Though it is not traditional to bake Hot Cross Buns for Easter in my country, I thought it would be a good idea to give them a try for a change. A Sunday Lent morning with these buns, some butter and jam on them and the complete meal would become an awesome treat!

A pesar de que no es tradicional  hornear Hot Cross Buns (Bollos de la Cruz) para Pascuas en mi país, pensé que sería una buena idea probarlos para un cambio. Una mañana de domingo de Cuaresma con estos bollos, manteca y mermelada sobre ellos y el desayuno completo se convertiría en un impresionante festejo!
















I did the traditional buns, just a little bigger, as loaves of bread to cut and share. These buns according to tradition carry the cross remembering the crucifixion of Jesus but, as I read, they also have other meanings, they deepen friendship when shared and bring good health when eaten.

Hice los bollos tradicionales, solo que un poco más grandes, como hogazas de pan para cortar y compartir. Estos bollos según la tradición llevan la cruz recordando la crucifixión de Jesús, pero también se le otorgan otros significados como he leído, compartirlos profundizan la amistad y comerlos hacen bien a la salud.

Going through some recipes for these hot cross buns, I came across one of them, that had turned the buns into a loaf and I instantly liked the idea. I thought it would not harm them much if I changed a few things, such as using lemon zest instead of orange and adding some new green apples to the filling. The smell in my kitchen was absolutely fabulous: spices, raisins, baked apples and bread. Could not ask for more.

Hojeando algunas recetas para estos hot cross buns, me encontré con una, que había convertido a los bollos en un pan y de inmediato me gustó la idea. Pensé que no iba a hacerles mucho daño si le cambiaba algunas cosas, como usar ralladura de limón en vez de naranja y añadir algunas manzanas verdes nuevas al relleno. El olor en mi cocina era absolutamente fabuloso: a especias, pasas, manzanas al horno y pan. No podía pedir más.

RECIPE / RECETA
Makes 2 loaves/ Para 2 panes  (Inspiration from Taste.com)

Ingredients
For the loaf:
2oz unsalted butter, melted
3/4 cup milk, warm
1/4 cup granulated sugar
2 1/2 tbsp granulated active dry yeast
3 cups all-purpose flour (plus half cup to work the dough)
3/4 tsp ground cinnamon
1/8 tsp ground ginger
1/8 tsp freshly ground nutmeg
1 tsp kosher salt
1 large egg, lightly beaten
1 cup dried currants
1 tbsp lemon zest
For the filling:
2 oz unsalted butter, soft
4 tbsp firmly packed brown sugar
1 tsp ground cinnamon
1 grated small apple, skin on (Granny Smith)
For the eggwash:
1 egg white, lightly beaten with 1/2 tbsp warm water
For the glaze:
1/2 cup icing sugar
1 tbsp milk
1 tsp vanilla extract

Ingredientes 
Para el pan: 
2 oz / 60 g de manteca, derretida 
3/4 taza de leche, tibia
1/4 taza de azúcar 
2 1/2 cucharadas soperas de levadura seca granulada 
3 tazas de harina común "0000" (más media taza para trabajar la masa) 
3/4 cucharadita de té de  canela molida 
1/8 cucharadita de té de jengibre molido 
1/8 cucharadita de té de nuez moscada recién molida 
1 cucharadita de sal kosher 
1 huevo grande, ligeramente batido 
1 taza de pasas de uva
1 cucharada sopera de ralladura de limón 
Para el relleno: 
2 oz/ 60 g de manteca, pomada
4 cucharadas soperas de azúcar negra 
1 cucharadita de té de canela molida 
1 manzana pequeña rallada, con cáscara (Granny Smith)
Para pintar:
1 clara de huevo, ligeramente batido con 1/2 cucharada de agua tibia 
Para la cubierta: 
1/2 taza de azúcar impalpable
1 cucharada sopera de leche 
1 cucharadita de té de extracto de vainilla


Instructions

  1. In a large bowl combine the warm milk, melted butter and granulated sugar. Stir in the yeast and let it sit until it is foamy, about 10 minutes. Stir in the beaten egg, the salt and mix
  2. In another bowl combine the flour, cinnamon, ginger and nutmeg
  3. Add the flour mix to the wet mixture and work till you obtain a sticky dough but not to the fingers. Add the dried currants and the lemon zest and mix. Add the 1/2 cup flour to knead the dough over a floured working surface for about 5 minutes. Allow to prove for 1 1/2 hours in a warm place
  4. For the filling combine the grated apple, brown sugar, ground cinnamon, add the soft butter and stir. Refrigerate until you need to use it
  5. Work the dough on a floured working surface with a rolling pin into a 16" x 12" inch rectangle, 1/2" inch tall. Roll the rectangle up lengthwise into a long jellyroll. Slice it into 2  8" inch loaves.
  6. With the help of a bread knife mark 2 or 3 crosses on the surface of the loaf and brush with the eggwash.
  7. Grease and line  2  9" x 5" inch loaf tins. Place the loaves in each tin and allow to prove for 1 hour
  8. Preheat the oven to 180º C / 350º F and bake on the middle rack for 30 to 35 minutes or until the bread is golden brown
  9. For the glaze mix the icing sugar with the milk and vanilla extract
  10. Allow the loaves to cool completely and drizzle with  glaze 

Instrucciones
  1. En un bols grande, combinar la leche tibia, la manteca derretida y el azúcar. Añadir la levadura y dejar reposar hasta que esté espumosa, aproximadamente 10 minutos. Agregar el huevo batido, la sal y mezclar
  2. En otro bols mezclar la harina común, la canela , el jengibre y la nuez moscada
  3. Añadir la mezcla de harina a la mezcla húmeda y trabajar hasta obtener una masa pegajosa, pero no a los dedos. Añadir las pasas de uva y la ralladura de limón y mezclar. Añadir la  1/2 taza de harina y amasar sobre una superficie de trabajo enharinada durante unos 5 minutos. Permitir que leude por 1 1 /2 horas en un lugar cálido
  4. Para el relleno combinar la manzana rallada , azúcar negra, canela en polvo, añadir la manteca blanda y mezclar. Refrigerar hasta que necesite usarlo
  5. Trabajar la masa sobre una superficie de trabajo enharinada con un rodillo en un rectángulo de 40 cm x 30 cm y 1.5 cm de alto. Enrollar el rectángulo a lo largo . Cortar en 2 panes de 20 cm cada uno
  6. Con la ayuda de un cuchillo marcar el pan con 2 o 3 cruces en la superficie y pincelar con la mezcla de huevo.
  7. Enmantecar y forrar 2 moldes rectangulares de 23 cm x 10 cm. Colocar los panes en cada molde y dejar leudar durante 1 hora
  8. Precalentar el horno a 180 º C / 350 º F y hornear en la rejilla del medio durante 30 a 35 minutos o hasta que el pan esté dorado
  9. Para el glaseado mezclar el azúcar impalpable con la leche y el extracto de vainilla
  10. Dejar que los panes que se enfríen completamente y rociar con el glaseado
