al tema, y lo difícil que era evaluar qué tema sobre otros, podría agradar a muchos. Ambos llegamos a la conclusión de que muchas veces nuestras decisiones difieren por completo de lo que va a ser popular o no, pero sin embargo queremos hacer algo respecto de ellas.


I think this is the case of plums. Around this time last year, I remember buying some giant specimens and making a fabulous plum crumble cake, yet most of those reading my blog, clicked the peach ginger streusel loaf more. Are plums underrated among summer stone fruits? I would not know, because I certainly love them, specially for desserts and baking. And as I am also fond of dry fruit, when plums are not in season, I even use prunes for cakes or as a side to my honey panna cotta.

Creo que este es el caso de las ciruelas. Alrededor de esta fecha el año pasado, recuerdo que compré unos ejemplares gigantes e hice una fabulosa torta de ciruelas con crumble, pero la mayoría de los que entran al blog leyeron más el budín de durazno con streusel de jengibre. Estarán subvaluadas las ciruelas con respecto a las otras frutas de carozo del verano? No sabría, porque ciertamente me encantan, especialmente para los postres y para hornear. Y como también me gustan las frutas secas, incluso utilizo ciruelas pasas cuando las ciruelas no están en temporada, para tortas o para acompañar mi panna cotta de miel.

This cake has two distinctive features. On the one hand the plums are poached in wine syrup (I chose a rosé tardío), slightly sweet, which gave the fruit a great texture and depth of flavour. On the other hand, the cake is so easy to make, the two bowl kind, dry ingredients on one side and wet on the other, mix and... voilá!(the method reminded me of my blueberry and coconut loaf) It could easily become gluten free substituting the plain flour for rice flour or any gluten free flour in the market, though it would not be recommended for those with nut allergies because it is heavy on the almond flour, just like the cherry almond torte.

Esta torta tiene dos características particulares. Por un lado, las ciruelas están cocidas en un jarabe de vino (elegí un rosado tardío), ligeramente dulce, que le dio a la fruta una gran textura y profundidad de sabor. Por otra parte, la torta es tan fácil de hacer, de esas que se hacen con dos bols, los ingredientes secos por un lado y húmedos por el otro, se mezcla y ... voilá! (El método me recordó al que usé para el budín de arándanos y coco). Podría fácilmente convertirse en libre de gluten sustituyendo la harina de trigo por harina de arroz o cualquier harina libre de gluten en el mercado, aunque no se recomienda para las personas con alergias a las nueces, ya que la receta tiene mucha harina de almendras, tal como la torta húmeda de almendras y cerezas.

Once I arranged the fruit over the batter in the mold, I realized there was a lot of wine-plum syrup left which I was not going to throw away, so I went fancy and served the cake after dinner with some mascarpone cream and a drizzle of reduced syrup on top. 

Una vez que dispuse la fruta sobre la masa en el molde, me di cuenta de que quedaba mucho jarabe de vino y ciruela, que no iba a desperdiciar, así que serví la torta después de la cena con un poco de crema de mascarpone y un chorrito de jarabe reducido por arriba.


wine poached plum almond cake (torta de almendras y ciruelas al vino)

RECIPE/ RECETA
Serves 8/ Porciones 8

Ingredients
1 cup finely ground almonds
1/3 cup plain flour
11/2 tsp baking powder
pinch of salt
1/2 cup granulated sugar
2 oz / 60 g unsalted butter, melted and at room temperature
2 large eggs
1/2 cup plain yoghurt (or 1/4 cup milk plus 1/4 cup cream)
1tsp almond extract
1/2 tsp vanilla extract
11/2 cup *wine poached plums
1 tbsp granulated sugar

Optional:
*Mascarpone cream

Ingredientes
1 taza de almendras finamente molidas
1/3 taza de harina común "0000"
11/2 cucharadita de polvo de hornear
pizca de sal
1/2 taza de azúcar
2 oz / 60 g de manteca, derretida y a temperatura ambiente
2 huevos grandes
1/2 taza de yogur natural (o 1/4 de taza de leche más 1/4 taza de crema)
1 cucharadita de extracto de almendra
1/2 cucharadita de extracto de vainilla
1 1/2 taza de *ciruelas cocidas al vino
1 cucharada de azúcar

Opcional:
*Crema de mascarpone


Instructions
  1. For the *wine poached plums: In a small saucepan bring 1 cup of red or rosé wine to a boil with 2 tbsp of brown sugar and allow to reduce until it starts getting syrupy. Add a drop of vanilla extract and 3 to 4 plums (I used black) pitted and cut into wedges and stir. Allow to cook until soft but firm. Transfer to a bowl and allow to cool
  2. Preheat the oven to 180 C / 350 F. Grease and line the bottom of a round 9" inch baking tin
  3. In a large bowl combine the dry ingredients: ground almonds, plain flour, baking powder, salt and sugar
  4. In another bowl lightly mix with the help of an electric hand mixer the eggs, plain yoghurt (or milk and cream mixture), almond extract and vanilla extract until well combined. Stir in the melted unsalted butter
  5. Pour the wet ingredients over the dry ones and mix until you obtain a smooth batter. Pour into the prepared mold
  6. Garnish the top with the wine poached plums, without the syrup, and sprinkle the tbsp sugar on top
  7. Bake for 30 to 35 minutes or until a skewer in the center comes out dry. Allow to cool for 10 minutes and transfer to a rack to cool completely
  8. As a serving option top with *mascarpone cream and a drizzle of *reduced syrup
*Mascarpone cream: whip 1/2 cup cream and add to 1/2 cup mascarpone cheese. Add 1 tbsp icing sugar and mix. Refrigerate
*Reduced syrup: Place the remaining syrup from the plums in a small saucepan (there will be quite an amount because the fruit drains a lot of its juice as it rests on the counter) and simmer until thick. Allow to cool


Instrucciones
  1. Para las *ciruelas cocidas al vino: En una olla pequeña poner 1 taza de vino tinto o rosado a hervir con 2 cucharadas de azúcar negra y dejar reducir hasta que empiece a tener consistencia de jarabe. Añadir una gota de extracto de vainilla y de 3 a 4 ciruelas (utilicé negras) sin carozo y cortadas en trozos y revolver. Dejar cocer hasta que estén tiernas pero firmes. Pasar a un bol y dejar enfriar
  2. Precalentar el horno a 180 C / 350 F. Enmantecar y forrar el fondo de un molde redondo de 9 pulgadas de diámetro (23 cm) para hornear
  3. En un bols grande, combinar los ingredientes secos: almendras molidas, harina común, polvo de hornear, la sal y el azúcar
  4. En otro bols mezclar suavemente con la ayuda de un mezclador eléctrico los huevos, yogur natural (o mezcla de leche y crema), el extracto de almendra y el extracto de vainilla hasta que estén bien combinados. Añadir la manteca derretida
  5. Verter los ingredientes húmedos sobre los secos y mezclar hasta obtener una masa suave. Verter la mezcla en el molde preparado
  6. Decorar la parte superior con las ciruelas cocidas al vino, sin el jarabe, y espolvorear la cucharada de azúcar por encima
  7. Hornear durante 30 a 35 minutos o hasta que un palillo en el centro salga seco. Dejar enfriar durante 10 minutos y transferir a una rejilla para enfriar completamente
  8. Como opción servir con *crema de mascarpone y un chorrito de *jarabe reducido
* Crema de Mascarpone: batir 1/2 taza de crema y agregar a 1/2 taza de queso mascarpone. Añadir 1 cucharada de azúcar impalpable y mezclar. Refrigerar
* Jarabe reducido: Colocar el jarabe restante de las ciruelas en una cacerola pequeña (habrá una buena cantidad porque el fruto drena una gran parte de su jugo mientras se enfría) y cocinar a fuego lento hasta que espese. Dejar enfriar

  1. Viviana that is such a wonderful cake. I love plums and poached in wine makes them even more delicious. The cake looks perfect, rustic, moist and delicious. You always make the most fantastic baked goods.

  2. Me encantó esta torta, y sobre todo las ciruelas con vino, que idea buena Viviana! Ayer justo compré ciruelas para hacer una torta con streusel. Veremos si esta tarde me meto en la cocina, porque con lo lindo que va a estar el día, tengo mis serias dudas...jaja
